CARNE ADOVADA (RED CHILE AND PORK STEW)

My aunt brought me a trunk load of dried red chiles and chile powder so I have been finding recipes to use them up. This was delicious a bit spicy so make sure you can take some heat before giving this one a try - or you might sub some of the New Mexico Chile Powder for California Chile powder. This makes great burritos with beans and sour cream.

3 tablespoons vegetable oil, divided
2 medium onions, chopped (about 3 cups)
6 large garlic cloves, minced
3 tablespoons flour
1 1/2 teaspoons salt
1 1/2 teaspoons ground cumin
1 teaspoon fresh ground black pepper
3 1/2 lbs boneless pork shoulder, fat trimmed and meat cut into 1 1/2-in . cubes (butt)
1 cup ground red dried New Mexico chile
4 cups reduced-sodium chicken broth (I replaced some of the broth with chicken boullion and water)
1 bay leaf

Steps:

  • Preheat oven to 350°. Heat 2 tablespoons oil in a large, heavy-bottomed, ovenproof pot over medium-high heat. Add onions and garlic and cook, stirring, until onions are golden, about 6 minutes. Remove from heat and transfer onions and garlic to a bowl with a slotted spoon.
  • In a large bowl, stir together flour, salt, cumin, and pepper. Add pork and toss to coat. Return pot to medium-high heat, add remaining 1 tablespoons oil, and, working in batches, lightly brown meat on all sides, 5 to 7 minutes per batch. Transfer meat to a separate bowl as you go.
  • Return onions and garlic to pot. Sprinkle with ground chiles and cook, stirring, 2 minutes (mixture will be thick- I added some of the broth at this point to keep the chile from burning). Add the rest of the broth, stirring to loosen browned bits from bottom of pot. Whirl sauce in a blender until smooth. Return sauce to pot and add bay leaf and reserved pork (I also added the pork bone).
  • 4. Cover pot, put in oven, and cook 1 hour. Set lid slightly ajar and cook until pork is fork-tender, about 1 hour more. Remove bay leaf and season with additional salt before serving.

1 tablespoon vegetable oil
1 1/2 lbs boneless pork shoulder, cut into 1/2 inch pieces
2 cups onions, chopped
2 cups green bell peppers, rough chopped
3/4 cup carrot, chopped
3/4 cup celery, chopped
1 tablespoon garlic, minced
1 tablespoon paprika
1 bay leaf
1/2 teaspoon ground cumin
2 (14 1/2 ounce) diced tomatoes, undrained (Hunts, you want the one with the green pepper, celery and onion)
1 1/2 cups fresh corn kernels or 1 1/2 cups frozen corn kernels
1 (14 ounce) can reduced-sodium chicken broth
1 (15 ounce) can small white beans, drained and rinsed
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 tablespoons fresh cilantro, finely minced (optional)
1 serrano peppers (optional) or 1 jalapeno, seeded and finely chopped (optional)

Steps:

  • Heat oil in 6 quart saucepan over medium-high heat until hot. Add pork; cook 10 to 12 minutes, stirring occasionally, or until browned. Remove from pan.
  • Add onion, bell pepper, carrot, celery and garlic to pan. Cook 5 minutes, stirring occasionally, or until onion softens. Add paprika, bay leaf and cumin; stir to combine.
  • Add undrained tomatoes, corn and broth to pan. Return pork to pan. Bring to a boil, then reduce heat to medium-low. Simmer uncovered 1 hour or until pork is tender.
  • Remove bay leaf; add beans, salt and pepper. Heat through and serve.

6 pork loin chops
2 tablespoons vegetable oil
2 cups crushed tomatoes
3 garlic cloves, crushed
1/2 cup chopped onion
1/2 cup water
2 large carrots, peeled and sliced
1 cup green beans, cut into pieces
1/2 teaspoon ground cumin
1 bay leaf
salt and pepper
3 medium potatoes, peeled and into chunks

Steps:

  • Heat the oil in a large pot over medium heat. Add the onions, garlic and cook for about 4 minutes or until the onions are translucent. Add the tomato and water, and cook for about 7 minutes more.
  • Add the pork loin chops, bay leaf, salt, cumin powder and bring to a boil, then reduce the heat to low, cover and let it cook for about 30 minutes or until the meat is tender.
  • Add the potatoes, green beans and carrots. Cover and cook for an additional 30 minutes or until the potatoes and carrots are tender.
  • Serve with rice and avocado on the side.

1 lb meat (anything left over is good, ground roasted best)
2 ears corn, cut off cob and very finely ground
1 lb assorted fresh vegetable
2 tablespoons lard (or vegetable oil)
2 cups broth (beef, chicken, or vegetable)
1 teaspoon oregano
chili pepper (of your choice or cayenne pepper)
8 potatoes, cut into rough chunks
1 onion, chopped
4 -6 eggs (1 egg per serving)

Steps:

  • First, fry meat in lard or oil with the onion, corn, chile peppers, salt and oregano.
  • When the onion is soft, add the potatoes, vegetables and broth.
  • Let simmer until the vegetables are cooked.
  • Serve with a fried egg on top of each serving.

This is one of those "stick-to-your-ribs" chilly-weather meals. I got this from a friend who is famous for her crockpot concoctions. Because of the nature of a crockpot, cooking time actually may range from 4 to 10 hours (depending on the cook's schedule).

2 1/2 lbs pork cutlets, cut into 1 inch cubes
1/4 cup flour
1 teaspoon ground cumin
1/4 teaspoon seasoned pepper (I use Jane's Crazy Mixed-Up Pepper)
1 teaspoon salt
1 teaspoon ground sage
3 tablespoons oil
3 tablespoons vinegar (white or cider)
2 large onions, coarsely chopped
2 cans whole baby potatoes (not sure of exact weight, I usually end up using one large can of them)
2 cups tomatillo salsa (I either make my own, or I use La Victoria Green Chile enchilada sauce)
2 (3 1/2 ounce) cans diced green chilies
1 (15 ounce) can reduced-sodium chicken broth
1 teaspoon brown sugar or 1 teaspoon honey

Steps:

  • Mix flour, cumin, pepper, salt, and sage in a gallon-size zipper bag.
  • Add meat cubes and shake to coat thoroughly.
  • Heat oil in a large skillet.
  • Brown pork in batches (meat will be crispier that way); remove from skillet when browned and place in the crock of a 4-6 quart slow cooker.
  • With the heat still on, add the vinegar to the skillet and quickly scrape up the browned bits left in the pan (the vinegar will reduce quite rapidly).
  • Add the vinegar reduction to the meat in the crock.
  • Add onions, potatoes, salsa, broth, and brown sugar to the crock and stir well.
  • Cook on low for 8-10 hours (or high for 4-5 hours, if you can't wait that long).
  • If you would like the stew to be a bit thicker, mash a few of the potatoes.
  • Serve with slabs of warm cornbread (such as my recipe for Mexican Cornbread).

6 boneless pork chops, cubed
3 tablespoons butter
6 potatoes, cubed
7 carrots, sliced thick
1/2 cup yoshida's gourmet teriyaki sauce
3 tablespoons chicken bouillon
3 cups chicken broth
1 teaspoon salt
1/4 teaspoon pepper
1 (2 3/4 ounce) package pioneer brand peppered gravy mix
1 rutabaga, cubed

Steps:

  • In a large Dutch oven pan, put the butter and the cubed pork. Cook until all the pork is browned, about 30 minutes.
  • Add the onion,and the chicken bouillon and a little chicken stock. Let this simmer until tender (this is how you get good gravy on the stew).
  • When pork is done, add the vegetables.
  • Stir all together and add the chicken broth and enough water to cover the vegetables.
  • Simmer until the vegetables are done.
  • To thicken the gravy, I use the peppered gravy mix in a 1/2 cup water.

Charquicán is a Chilean dish, a beef stew that is slow-cooked with squash and potatoes. It was traditionally prepared with dried beef (charqui). This version has both stewing beef and some commercial beef jerky (or make your own), which adds a nice smoky flavor and makes the stew seem more like chili (Chilean chili!) My kids love beef jerky and they love this stew. The squash falls apart as it cooks and helps to thicken the broth. You can add any vegetables you have on hand - beans and corn are common. You can make this stew in a crockpot or simmer it on the stove. In Chile, charquicán is often served topped with a fried egg.

1 lb stewing beef, cut into 1 inch cubes
1 tablespoon flour
2 tablespoons butter
3 1/2 ounces beef jerky
2 cups beef stock
1 large onion, chopped
2 garlic cloves, minced
2 tablespoons vegetable oil
1 tablespoon aji panca chilies, pepper paste or 1 tablespoon minced hot pepper
1 acorn squash, peeled, seeded, and cubed
1 cup chopped carrot
2 large potatoes, peeled and cut into cubes
2/3 cup frozen lima beans
2/3 cup frozen corn
salt and pepper

Steps:

  • Toss the cubes of beef with the flour and season with salt and pepper.
  • Melt the 2 tablespoons of butter in a heavy skillet over medium high heat. Sauté the cubes of beef until browned.
  • Add the beef stock to the skillet and bring to a simmer over low heat.
  • Chop the beef jerky into small pieces and add to the beef stock and beef cubes. Simmer gently for about 5 minutes.
  • Transfer beef and beef stock to a large stockpot or slow cooker.
  • Do not clean skillet. Add 2 tablespoons vegetable oil, the chopped onion and garlic, and the aji chile pepper paste to the skillet. Sauté until the onion and garlic are soft and fragrant. Add the chopped squash, carrots, and potatoes and sauté for 2-3 minutes.
  • Add sautéed vegetables to the stockpot or crockpot with the beef. Simmer over low heat until beef and beef jerky are tender, about a hour and a half on the stove. (about 6 hours in the crockpot). If simmering the stew on the stove, you may need to add more liquid (beef stock or water) from time to time, but stew should finish up very thick, without much broth.
  • Add the lima beans and corn and simmer for 10-15 minutes more.
  • Season with salt and pepper to taste, and serve over rice.
