WARM TOASTED MARSHMALLOW S'MORES BARS
Grand Prize-Winning Recipe 2006! Mmm! Irresistible warm, gooey marshmallows, milk chocolate and graham crackers are baked into a delicious bar cookie.

Steps:
- Heat oven to 375°F. In large bowl, stir together cookie mix and crumbs. Stir in melted butter until soft dough forms. Press into ungreased 13x9-inch pan.
- Bake 18 to 20 minutes or until set. Immediately sprinkle chocolate chips over crust. Let stand 3 to 5 minutes or until chocolate begins to melt. Spread chocolate evenly over crust.
- Set oven control to broil. Sprinkle marshmallows over melted chocolate. Broil with top 5 to 6 inches from heat 20 to 30 seconds or until marshmallows are toasted. (Watch closely; marshmallows will brown quickly.) Cool 10 minutes. For bars, cut into 6 rows by 4 rows. Serve warm. Store any remaining bars tightly covered.

TOASTED-COCONUT MARSHMALLOW SQUARES

- Preheat oven to 350°F with rack in middle.
- Toast coconut in a shallow baking pan in oven, stirring occasionally, until golden, 7 to 10 minutes.
- Oil 9-inch baking pan, then sprinkle bottom with 1/2 cup toasted coconut.
- Sprinkle gelatin over 1/2 cup water in bowl of mixer and let soften while making syrup.
- Heat sugar, corn syrup, salt, and remaining 1/2 cup water in a small heavy saucepan over low heat, stirring until sugar has dissolved. Bring to a boil over medium heat, without stirring, washing any sugar crystals down side of pan with a pastry brush dipped in cold water. Put thermometer into syrup and continue boiling, without stirring, until it registers 240°F (soft-ball stage). Remove from heat and let stand until bubbles dissipate.
- With mixer at low speed, pour hot syrup into gelatin in a thin stream down side of bowl. Increase speed to high and beat until very thick, about 15 minutes. Add vanilla and coconut extracts and beat 1 minute more.
- Spoon marshmallow over toasted coconut in baking pan and press evenly with dampened fingertips to smooth top (it will be very sticky), then evenly sprinkle top with 1/2 cup toasted coconut.
- Let stand, uncovered, at room temperature until firm, about 2 hours.
- Run a sharp knife around edge of marshmallow and invert onto a cutting board. Cut into 3/4-inch-wide strips, then cut each strip into 3/4-inch squares.
- Put remaining toasted coconut in a small bowl and dredge marshmallows in it to coat completely.
TOASTED MARSHMALLOW COFFEE BARS

- 1. Preheat oven to 350 degrees. Line a 9 x 9 baking pan with parchment paper -- ends hanging over the sides of the pan.
- 2. In a food processor, process graham crackers until fine crumbs. To this mixture, add 2 tbsp. brown sugar and 1/3 cup butter and process until well combined. Press mixture into the bottom of the pan.
- 3. In a mixing bowl, beat the espresso powder, 1/2 cup butter, 1 cup brown sugar until combined. Add flour, salt, vanilla and egg and mix until creamy. Stir in 1/2 cup marshmallows.
- 4. Spread the batter evenly over the crust and bake for 25 minutes or until a toothpick comes out clean. Place a single layer of marshmallows on top and set the oven to broil. Return the pan to the oven and broil until the marshmallows turn golden brown. Watch carefully as this happens quickly.
- 5. Allow the bars to cool for approximately 1 hour before cutting them.
TOASTED MARSHMALLOW SYRUP
This toasty simple syrup is an instant classic, and excellent addition to any latte, milkshake or martini.

- Thread the marshmallows onto 2 disposable chopsticks and cook over the open flame of a stove until toasted all over, about 2 minutes. (Alternatively, line the baking sheet of a toaster oven with foil coated in nonstick spray, add the marshmallows and broil, flipping once, until golden brown, about 2 minutes per side.)
- Combine the sugar and 1 cup water in a medium saucepan. Bring to a boil and simmer over medium heat until the sugar is dissolved, about 3 minutes.
- Reduce the heat to low and add the toasted marshmallows to the saucepan. Cook, stirring continuously and turning down the heat if the mixture starts to bubble up around the edges of the saucepan, until the marshmallows are completely dissolved into an opaque mixture, 5 to 7 minutes.
- Strain the mixture through a fine-mesh strainer and whisk in the vanilla extract and salt. Cool completely Store in the refrigerator in an airtight container for up to 1 month.

- Grease a 18 x 28 cm oblong tin. Place 200g of the marshmallows,with the butter and vanilla extract in a saucepan.
- Place over a medium heat and cook until the butter and marshmallows have melted. Roughly chop the remaining marshmallows.
- Mix the toasted rice with the marshmallow mixture, then stir in the extra marshmallows. Spoon the mixture into the tray and press down with the back of a spoon.
- Allow to cool in the tray and then cut into squares.

- Grease a 9 inch square pan and one side of a square piece of foil, to be used to cover the crust before baking. You may use an 8 inch square pan too, but may need to bake the filling a few minutes longer.
