Tofu scramble, a vegan alternative to scrambled eggs. It's so easy to make, high in protein, and ready in 15 minutes with only 4 ingredients!

8 ounces firm tofu (225 g)
1/4 tsp salt, see notes
1/4 tsp turmeric powder, see notes
1/8 tsp ground black pepper

Steps:

  • Chop the tofu and use a fork to crumble it into bite-sized pieces.
  • Add some oil to a frying pan and when it's hot, add the tofu and all the remaining ingredients (salt, turmeric powder, and ground black pepper). Stir until well combined and cook over medium-high heat for 5 to 10 minutes. Stir occasionally.
  • Serve your tofu scramble immediately (I served my tofu scramble over some toasted bread and topped it with fresh parsley) with fresh fruit, vegan bacon, or vegan sausage as part of a vegan brunch. You can also serve it with vegan pancakes, vegan crepes, vegan banana bread, and coffee or juice.
  • Store leftovers in an airtight container in the fridge for up to 1 week. You can also prepare the tofu before cooking and freeze it for up to 5 months. On the other hand, you can also freeze your tofu scrambled eggs after cooking. If you do, the tofu will get a chewier texture, although the eggy flavor won't change. It can be reheated in the microwave or on the stovetop over medium heat until warmed through. Add a little oil, water, or vegetable stock if needed.

I'm always looking for a good tofu recipe and I like the way the turmeric makes this look like real eggs. Try this, you just may like it!!!

1 lb soft tofu
1 teaspoon vegetable oil
2 large scallions, white and light green parts,finely chopped (1/4 cup)
1/8 teaspoon ground turmeric
1/2 teaspoon salt
6 -8 medium basil leaves, cut crosswise into fine shreds (1 Tbs.)
1 tablespoon snipped chives
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh parsley

Steps:

  • Cut tofu block in half horizontally, then cut in half lengthwise, keeping block intact.
  • One at a time, take a piece of tofu in your hand.
  • Holding it over sink, squeeze tofu gently but firmly until it crumbles slightly and water drips out.
  • When about half the moisture has been removed, place tofu in bowl.
  • Repeat until all tofu has been squeezed.
  • In nonstick skillet, heat oil over medium-high heat.
  • Add scallions.
  • Stir just until they sizzle, 30 seconds.
  • Add turmeric, salt and tofu.
  • Stir with wooden spoon, breaking up tofu, until it is evenly golden and moist, about 1 minute.
  • Mix in basil, chives, dill and parsley.
  • Stir gently until tofu looks like well-set scrambled eggs, about 1 minute.
  • Serve immediately.
  • Salt and pepper to taste.
  • Enjoy!

This easy tofu scramble has the same texture as scrambled eggs, but it's 100% plant based! It's a vegan breakfast idea you'll want to make again and again.

12 to 14-ounce block extra firm tofu
2 tablespoons olive oil
Heaping 1/4 teaspoon turmeric
1 teaspoon kosher salt
Fresh ground pepper
1/2 teaspoon garlic powder
1/4 teaspoon cumin
2 tablespoons olive oil
1/2 red onion
1 red pepper
2 handfuls baby greens (like baby spinach, baby kale, or a baby greens mix*)

Steps:

  • Drain the tofu container, then pat the tofu dry with a clean dish towel. Place the tofu in a large bowl and use your fingers to break the tofu into bite-sized irregular shaped pieces. (It might be a little cold on your hands: don't worry, it should only take a few seconds!) Stir in the olive oil, turmeric, salt and pepper.
  • Add the cumin and garlic powder to a dry skillet. Cook on medium heat for 1 minute until fragrant. Stir in the tofu and increase the heat to medium high. Cook for 5 minutes, stirring occasionally, until heated through and starting to lightly brown. Remove the heat and place it on the serving plates. Serve with toast, veggie saute (below), or if you want to get fancy, vegan bacon.
  • Meanwhile, thinly slice the onion. Thinly slice the bell pepper. Heat the olive oil in a separate large skillet over medium high heat. When hot, add the onion and peppers. Cook 4 to 6 minutes until just starting to brown, stirring occasionally. Add a pinch of salt and the baby greens. Cook for 30 seconds until wilted. Remove from the heat and serve alongside the tofu scramble.

Another favorite from La Dolce Vegan...I like to make extra...it keeps well in the fridge all week...then I use it again and again for different things when I am feeling lazy. I like to take left-overs of this and put it in with sliced pan-fried potatoes, just when the potatoes are almost done cooking...yum! Makes great egg sandwiches, too! I like to slice cherry tomatoes in half instead of using big tomatoes, as the little ones are more dependable flavor-wise all year long. I like to add the tomatoes a few minutes before cooking is done, just so they get a bit cooked and shriveled...just my preference. Oh, and drain, drain, drain that tofu before you use it, as always!!!

1 small onion, diced
2 tablespoons olive oil
1 lb firm tofu, crumbled (extra firm is fine, too)
2 garlic cloves, minced
2 tablespoons nutritional yeast flakes
1 tablespoon tamari
2 teaspoons Dijon mustard
1/2 teaspoon turmeric
1 teaspoon sage (I like to use dried rubbed sage)
1/4 teaspoon basil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 medium tomatoes, chopped

Steps:

  • In a large saucepan on medium-high heat, saute the onions in oil until translucent.
  • In a medium bowl, stir together the crumbled tofu, garlic,nutritional yeast, tamari, mustard, turmeric, sage, basil, salt and pepper until well-mixed.
  • Add tofu mixture to onions and scramble until tofu is browned and all the liquid has evaporated.
  • Toss with tomatoes and serve immediately.

16 oz tofu
1 bell pepper
½ onion
2 teaspoons oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon turmeric
1 tablespoon lemon juice

Steps:

  • Drain tofu from container, wrap it in a paper towel, and place it on a plate. Rest another plate on top of the tofu and microwave for 3-5 minutes.
  • Unwrap the tofu and cut into cubes.
  • Place the tofu in a bowl and mash with a fork.
  • Cut the top off a bell pepper and remove all the seeds and thinly slice.
  • Chop the onion.
  • Heat oil in a pan over medium heat. Add the onions and peppers, and cook until softened.
  • Add in the tofu and cook on medium heat until most of the water has evaporated.
  • Add the salt, pepper, onion powder, garlic powder, and cumin, and mix well, until all the seasonings are evenly distributed.
  • Add the lemon juice to the tofu and mix until evenly combined.
  • Remove the tofu from the heat and serve.
  • Enjoy!
