HEALTHY VEGAN COCOA TOFU BROWNIES



Healthy Vegan Cocoa Tofu Brownies image

This is my healthified version of Recipe #460574. The brownies still come out chocolatey, fudgy and super yummy. I hope youll enjoy them, too. :) Feel free to add in some dried fruits or chocolate chips if you feel like it.

3 ounces firm silken tofu
1/4 cup soy yogurt
3 tablespoons water
1/2 cup unsweetened applesauce
1/4 cup dark brown sugar (unpacked)
2 teaspoons vanilla extract
3/4 cup whole wheat flour (I use whole spelt flour)
1/4 cup flour (I use spelt flour)
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 pinch salt
1 teaspoon cinnamon
1/8 teaspoon pumpkin pie spice

Steps:

  • Puree the tofu, yogurt, water and applesauce until smooth and fluffy. Transfer to a mixing bowl. Use a fork to vigorously mix in the sugar and vanilla.
  • Sift in flours, cocoa powder, baking powder, cinnamon, pumpkin pie spice and salt.
  • Use a spatula to mix batter until smooth. Transfer to an 8X8 greased baking pan and smooth out the top.
  • Bake in the preheated oven at 325°F/150°C for 25 minutes or until set.
  • Remove from the oven and let the brownies cool for at least 15 minutes before slicing and serving.
  • Enjoy.

1/2 c. butter melted
3/4 c. tofu (soft)
1 c. sugar
1/2 c. unsweetened applesauce
3 eggs
1 1/2 tsp. vanilla extract
1/3 c. whole wheat flour
1/2 c. (scant) all purpose flour
1/2 c. cocoa
1/4 c. bran
2 tbsp. wheat germ
1/2 tsp. baking powder
1/2 tsp. salt

Steps:

  • Heat oven to 350. Grease an 8 inch pan with butter. Sift flours with cocoa, salt & baking powder. Stir in wheat germ and bran Place tofu in blender and blend till smooth Melt butter in microwave till just melted (not too hot) and add to blender. Pulse with the tofu Add the sugar and applesauce. Blend till very smooth. Add the eggs and blend just till mixed Stir dry and wet ingredients just till blended and pour into pan. Bake for 40 - 45 minutes till done Serve warm with vanilla icecream

2012-10-14 Place tofu, applesauce, sugar and vanilla in a blender and blend until smooth. In a medium bowl combine flour, cocoa powder, salt and baking soda. Add tofu mixture and stir until well combined and smooth. Fold in the chocolate chips. Pour batter into your brownie pan (batter will be very thick). Bake for 30-35 minutes.
