MY MOST COVETED SECRET: HERB-GARLIC BUTTER HAMBURGERS ON A GRILL
This recipe is, quite honestly, my most coveted of all! Once you taste these wonderful grilled burgers, all other burgers will take a back seat to these for the rest of your life! I made these for my son about a year ago, and he insists on nothing else from the grill. Just wait and see...

Steps:
- Place all the herbs, garlic, pepper, and butter in a small mixing bowl and beat with a wooden spoon until slightly fluffy.
- (you can do the mixing with a or food processor) Place a 12" square piece of plastic wrap or parchment paper on your work surface and mound the flavored butter in the center.
- Roll herb butter into cylinder shape within plastic, twisting the ends to compress the butter.
- Chill the butter in the refrigerator or freeze until firm.
- Butter will keep for up to 5 days in the refrigerator or up to 3 months in the freezer.
- Burger Preparation: Make hamburger patties as usual, but for each one place your thumb in the middle and press an indentation almost through (but not quite) to the other side of the meat.
- Unwrap formed butter and cut crosswise into 1/4-1/2" discs. (You will be using approximately 4 tablespoons Herb-Garlic Butter per 1 1/2 pound of ground meat).
- Form hamburger patty fully around one butter disc, pressing gently to seal the disc into the dead center of the meat.
- (not too much pressing! It will make your burgers dense and tough) Place burgers on hot grill (preheated to high if using a gas grill).
- Grill burgers until cooked to doneness, (about 5 to 7 minutes per side for medium-done).
- Place burgers on a serving plate, add cheese, if desired, but do not serve for about 5 minutes, to allow flavors to fully meld.
- Brush buns with melted butter and toast on the grill for a few seconds.
- Serve with any toppings of your choice.
BEST ITALIAN SAUSAGE PIZZA BURGERS
Steps:
- Preheat grill (or grill pan) to medium/high.
- In a large bowl, mix together the sausage, pepper, garlic powder, oregano, and basil.
- Divide the meat mixture into 8 equal portions and shape each portion into burger patties.
- Grill the patties on a preheated grill (or grill pan) for approximately 7-8 minutes per side (cover for half of the cooking time).
- Meanwhile, in a grill basket (or a large stovetop skillet), season and cook the green peppers and onions with the salt and olive oil until they are slightly wilted and no longer crunchy. Stirring occasionally.
- Place the cheese on the burgers and cook just until the cheese has melted. Remove from the grill and keep warm.
- Spread the softened butter on both sides of the buns and season with garlic powder to taste.
- Place the buns (butter side down) on the grill, or skillet, and cook until they're browned and lightly crispy.
- Place a burger on a bun, top with prepared warmed marinara sauce, and the sauteed green pepper and onions.
- Serve hot.

- Pull out whatever day old bread you have. Can be sandwich bread, hamburger or hot dog buns, biscuits, etc. Put butter, garlic and basil in a small bowl. Microwave until melted (20-30 seconds). If you like your garlic more cooked to lessen the bite, add 10-30 seconds. Spread garlic butter onto bread. Put in toaster oven on 'toast' directly on the rack. If the top isn't quite brown enough, broil for another minute or so. If you don't have a toaster oven, use your big oven, preheat the oven to 350°F. Also, line a baking sheet with aluminum foil to catch drips. Prepare as directed, but adjust cooking time accordingly (about 15 min). If the rack bars are too widely spaced to hold the bread, put the bread on your broiling pan or a smaller rack from a roasting pan.

Make a tasty double cheeseburger flavored with garlic seasoning and garlic butter sauce.

Steps:
- Divide ground beef into 8 small balls.
- Combine salt, black pepper, onion salt, and garlic salt together in a small bowl.
- Melt the butter in a skillet over medium heat and add the minced garlic. Cook until the garlic butter becomes fragrant.
- Brush the garlic butter onto the cut side of the buns and place the buns on the skillet to toast. Toast the buns long enough so the bread begins to brown.
- Place the buns cut side down in the skillet and toast until lightly browned.
- Brush a small amount of the butter on top of the ground beef balls and then sprinkle some garlic salt on top.
- Heat a skillet to medium-high heat. (Cast iron recommended)
- Place the ground beef balls in the skillet and use a spatula to press the balls into patties.
- Season patties with the seasoning mixture.
- When the burgers have browned on one side, flip them over and add a slice of cheese to each patty. Cook to desired doneness.
- Place two patties onto each bun.
- Add any desired toppings. Enjoy!

Steps:
- Place 1/2 cup of the water, sugar and yeast in a large bowl of a stand mixer with the paddle attachment.
- Let stand for 2-3 min or until yeast is dissolved.
- Add remaining 1/2 cup water, 1 Tbs of the oil and 1 cup of the flour.
- Beat at low speed until combined.
- Add the salt.
- With the mixer running, slowly add enough of the remaining flour to form a soft dough.
- Beat at medium low speed for 5 min or until smooth and elastic.
- Place in a greased medium sized bowl, turn over to grease both sides.
- Cover and let rise in a warm place for 30 min or until doubled in size.
- Gently punch down the dough to deflate.
- Place on a lightly floured surface.
- Divide the dough into 6 pieces.
- Form each piece inot a ball and place on a parchment lined baking sheet.
- Cover with a towel and let stand for 3 minute.
- Flatten into 3 3/4-inch rounds.
- Cover again with a towel and let rest for 15 minute.
- Place another lightweight baking sheet or pan on top of the towel covering the buns. This will act as a weight, making the buns flatter and more even.
- Let the buns rise again for 25 min or until doubled in size. The dough should hold slight indentation when gently pressed.
- Meanwhile, heat the oven to 375ºF.
- With the side of a knife, mash the garlic with a dash of salt until a fine paste forms, or you can use a mini food processor.
- Place in a small cup and stir in the remaining 1 Tbs of olive oil.
- Brush the tops of the buns with the garlic mixture.
- Bake for 20 min or until golden brown and bottoms sound hollow when gently tapped.
- Cool completely on a wire rack.

- I think the taste and the texture of buns are best when lightly toasted. To toast a bun on a grill, grill pan, or griddle, split the bun open, place it cut side down on the grill, and grill until light golden brown, about 10 seconds. Alternatively, you can place the split bun halves cut side up on a baking sheet and cook them under a preheated broiler until light golden brown, about 30 seconds. Keep a close eye on them and don't let them get too brown or else that texture will take on a life of its own and defeat the purpose of starting with a soft bun.
