This version of Cafe Rio's Creamy Tomatillo Dressing is as close as it gets to the original.

Steps:
- Blend all ingredients together in a blender or food processor and store in the refrigerator to let the flavors meld. Beware that the dressing tends to get hotter the longer it sits.
- Serve over Cafe Rio's Sweet Barbacoa Pork Salad or burritos with Cilantro Lime Rice.

Steps:
- Make the dressing - Add all ingredients to a food processor. Blend until smooth. Season and set aside.
- Prepare the salad ingredients - Thin slice the tomatoes and tomatillos. Crumble the cotija if using. Cube or slice the avocado. Chop the cilantro.
- Assemble the salad - Layer the tomatoes and tomatillos on an appropriate platter. Top with avocado if using, then garnish with crumbled cotija and chopped cilantro. Lastly, drizzle with the cilantro-lime dressing.

- Place chicken breasts between two layers of cling wrap and use a rolling pin or any blunt object to pound out the chicken breasts until about ½ inch thick.
- Combine all marinade ingredients in gallon zip lock bag with the tenderized chicken breasts and squeeze the marinade around the chicken so the chicken is well coated. Seal the bag with as little air possible and allow to marinade at least 20 minutes or overnight.
