Broccoli Salad with Buttermilk Dressing image

Give this broccoli salad a little extra crunch with a sprinkle of sunflower seeds.

Kosher salt
1 bunch broccoli, tough stems trimmed (about 1 1/2 pounds)
1/2 cup buttermilk
3 tablespoons mayonnaise
1 tablespoon chopped fresh parsley
1/2 teaspoon lemon zest
2 tablespoons salted sunflower seeds

Steps:

  • Bring a large pot of salted water to boil. Coarsely chop the broccoli florets and tender stems. Add to the water and cook until crisp tender, about 2 minutes. Drain well, pressing on the broccoli to release any excess water.
  • Whisk the buttermilk, mayonnaise, parsley and lemon zest together in a medium bowl until smooth; season with salt and pepper. Add the broccoli and toss well. Top with the sunflower seeds.

WARM BROCCOLI SLAW WITH BACON



Warm Broccoli Slaw with Bacon image

This coleslaw is best served warm or at room temperature. The bacon shallot vinaigrette is made on the stove top and then poured over the raw broccoli slaw, which helps it to wilt slightly and soften in texture.

1 12-ounce bag broccoli slaw mix
2 cups shredded savoy cabbage (about 1/4 small head)
2 cups shredded kale (about 1/2 small bunch)
1/2 cup chopped fresh parsley
1/2 cup golden raisins
6 slices thick-cut bacon, cut into 1/2-inch strips
2 tablespoons extra-virgin olive oil
1 large shallot, thinly sliced
1/2 cup sherry vinegar
3 tablespoons Dijon mustard
2 tablespoons honey
Kosher salt

Steps:

  • Toss together the broccoli slaw, cabbage, kale, parsley and raisins in a large bowl.
  • Put the bacon in a large nonstick skillet; set over medium-high heat. Cook, stirring frequently, until well browned and crisp, 6 to 8 minutes. Remove to a paper towel-lined plate. Pour off all but 2 tablespoons bacon fat from the skillet and add the olive oil. Add the shallot and cook over medium heat until softened, 2 to 4 minutes. Add the vinegar, mustard and honey and whisk to combine. Bring to a simmer, then remove from the heat.
  • Immediately pour the dressing over the slaw mixture and toss to coat. Add the bacon and toss; season with salt. Cover and let sit at room temperature for 1 hour to soften.

CHARRED BROCCOLI SALAD

2 heads broccoli
Olive oil
Kosher salt and freshly cracked black pepper
1 cup buttermilk
1/2 cup sour cream
1/4 cup finely sliced scallions
1/4 cup apple cider vinegar
2 tablespoons finely chopped dill
2 tablespoons light brown sugar
1 tablespoon spicy brown mustard
Freshly grated nutmeg
1/2 cup dried cherries
1/2 cup roasted salted peanuts, whole or roughly chopped

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Trim the bottom inch off of the broccoli stems and discard or save in your freezer for a soup. Quarter the broccoli lengthwise into large pieces and place in a bowl. Drizzle with olive oil and season with salt and pepper. Toss to coat. Place the broccoli on the direct heat side of the grill and char on all sides, about 1 to 2 minutes per side. Move to the indirect side of the grill, close the grill lid and roast until cooked through, 2 to 3 minutes.
  • In a mixing bowl, whisk together the buttermilk, sour cream, scallions, vinegar, dill, brown sugar and mustard. Season to taste with the fresh nutmeg, salt and pepper. Remove the broccoli to a serving platter and drizzle with as much of the buttermilk dressing as you'd like. Top with the dried cherries and peanuts. Serve!

1 tablespoon olive oil
4 cups fresh broccoli florets, cut into small pieces
1 cup uncooked whole wheat couscous
2 garlic cloves, minced
1-1/4 cups reduced-sodium chicken broth
1 teaspoon grated lemon zest
1 teaspoon lemon juice
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon coarsely ground pepper
1 tablespoon slivered almonds, toasted

Steps:

  • In a large cast-iron or other heavy skillet, heat oil over medium-high heat. Add broccoli; cook and stir until crisp-tender., Add couscous and garlic; cook and stir 1-2 minutes longer. Stir in broth, lemon zest, lemon juice and seasonings; bring to a boil. Remove from heat; let stand, covered, until broth is absorbed, 5-10 minutes. Fluff with a fork. Sprinkle with almonds.

1 head radicchio, thinly sliced
1/4 red onion, minced
3 tablespoons thinly sliced fresh chives
1/3 cup well shaken buttermilk
1/3 cup low-fat sour cream
1 tablespoon honey
1 tablespoon Dijon mustard
1 tablespoon white wine vinegar
Kosher salt and freshly cracked black pepper

Steps:

  • Toss the cabbage, radicchio, red onion, and chives in a large bowl.
  • In a separate bowl, mix the buttermilk, sour cream, honey, Dijon mustard, vinegar, salt, and pepper together. Add the dressing to the cabbage mixture and toss to coat. Let marinate in the refrigerator for an hour before serving.
