HOMEMADE KETO BISCUITS



Homemade Keto Biscuits image

Buttery, rich, and low-carb biscuits using almond flour and cheese.

Yield 6 biscuits

Number Of Ingredients 7

1 1/2 cups almond flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter, cold and cut into cubes
2 large eggs
1 cup cheddar cheese, shredded

Steps:

  • Preheat the oven to 350 degrees. Prepare a baking sheet with parchment paper.
  • In a medium-sized bowl, mix almond flour, baking powder, salt, and pepper. Cut in butter with a pastry cutter or masher until the mixture is like sand.
  • Stir in eggs and fold in cheese. Combine until it forms a sticky dough.
  • Use an ice cream scoop to drop 6 biscuits onto a cookie sheet to bake. Bake for 15-20 minutes until cooked and slightly browned. Set aside to cool.

Of course you could roll them and cut them if you wanted, but I've always liked the crunchy bits you get from the texture of the drop biscuits.

1 cup flour
1 teaspoon baking powder
1 tablespoon butter, melted
1/2 cup milk

Steps:

  • Pre-heat toaster oven to 425°F.
  • Mix together flour and baking powder.
  • Work in melted butter.
  • Add milk and mix into a soft dough.
  • Drop 6 biscuits onto a small baking sheet that will fit into your toaster oven.
  • Bake 8-12 minutes or until done.
  • Pay careful attention to the doneness because toaster ovens aren't as reliable in their temperature control as full-size ovens.

Australian Toaster Biscuits are very similar to English crumpets. They are cooked inside metal rings on the top of a griddle. If you don't have crumpet rings you can make them out of aluminum foil. There are directions below.

1 ½ teaspoons active dry yeast
1 teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
3 cups unbleached flour
2 teaspoons salt
¾ cup milk (110 degrees F/45 degrees C)
2 tablespoons vegetable oil
¼ cup cornmeal

Steps:

  • In a small bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes. To make crumpet rings, cut aluminum foil into 7x12 inch pieces. Fold in half lengthwise and then in thirds, making 6 layers. Form into a 3 1/2 inch diameter circle and tape shut on the outside.
  • In a large bowl, mix together flour and salt. Stir in the milk, oil and yeast mixture. Beat well until smooth. Cover with plastic wrap and let rise in a warm place until doubled, about 60 minutes. Lightly grease or butter the inside of the crumpet rings and dip the rings in cornmeal.
  • Heat a griddle or frying pan over medium low heat. Sprinkle cornmeal on the griddle and place the rings on the griddle. Deflate the batter by stirring. Pour 1/4 cup of batter into each ring. Cook slowly for about 10 minutes or until pale brown. Carefully remove the rings and turn the biscuits over. Bake on second side about 8 minutes or until light brown. Transfer to a rack to cool.

Pour half & half into the well and stir ingredients together until a light dough forms (try not to over mix, the dough comes together very quickly and over mixing will kill the dough's light airiness and affect the biscuits final texture).
  • Divide dough into two even pieces. Place one piece on a lightly floured cutting board, sprinkle with a tiny bit of flour. Gently roll dough into a ball and lightly pat into a small 2.5-inch circle. Place circle onto the ungreased cookie sheet. Repeat with remaining dough piece. Keep circles separated if you want their entire exteriors crispy or place them touching side by side for a softer edge.
