TOASTED GARLIC BREAD
Quick and scrumptious garlic bread that will complement any Italian meal. Melted mozzarella is optional, but delicious!

Steps:
- Preheat the broiler.
- Cut the bread into slices 1 to 2 inches thick.
- In a small bowl, mix butter, olive oil, garlic, oregano, salt and pepper. Spread the mixture evenly on the bread slices.
- On a medium baking sheet, arrange the slices evenly and broil 5 minutes, or until slightly brown. Check frequently so they do not burn.
- Remove from broiler. Top with cheese and return to broiler 2 to 3 minutes, until cheese is slightly brown and melted. Serve at once.

TOASTED GARLIC-MOZZARELLA BREAD SLICES
If you are an extreme garlic-lover then increase the garlic amount, don't omit the olive oil it really makes a difference to the taste --- you will love this!

Steps:
- Slice the bread into about 1 to 1-1/2-inch thick slices using a serrated knife.
- In a small bowl mix together 1/2 cup plus 2 tablespoons soft butter (10 tablespoons) with olive oil, Parmesan cheese, garlic, oregano, and salt until well combined.
- Add in black pepper to taste.
- Spread the mixture over the bread slices.
- Place the slices onto a baking sheet.
- Broil for about 4 minutes or until slightly brown (watch closely these will brown quickly!).
- Remove then sprinkle the mozzarella cheese onto each slice, return to broiler for about 2 minutes or until the cheese is lightly browned.
- Serve immediately.

Prepare the bread slices ahead and refrigerate until ready to broil. Also if you like lots of butter then increase the butter to 3/4 cup if desired.

- Cut the breat into about 1-1/2 inch slices.
- In a small bowl combine soft butter with olive oil, garlic, oregano, salt and pepper until well combined.

ROASTED GARLIC BREAD

- Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- To a small saucepan over the indirect-heat side of the grill, add the garlic cloves and olive oil. Close the lid of the grill and gently simmer until the garlic cloves are roasted and soft, 12 to 15 minutes. Remove from the heat and, using a fork, mash the cloves to form a coarse paste. Add the butter, garlic powder, salt and pepper. Mix well to combine.
- Lay the bread out on a sheet tray, cut-side up, and spoon all but 2 tablespoons of the garlic mixture over the bread. Add 1/2 cup grated Parmesan to each half. Place the sheet tray on the indirect-heat side of the grill, then close the lid and bake until crisp and the cheese has set, 3 to 5 minutes.
- Remove from the heat, then put the 2 halves of the bread together on a piece of foil. Spoon or brush the remaining garlic butter over the top. Wrap in the foil, then place on the indirect-heat side of the grill. Close the grill and bake until golden brown and the garlic butter has soaked into the bread, another 3 to 5 minutes. To serve, open the foil, cut into smaller pieces and place on a board or platter.
CHEESY BAKED GARLIC BREAD SLICES
Just wait until you taste this, throw on some green onions on top of the mozzarella cheese also if desired :)

- Set oven to 350°F.
- Prepare a 15 x 10-inch jelly-roll pan or baking sheet.
- Slice the bread into about 1/2-inch slices.
- In the microwave or stove top melt the butter with garlic powder.
- Mix in the dried parsley.
- Place the bread slices on the baking sheet.
- Using a pastry brush generously coat the tops of each slice with the melted butter/garlic mixture.
- Sprinkle tops of each slice lightly with Parmesan cheese.
- Bake for about 10 minutes or until lightly toasted.
- Remove from heat then sprinkle shredded mozzarella or cheddar cheese onto each slice.
- Return to oven and bake for another 3-5 minutes or until cheese has melted and the bread is lightly toasted.
