VEGETARIAN TOFU AND NUT LOAF



Vegetarian Tofu and Nut Loaf image

This meatloaf has a lot of flavor and is very satisfying if you are craving protein. My husband and I, both vegetarians, made this for my brother, a hunter and meat-enthusiast, and he really liked it. The best thing about this meatloaf is the next day when I can have a cold meatloaf sandwich with mayonnaise.

1 (12 ounce) package firm tofu, drained and cubed
2 eggs
1 (1.25 ounce) envelope dry onion soup mix
1 tablespoon soy sauce
¾ cup chopped walnuts
1 teaspoon olive oil
1 (8 ounce) package sliced fresh mushrooms
1 small onion, chopped
2 stalks celery, chopped
1 ½ teaspoons dried oregano
1 ½ teaspoons dried basil
½ teaspoon dried sage
1 ½ cups dry bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Place tofu, eggs, onion soup mix, and soy sauce into a food processor or blender; process until combined. Add walnuts and puree until smooth. Transfer tofu mixture to a large bowl.
  • Heat olive oil in a large skillet over medium-high heat. Cook and stir mushrooms, onion, and celery in the hot oil until vegetables are tender, about 5 minutes. Season with oregano, basil, and sage.
  • Stir vegetables and bread crumbs into tofu mixture; press mixture into prepared loaf pan.
  • Bake in the preheated oven until loaf is golden brown, about 75 minutes. Allow loaf to cool slightly before slicing.

1/3 cup ketchup
1/3 cup low sodium soy sauce
2 tablespoons Dijon mustard
1/2 cup chopped parsley
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 medium onion, chopped
1 cup dry whole grain breadcrumbs or 1 cup corn flakes

Steps:

  • Drain tofu and mash.
  • Combine all ingredients and mix well.
  • Place in a loaf pan coated with oil.
  • Bake at 350F for one hour.
  • Cool in pan for 15 minutes.
  • Garnish with ketchup, BBQ sauce, and/or chopped parsley.
  • When cold, can be sliced for sandwiches.

1 lb firm tofu, pressed and cubed
2 slices bread, toasted, and crumbled
1 small onion, coarsely chopped
1/2 teaspoon garlic powder
4 tablespoons tomato ketchup
1 tablespoon nutritional yeast (optional)
2 tablespoons tamari soy sauce
1 tablespoon Italian herb seasoning
1 teaspoon black pepper
1/2 cup of coarsely chopped carrot
1/2 cup of coarsely chopped celery

Steps:

  • First, preheat oven to 350°F.
  • Put all the ingredients in a food processor, except for the carrot and celery. Blend until smooth.
  • Add the carrot and celery, and blend in the tofu mixture.
  • Put in a loaf pan and bake for one hour.
  • You can also put ketchup on top of the loaf.

This fried rice recipe is packed with flavor, and includes how to make the tastiest, crispiest fried tofu you have ever had. Topped with scallions and basil for a super fresh taste, you'll never want take-out again!

1 package firm tofu
3 tablespoons corn starch
salt and pepper (to taste)
2 tablespoons extra-virgin olive oil (for frying, plus more if needed (or oil of choice))
2 tablespoons extra-virgin olive oil
2 cloves garlic (minced)
1 tablespoon fresh ginger (minced (from about a 1" piece))
2 eggs
3 cups cooked rice ((from 1 cup dry))
1 carrot (grated)
1 cup frozen peas
1 cup frozen corn
1 teaspoon toasted sesame oil
1 tablespoons rice vinegar
2 tablespoons soy sauce
salt and pepper (to taste)
2 scallions (chopped)
2 tablespoons fresh basil (chopped)
Sriracha hot sauce (for serving, optional)

Steps:

  • To make the tofu, cut a block of tofu into pieces approximately 1/4 inch thick, then cut those into four pieces each (so you have pieces approximately 1" x .5")
  • Arrange the tofu pieces on top of a paper towel (or other clean towel), sprinkle with salt, and put another towel on top. Place something heavy (like a cast iron skillet) on top of it. Allow to sit for approximately 10 minutes so the the moisture is drawn out of the tofu.
  • Place tofu in a medium sized bowl with cornstarch, and salt and pepper to taste. Stir/shake gently to coat the pieces of tofu in cornstarch.
  • Coat the bottom of a heavy skillet (cast iron recommended) with olive oil. Heat over medium-high heat, and add tofu. Allow to sit for 2-4 minutes, or until golden brown. Flip and allow to brown on other side, and remove to a clean paper towel to drain. You will probably need to do two-three batches.
  • To make the fried rice, in the same skillet as the tofu (or a wok), heat olive oil.
  • Add garlic and ginger; saute for one minute or until fragrant.
  • Crack eggs into skillet and stir to scramble, until just set.
  • Add rice to skillet and stir to incorporate.
  • Allow to sit undisturbed for a few minutes to brown. Using a thin metal spatula, flip rice over and allow to brown on other side.
  • Add carrot, peas, corn, sesame oil, rice vinegar, soy sauce, salt, pepper, and fried tofu.
  • Stir to incorporate, and allow to continue heating for a few minutes until all ingredients are warm.
  • Top with scallions and basil, as well as sriracha if desired.

Easy Vegan

This is a vegan "meatloaf" that tastes like and has the consistency of regular meatloaf. I used my mom's age-old recipe and veganized it. A little of the tomato sauce can be saved to glaze the top or you can use ketchup. I like making meatloaf sandwiches out of this!

1 (15.5 ounce) can dark red kidney beans, drained
1 (16 ounce) package firm tofu, drained
1 (15 ounce) can tomato sauce
1 cup rolled oats
1 medium green bell pepper, diced
1 tablespoon dry vegan egg replacer
1 teaspoon onion powder
1 teaspoon garlic powder
1 pinch oregano, or to taste
salt to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
  • Combine garbanzo beans and kidney in a food processor; pulse until smooth. Crumble tofu into the food processor; pulse until well combined and mixture resembles ground meat.
  • Transfer mixture to a large bowl. Add tomato sauce, oats, bell pepper, onion, egg replacer, onion powder, garlic powder, oregano, and salt; mix by hand until combined.
  • Form mixture into a loaf shape and place in the prepared baking dish.
  • Bake in the preheated oven until cooked through, about 1 hour 30 minutes.
