TOFU HIYAYAKKO
This is one of the really traditional easy dishes in Japan. My dad likes it so much. We often eat this dish with the rice, miso soup, grilled fish and Japanese pickles in the morning.

Steps:
- Mix the soy sauce, sugar, dashi granules, and water together in small bowl until sugar dissolves. Place the tofu on a small plate and top with ginger, green onion, and bonito shavings. Drizzle the soy mixture on top, and sprinkle with sesame seeds.

- Bring a small saucepan of water to the boil and blanch ginger to soften the flavour a little (10 seconds). Drain and set aside.
- For soy sesame dressing, stir ingredients in a small bowl, season with finely ground white pepper and set aside.
- Carefully turn tofu out of its container (this is easiest if you break the suction of the container by pulling the container's sides a little. If it does break, cut the tofu into large pieces) onto a serving plate. Top with ginger, radish and bonito flakes, drizzle with soy sesame dressing and serve cold.

- Pour boiling water over aburaage to remove excess oil, then squeeze water out. Cut the aburaage in half lengthwise, then cut into 5mm/3/16" wide strips crosswise.

- Remove excess liquid from the block Silken Tofu (1) and plate. Store block tofu in the fridge until it is ready to use. Drain excess water from the tofu that had accumulated in the dish and cut into 6 equal pieces.
- Place the tofu on a serving bowl or plate and top with Scallion (1 stalk), Fresh Ginger (to taste) and Bonito Flakes (to taste).
- Drizzle with Soy Sauce (to taste), about a ¼ teaspoon to each piece of tofu or to your taste. Serve immediately. Enjoy!

- Drain the tofu for 10-15 minutes by wrapping a paper towel around or placing the tofu on a flat bamboo sieve over a plate. You do not need to press the tofu in this recipe as you want to retain some moisture in the tofu. Be gentle when handling since silken (soft) tofu is very fragile. Once the excess liquid is drained, cut it into 4-6 pieces.
- Put each piece of tofu on a serving dish. Top the tofu with your favorite toppings. Before you bring it to the table, have a quick check at the dish. If you see any water being released from the tofu, gently tilt the plate and discard the water.
