1 pkg. (14 oz.) soft tofu, drained
1/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise
2 green onions, sliced
1 Tbsp. GREY POUPON Harvest Coarse Ground Mustard
1 tsp. dill weed
8 slices whole wheat bread, toasted

Steps:

  • Place tofu in large bowl; mash with potato masher or fork.
  • Add all remaining ingredients except toast; mix well. Cover. Refrigerate at least 30 min.
  • Spread 1/2 cup of the tofu mixture onto each of 4 of the toast slices just before serving; cover with 1 of the remaining toast slices.

1 apple, cut into bite-sized pieces
¼ cup mustard
¼ cup raisins
½ teaspoon ground thyme, or to taste
salt and ground black pepper to taste
8 slices bread, or to taste

Steps:

  • Pat tofu dry with a paper towel. Cut into small pieces.
  • Mix tofu, apple, mustard, raisins, thyme, salt, and pepper in a large bowl. Spoon mixture onto bread.

1/2 cup vegan mayonnaise
1/2 cup onion, diced
1/4 cup green pepper
1/4 cup red pepper
1 teaspoon cumin
1 teaspoon parsley
1 teaspoon basil
4 pita pockets

Steps:

  • Cut tofu into 1/2 cubes and fry till golden brown, Mix tofu with mayo, onions, peppers and seasonings (use whatever seasonings you like).
  • Add more or less mayo depending on how"wet" you like the salad.
  • Best served in a pita pocket.

Before I became vegetarian, I'd always loved chicken salad sandwiches, so I've been searching for a way to have something similar to that now that I am veg. This recipe is a mixture of many recipes I've found and just how I've been making it lately. Simple and easy to make with common ingredients. This recipe could also be Tofu "Egg" Salad by simply mashing the tofu instead of cubing it.

1 lb firm tofu, drained and cubed
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon paprika
1/4 teaspoon turmeric
1/3 cup celery, finely chopped
1/4 cup red onion, finely chopped
whole wheat bread, slices or pita pocket
lettuce

Steps:

  • Mix mayo, mustard, paprika, and tumerik in a bowl.
  • Add celery, onions, and tofu. Mix and be sure tofu is coated with mayo mixture. Add a dash of pepper to season.
  • Serve on slices of whole wheat bread with lettuce or in pita pockets.

  • Press the tofu using a tofu press or by rolling it in paper towels and pressing a heavy object on top.
  • Slice tofu into 4 slabs, then cut those into 8 slabs so you have thin strips. Add tofu to a glass baking pan along with vegetable broth, soy sauce, thyme, sage and a few cracks of fresh ground pepper. Bake for 25 minutes until tofu is golden brown, then set aside to cool.
  • Once tofu is cool, tear into bite sizes pieces. I find that tearing creates better chunks rather than chopping into cubes, but do whatever is easiest for you.
