HOMEMADE VEGAN CHORIZO



Homemade Vegan Chorizo image

This recipe for homemade vegan chorizo is the only one you will ever need. It is spicy and crumbly, with notes of clove and coriander.

1 block (12 oz.) Tofu (extra firm)
½ lb. Mushrooms (finely chopped)
6 Chile guajillo (dried, seeded)
2 Chile ancho (dried, seeded)
4 Chile de arbol (dried)
4 cloves Garlic
1 tbsp. Oregano (dried)
½ tsp. Cumin (ground)
2 Cloves (whole)
1 tbsp. Paprika (ground)
½ tsp. Coriander (ground)
¼ cup Apple cider vinegar
2 tbsp. Vegetable oil (optional)

Steps:

  • Remove tofu from package and place in between two small plates. Place a can on top of the plates and leave like this for 30 min.
  • Bring a small pot of water to a boil. Remove the stems and seeds from the chiles and discard them. Drop the chiles into the boiling water. Turn heat down to the lowest setting and let the chiles sit in the water for 10 min.
  • Remove the chiles from the water and place in blender. Reserve ½ cup of the chile soaking liquid.
  • Add the garlic, oregano, cumin, cloves, paprika, coriander, apple cider vinegar, and ¼ cup of soaking liquid to the blender and process until smooth. If necessary add the remaining ¼ cup of the soaking liquid to get things moving in the blender.
  • Season the chile mixture with salt and pepper and pass through a fine strainer. Set aside.
  • Drain the water from the tofu and crumble with your hands into a large bowl. Pour half of the pureed chile mixture into the bowl with the tofu and stir to combine. Set aside.
  • Heat a large sauté pan to high heat and add 1 tbsp. of oil. Once the oil is hot add the finely chopped mushrooms and continue to cook until the mushrooms begin to brown, about 6-7 min.
  • Lower heat to medium-low and pour in the remaining half of the chile mixture. Stir and continue to cook for 3-4 minutes, until the mushrooms begin to absorb the chile mixture. Remove from pan and place in a large bowl.
  • Heat a non-stick sauté pan set to medium heat, add 1 tbsp. of oil. Add the tofu mixture and continue to cook until the liquid begins to evaporate and tofu becomes crispy, 7-8 minutes. You can make the tofu as crispy as you like. (Be careful not to overcrowd the pan or the tofu will never get crispy.)
  • Pour cooked tofu mixture into the bowl with the mushrooms and mix well to combine. Adjust seasoning.

Crumble the tofu as if it were ground or coarsely chopped, then cook it until the water is driven out and you get a result which is very similar to ground meat and which takes on the flavor of whatever was cooked with it.

2 tablespoons olive oil
1 small onion, chopped
1 tablespoon garlic, chopped
Salt and ground black pepper
2 blocks firm tofu
1 tablespoon chili powder
1 teaspoon cumin
1/8 teaspoon cinnamon
1 teaspoon cider vinegar
Chopped fresh cilantro for garnish
Chopped scallions for garnish

Steps:

  • Put oil in a large skillet over medium-high heat. Add onion and garlic; sprinkle with salt and pepper. Cook, stirring occasionally, until the vegetables soften, 3 to 5 minutes.
  • With your hands, crumble tofu into the pan. Cook, stirring and scraping the bottom of the skillet occasionally and adjusting heat as necessary, until tofu browns and crisps as much or as little as you like, anywhere from 10 to 30 minutes.
  • Sprinkle with the chili powder, cumin and cinnamon; stir and cook, continuing to scrape any browned bits from the bottom of the pan until the mixture is fragrant, a minute or two. Stir in vinegar and adjust the seasoning taste. Garnish with cilantro and scallions and serve with warm corn tortillas or over rice.

Tofu Chorizo

I've found that the flavor of chorizo is mostly in the seasoning. Using an assortment of strong seasonings creates that intense flavor, and the long cooking provides the chewy texture. You need a decent food processor for this recipe. This recipe is from The Complete Vegan cookbook, one of my favorite resources.

1 lb firm tofu
3 large dried ancho chiles
4 garlic cloves
1 tablespoon dry oregano
2 teaspoons mild paprika
1 1/2 teaspoons cumin seeds
1 teaspoon salt
1/8 teaspoon dried red pepper flakes
4 whole cloves
1/2 inch piece cinnamon stick
2 tablespoons apple cider vinegar
3 tablespoons peanut butter
1 1/4 cups vegetable stock

Steps:

  • Press the tofu; slice the block of tofu into 1/2 inch slices, and lay them out on a clean dish towel. Cover with another clean towel, and place a large baking sheet on top. Weight the sheet down with a large can or two, and leave tofu to drain for an hour.
  • Heat a large cast iron skillet over medium high heat. Tear the chiles into large pieces, discarding the stems and most of the seeds.
  • Toast the chile pieces in the hot skillet, pressing down on them occasionally They will blister and turn a lighter shade.
  • When the chiles are toasted, place them in a food processor along with the garlic, oregano, paprika, cumin seeds, salt, pepper flakes, cloves, and cinnamon stick. Process until this is all finely ground.
  • Add the vinegar, peanut butter and 1/4 cup of the vegetable stock and process until smooth. Add the rest of the vegetable stock. Transfer this mixture to a saucepan, and place over medium high heat.
  • Crumble the drained tofu into the saucy mixture and turn the heat down to medium low. Cook over medium low heat until fairly dry and crumbly looking, at least 20 minutes. Stir frequently, this can stick.
  • Use immediately or store in the refrigerator for up to a week.

  • Preheat your oven to 350F (180C). Line a large baking sheet with parchment paper or lightly grease it.
  • Crumble the block of tofu with your fingers into the bowl with the seasoning. Mix the tofu crumbles with the seasoning making sure all of the tofu is evenly coated. Spread the tofu crumbles evenly over the prepared pan. Bake for 25 to 30 minutes, stopping to stir the tofu every now and then. Keep a close eye on it towards the end so that it doesn't burn. You want the tofu to be nice and browned. The smaller crumbles will be darker than the larger crumbles, and that's ok because it will provide a variety of texture. Enjoy hot or cold.

  • Drain tofu. With clean hands or a fork, roughly crumble the tofu in a medium mixing bowl. Aim for pieces about 1/4 - 1/2 inch in size.
  • Add the chili powder, smoked paprika, cayenne, and cumin and carefully toss to evenly coat the tofu with the spices. Add the tamari, vinegar, maple syrup, and ketchup and toss one more time.
  • Heat a 10-inch nonstick or well-seasoned cast iron skillet over medium heat. Add 1 Tbsp (15 ml) avocado oil and place half of your tofu mixture into the skillet (amounts as original recipe is written // adjust if altering batch size). Distribute the tofu mixture evenly over the pan so it’s in one thin layer. Cook for 3-4 minutes, undisturbed. It should be sizzling and popping slightly — if it’s not, turn up the heat a bit.
  • Once the tofu is nicely browned on the bottom, use a spatula to flip sections as evenly as possible to brown the other side for another 3 minutes. Break up the tofu mixture slightly and toss to evenly brown all sides — about 2 minutes.
