You'll be licking your lips after one bite of this crunchy combination of apple, toffee bits and pecans topping a cool scoop of ice cream. Ray Butler of Greenville, Texas shared the recipe.

1 medium tart apple, peeled and cubed
1 tablespoon butter
1/8 teaspoon ground cinnamon
TOPPING:
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 tablespoon butter, softened
2 tablespoons finely chopped pecans
1 tablespoon English toffee bits or almond brickle chips
Dash ground cinnamon
Vanilla ice cream

Steps:

  • In a microwave-safe bowl, combine the apple, butter and cinnamon; cover and microwave on high for 2 minutes. Stir; cover and set aside. , In another microwave-safe bowl, combine flour and brown sugar. Stir in butter. Add the pecans, toffee bits and cinnamon. Microwave, uncovered on high for 1-1/2 to 2 minutes, stirring twice. Spoon apple mixture over ice cream; sprinkle with topping.

Crunchy, sticky, and easy-to-make toffee apples are just right for eating on Halloween night or any other fall celebration.

Number Of Ingredients 7

2 1/3 cups golden caster sugar (or very fine granulated sugar)
1/2 cup warm water
2 tablespoons liquid glucose
1 teaspoon white vinegar
8 apples (small, red)
Boiling water
1/2 teaspoon red food coloring

Steps:

  • Gather the ingredients.
  • Place the sugar, warm water, glucose, and vinegar in a large saucepan. Gently heat, while stirring, to dissolve the sugar, but make sure not to bring to a boil at this stage.
  • Once all the sugar has dissolved, raise the heat and bring the toffee to a rolling boil. Using a candy thermometer , boil to 270 F/140 C. This can take 10 to 20 minutes. If you do not have a candy thermometer, take a cup of cold water and once the toffee has started to thicken, drop a little of the toffee into the cold water. The toffee should solidify as it hits the water, and when you remove it from the water, the toffee threads should still be slightly flexible, not brittle. If the toffee is soft, continue to cook.
  • While the toffee is boiling, place the apples in a large bowl and cover with boiling water. Leave for a few minutes, then remove from the water and rub the apples with a tea towel and dry thoroughly. (The hot water and the rubbing will remove any waxy surface from the apple.) Once dried, remove the apple stems and push a chopstick or lollipop stick into the hole.
  • Line a baking sheet with parchment paper .
  • Once the toffee is ready, remove from the heat and leave to stand for 5 minutes to let the bubbles subside. (It is important to wait until all the bubbling calms down to create a smooth surface on the apples.) Once the bubbles have stopped, add the food coloring and stir gently.
  • Working quickly, tilt the pan slightly and dip the apples into the toffee; twirl around to completely coat the apple. Lift the apple from the pan and allow any excess toffee to drain away. Stand the toffee apple onto the lined baking sheet and leave to set around 20 minutes, or longer if possible.
  • If the toffee starts to thicken and harden as you are coating the apples, place the pot back on the heat and warm through, but do not boil. If you are not eating the toffee apples right away, wrap in cellophane.
  • Serve and enjoy!

3 cups old-fashioned oats
2 cups all-purpose flour
1-1/2 cups packed brown sugar
1 teaspoon ground cinnamon
1 cup cold butter, cubed
8 cups thinly sliced peeled tart apples
1 package (14 ounces) caramels, halved
1 cup apple cider, divided

Steps:

  • Preheat oven to 350°. In a large bowl, mix oats, flour, brown sugar and cinnamon; cut in butter until crumbly. Press half the mixture into a greased 13x9-in. baking dish. Layer half of each of the following: apples, caramels and remaining oat mixture. Repeat layers. Drizzle 1/2 cup cider over top., Bake, uncovered, 30 minutes. Drizzle with remaining cider; bake until apples are tender, 15-20 minutes longer.

6 medium-size crisp tart apples peeled if desired (cut into 1/2-inch-thick slices (about 6 cups))
1 teaspoon ground cinnamon
1/2 cup quick-cooking oats
1/3 cup packed brown sugar
1/4 cup all-purpose flour
1/2 cup cold butter (cut into small pieces)
1/2 cup chopped pecans
1/2 cup toffee bits (I used Heath)

Steps:

  • Spray 3 - 4 quart slow cooker with cooking spray.
  • In large bowl, mix apples and cinnamon to coat.
  • Place the apples in the slow cooker and turn the heat to LOW.
  • In a medium bowl, mix oats, brown sugar, flour and butter with pastry blender or fork until crumbly.
  • Stir in pecans and toffee bits. Sprinkle crumb mixture evenly over apples.
  • Cover; cook on LOW for 4 to 6 hours.
  • Serve apple crisp warm with ice cream if desired,
  • If you'd like the apple slices to retain their shape and have a slightly firm texture, use the low end of the cook time range.

  • Pre-heat oven to 350 degrees. Grease the bottoms of two 8-inch pans. Line the bottoms with parchment, then grease and flour the parchment and sides of the pans. Set aside.

  • Line a cookie sheet or tray with wax paper or parchment paper. Wash and dry apples and twist off the stems. Insert a lollipop stick, popsicle stick, or thick wooden skewer into the top of each apple.
  • In a medium sized, heavy based, sauce pan combine the sugar water and vinegar. Bring the mixture to a boil. To prevent burning on the sides of the pan, use a wet pastry brush to wipe the sugar granules that collect above the boiling mixture. Do not stir the mixture. After mixture is boiling well, simmer for 20 minutes or until it reaches the hard crack stage (about 150 C or 295-310 F). Keep a close eye on it so it doesn't burn. It is best to check often with a candy thermometer.
  • Stir in the food coloring until the color is uniform. Remove the pan from the heat. The mixture will be bubbly. It is important to wait until it stops bubbling to dip the apples, or they will be covered with little bubbles (which may be good if you want your apples to look like they are covered in warts for Halloween).
  • To dip the apples, carefully tip the pan to one side and insert one side of the apple into the mixture and rotate it until it is covered. Allow it to drain a little and place the apple on the wax paper to cool and harden.
