sunflower oil , for greasing
2-3 small crunchy apples
roasted chopped pecans (optional)
melted dark chocolate (optional)
200g golden caster sugar
50g golden syrup
½ tsp white wine vinegar
knob of butter
1 tbsp double cream

Steps:

  • Grease a large baking tray, a spatula and a metal tablespoon with oil. For the toffee, put the sugar, golden syrup, vinegar and butter in a small saucepan and heat gently until the sugar has dissolved.
  • Meanwhile, cut the apples into chunky slices, about 1cm thick, and push a lollipop stick or wooden skewer through the edge so that the point reaches the centre - if your skewers are very long, cut them in half before using.
  • Once the sugar has dissolved, turn up the heat and bring the mixture to the boil. Pop in a sugar thermometer and bubble until the temperature reaches 148C. Quickly remove from the heat and stir in the cream using the oiled spatula. Leave the toffee to cool and thicken a little, then hold the apple skewers over the pan, one at a time, and spoon over some of the toffee to thickly coat one side of the slice. Let any excess drip off around the edges, then transfer to the prepared tray, toffee-side up, and sprinkle with some chopped pecans, if using. If the toffee in the pan becomes too firm, gently heat to re-melt it.
  • Leave the slices to cool until hardened, then drizzle over some dark chocolate, if using. Leave to set, then enjoy.

Crunchy, sticky, and easy-to-make toffee apples are just right for eating on Halloween night or any other fall celebration.

2 1/3 cups golden caster sugar (or very fine granulated sugar)
1/2 cup warm water
2 tablespoons liquid glucose
1 teaspoon white vinegar
8 apples (small, red)
Boiling water
1/2 teaspoon red food coloring

Steps:

  • Gather the ingredients.
  • Place the sugar, warm water, glucose, and vinegar in a large saucepan. Gently heat, while stirring, to dissolve the sugar, but make sure not to bring to a boil at this stage.
  • Once all the sugar has dissolved, raise the heat and bring the toffee to a rolling boil. Using a candy thermometer , boil to 270 F/140 C. This can take 10 to 20 minutes. If you do not have a candy thermometer, take a cup of cold water and once the toffee has started to thicken, drop a little of the toffee into the cold water. The toffee should solidify as it hits the water, and when you remove it from the water, the toffee threads should still be slightly flexible, not brittle. If the toffee is soft, continue to cook.
  • While the toffee is boiling, place the apples in a large bowl and cover with boiling water. Leave for a few minutes, then remove from the water and rub the apples with a tea towel and dry thoroughly. (The hot water and the rubbing will remove any waxy surface from the apple.) Once dried, remove the apple stems and push a chopstick or lollipop stick into the hole.
  • Line a baking sheet with parchment paper .
  • Once the toffee is ready, remove from the heat and leave to stand for 5 minutes to let the bubbles subside. (It is important to wait until all the bubbling calms down to create a smooth surface on the apples.) Once the bubbles have stopped, add the food coloring and stir gently.
  • Working quickly, tilt the pan slightly and dip the apples into the toffee; twirl around to completely coat the apple. Lift the apple from the pan and allow any excess toffee to drain away. Stand the toffee apple onto the lined baking sheet and leave to set around 20 minutes, or longer if possible.
  • If the toffee starts to thicken and harden as you are coating the apples, place the pot back on the heat and warm through, but do not boil. If you are not eating the toffee apples right away, wrap in cellophane.
  • Serve and enjoy!

2 cups butter
2 cups white sugar
¼ teaspoon salt
2 cups semisweet chocolate chips
1 cup finely chopped almonds

Steps:

  • In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
  • While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
  • As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
  • Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

My friend Laura used to make these for dessert after dinner parties. I lost her recipe so have taken what I remembered of it and added different ingredients to make these a bit more adult. You don't have to use the liqueur if you don't want to, if you do you can also use Kahlua or Tia Maria if you prefer. This bit has been added as a result of Andria's review - if you use any other biscuits apart from toffee pops (eg Twix) make sure that there is a lot more biscuit than toffee - otherwise the mixture may not harden. I have used Twix in the UK but put them in the freezer for a couple of hours before making. Also, these are not hard truffles anyway - they are quite soft but hold their shape well so long as they are refrigerated until just prior to serving.

1 (250 g) packet ToffeePop cookies, which have been chilled in the fridge (cookies)
250 g cream cheese (full fat seems to works best)
1/4 cup icing sugar
3 tablespoons Baileys Irish Cream (optional)
1/2 cup desiccated coconut

Steps:

  • Process the biscuits in a food processor until they resemble small chunky bits of biscuit. You will have a mixture of fine crumbs and chunky bits of biscuit. If you don't have a food processor you can put these in a bag and bash with a rolling pin -very therapeutic after a hard day at work!
  • Beat the cream cheese, icing sugar and Baileys (if using) until well combined and creamy.
  • Add the ground biscuits and combine until well mixed.
  • Add coconut a little at a time until the mixture is relatively stiff. It should still feel a bit gooey as it will harden in the fridge.
  • Cover the bowl and put in the fridge until this is firm, which should take about 2-4 hours.
  • Put the remaining coconut in a bowl. Using a teaspoon, take small amounts of the biscuit mixture from the bowl and roll into balls, then roll in the coconut.
  • Keep in a container in the fridge until using.

Steps:

  • In a medium mixing bowl, beat cream cheese with an electric hand mixer on medium speed for 2-3 minutes. Add in brown sugar, cinnamon and vanilla and continue beating for an additional 3 minutes. With a rubber spatula, fold in the toffee bits until fully incorporated.
  • Cover and refrigerate for at least 3 hours. Serve with apple slices.
