BARBECUE TOFU PIZZA WITH OPTIONAL CHICKEN SUBSTITUTION



Barbecue Tofu Pizza with Optional Chicken Substitution image

Crispy barbecue-sauce-coated tofu replaces chicken in this tangy, irresistible vegetarian version of barbecue chicken pizza. Feeding meat-eaters too? It's easy to make a tofu version for the vegetarians and chicken for the meat-eaters.

1 pound 16 ounces of your favorite store-bought or homemade pizza crust
1 cup of your favorite barbecue sauce
1 cup crispy salt & pepper tofu pieces -or- 1 cup large-diced cooked chicken
1/2 small red onion (thinly sliced)
8 ounces mozzarella cheese
Kosher salt
Handful of fresh cilantro (coarsely chopped)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Roll/pull/flatten the pizza crust dough to about 14 inches in diameter (if making one tofu and one chicken pizza, divide dough in half and shape into two pizzas about 8 inches in diameter.)
  • Brush a cookie sheet with a little olive oil and carefully lay the pizza crust(s) on the cookie sheet.
  • Spread 1/2 cup of the barbecue sauce onto the dough, leaving about a 1/2 inch border around the edges. (If making two pizzas, spread 1/4 cup on each pizza).
  • Add tofu or chicken to a small bowl and add remaining barbecue sauce. Carefully toss and evenly place pieces over pizza crust. (If making two pizzas, place tofu in one bowl and chicken in the other, and pour 1/4 cup sauce over each. Toss and spread on respective crusts.)
  • Lay sliced red onions over the top.
  • Sprinkle with shredded mozzarella cheese.
  • Bake for about 10 minutes, until the crust is golden brown and the cheese is completely melted.
  • Remove from the oven and sprinkle a pinch of kosher salt and the fresh cilantro over the top.
  • Slice and serve!

8 oz firm tofu (from 14-oz package), cut into 1/2-inch cubes (1 1/2 cups)
1 cup sliced fresh mushrooms
2 tablespoons red wine vinegar
1 tablespoon olive oil
2 teaspoons dried Italian seasoning
1 can (11 oz) refrigerated thin pizza crust
1/2 cup pizza sauce
1/2 cup sun-dried tomatoes in oil, drained, cut into small pieces
1 red bell pepper, thinly sliced
1 small onion, thinly sliced
1 tablespoon chopped fresh basil leaves
1 cup shredded reduced-fat mozzarella cheese (4 oz)

Steps:

  • In medium bowl, stir tofu, mushrooms, vinegar, oil and Italian seasoning. Cover and refrigerate at least 30 minutes.
  • Meanwhile, move oven rack to lowest position. Heat oven to 375°F. Spray 15x10x1-inch pan with cooking spray. Unroll dough in pan. Bake about 10 minutes or just until edges are light golden brown.
  • Spread pizza sauce over crust. Drain marinade from tofu and mushrooms, discarding marinade. Top sauce with tofu, mushrooms, tomatoes, bell pepper, onion and basil.
  • Bake 10 minutes; sprinkle cheese over pizza. Bake about 10 minutes longer or until cheese is melted and crust is deep golden brown.

Instead of pizza dough, this Japanese version of Tofu Pizza uses crispy pan-fried tofu as the 'dough' and topped with melted mozzarella cheese, mushrooms, tomato slices and basil leaves for a delicious tofu dish.

1 block firm tofu
3 slices ham ((skip for vegetarian))
2 mushrooms
1 tomato
¼ cup potato starch or cornstarch ((can substitute it with flour))
½ tsp kosher salt (Diamond Crystal; use half for table salt)
freshly ground black pepper
2-3 Tbsp ketchup
2-4 leaves basil
1 cup mozzarella cheese
parsley ((for garnish, optional))

Steps:

  • Gather all the ingredients.
  • Slice the tofu into halves and wrap with paper towel. Place a plate and a heavy object on top of the tofu and set aside for 15 minutes. This process will help tofu drain faster.
  • Slice the ham into thin strips.
  • Thinly slice the mushrooms and the tomato.
  • Season the flour with ½ tsp salt and freshly ground black pepper and mix well. Coat all sides of the tofu with potato starch or flour. This step helps tofu retain the moisture.
  • Heat oil over medium high heat in an oven-safe skillet (or regular non-stick frying pan). Cook the tofu until the bottom is crispy and golden brown. Flip and brown the other side. If your frying pan is not oven safe, transfer the tofu to a baking dish lined with parchment paper later on.
  • Spread ketchup on top and place a slice of tomato and basil.
  • Put the sliced ham and mushrooms on top.
  • Sprinkle some cheese. You can place the pan in the oven and broil for 5-7 minutes, until the cheese has nicely melted. Serve immediately.

1 (12 ounce) package extra-firm tofu
½ teaspoon salt
vegetable oil for frying

Steps:

  • Wrap tofu in a clean towel and place onto a plate. Set another plate on top, and place a 3- to 5-pound weight on top. Press tofu for about 20 minutes; drain and discard the accumulated liquid.
  • Cut tofu into 1-inch by 2-inch chunks. Sprinkle 1/4 teaspoon salt onto one slide; flip over and sprinkle remaining 1/4 teaspoon on the other.
  • Heat oil in a wok or large skillet. To test if the oil is ready, dip a chopstick or wooden spoon in it; if bubbles rise, it is ready. If the oil smokes, it is too hot.
  • Gently place 5 to 8 pieces of tofu at a time in hot oil using metal tongs. Be very careful as oil may splatter; use a splatter guard if possible. Fry tofu until golden, 3 to 4 minutes.
  • Drain tofu on a plate lined with several paper towels. Allow to cool slightly before serving.

350 g italian herb super firm tofu
1 cup tomato sauce
1/4 cup parmesan cheese
2 green onions, sliced

Steps:

  • Bake pizza crust at 350 degrees for 10 to 15 minutes.
  • Crumble tofu.
  • Mix together tofu crumbles, tomato sauce, and Parmesan cheese.
  • When crust is ready, evenly spread the tofu mixture on top.
  • Sprinkle with green onion, mushrooms, and green pepper. Top with mozzarella cheese.

1 lbs high protein tofu (16 oz) (or extra firm tofu drained and pressed)
2 tbsp nutritional yeast ((optional))
1 clove garlic
1 tsp salt
2 tbsp fresh basil (or 2 tsp dried herbs like Italian seasoning)
1 tbsp olive oil

Steps:

  • Preheat your oven to 425°F (220°C). Drain the tofu and crumble it into your food processor.
  • Add salt, garlic, herbs, olive oil, and nutritional yeast to the food processor.
  • Blend until mixed into a crumbly dry paste.
  • Drizzle oil at the bottom of an iron skillet or cookie sheet.
  • Put the tofu mixture in the skillet and spread it out evenly about 1/2 inch thick. (It will shrink a little while baking).
  • Bake for 25-30 minutes until it starts to dry out slightly and get crispy on the bottom.
  • Top with your favorite pizza toppings.
  • Bake again for 10 more minutes.

TOFU PIZZA WITH HAM AND MUSHROOMS RECIPE

This is a great recipe to start with. Feel free to mix up ingredients to your liking though! Everybody has their favorite pizza toppings.

1 block of tofu (firm)
4 slices of black forest ham
2 champignon mushrooms
½ bell pepper
1 Roma tomato (medium-sized)
4 tbsp ketchup
¼ cup potato starch or cornstarch or flour
½ tsp salt
¼ tsp ground black pepper
1 cup mozzarella cheese (shredded)
4 basil leaves
2 tbsp vegetable oil

Steps:

  • Slice the tofu block into two equal slices. Place them on a paper towel to drain for 10 -15 minutes until most of the liquid leaves the tofu.
  • Stack the ham slices and cut them into small pieces.
  • Slice the bell pepper into small pieces. Then do the same with the mushrooms.
  • Slice the tomato into thin slices. Thicker slices will leave too much juice and make the pizza soggy.
  • Mix the starch or flour with salt and pepper.
  • Place the drained tofu slices into the starch and coat both sides well to seal in the remaining moisture. This helps prevent soggy tofu.
  • Grab an oven-safe skillet (you will put it in the oven later). Now hear up some vegetable oil and fry the tofu on both sides until golden brown.
  • Spread the ketchup onto the tofu, add the ham, mushrooms, bell peppers, and tomato.
  • Now it's time to sprinkle the cheese on top.
  • Place the pan in the oven for about 5 or 6 minutes to broil the pizza. The cheese should melt and begin to brown.
  • Once out of the oven, plate the pizzas and garnish them with two basil leaves each. Now serve the tofu pizza while hot.

  • Marinate the bbq Tofu: Press the tofu in paper towels well by hand or keep pressed in kitchen towel under a 10 lb weight for 15 mins. Add the sauces, garlic and pressed tofu in a bowl and let sit until ready to use.
  • Make the Pizza dough: In a bowl, add water, yeast, maple. Mix and let sit for 5 minutes or until frothy. in another bowl, add the dry ingredients. Mix well and add to the yeast mixture. Add oil if using, mix and knead for 2 minutes or until smooth. Roll the dough out on parchment using a little flour if needed into a 12 to 13 inch oval. (roll it out using a rolling pin.
