Categories     dessert

Time 2h10m

Yield 18 servings

Number Of Ingredients 16

2 cups brown sugar
1/2 cup (1 stick) salted butter, softened, plus more for greasing the pans
1/2 cup coconut oil
5 large eggs, separated, at room temperature
1 teaspoon vanilla extract
2 1/4 cups cake flour, plus more for flouring the pans
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine salt
1 cup plain yogurt
2 cups flaked coconut, chopped
1 pound cream cheese, softened
1/2 cup (1 stick) salted butter, softened
1 teaspoon coconut extract
2 pounds powdered sugar
2 cups flaked coconut, toasted

Steps:

  • For the cake: Preheat the oven to 330 degrees F.
  • In a large bowl with an electric mixer, beat the brown sugar, butter and oil until well blended. Add the egg yolks 1 at a time and beat well after each addition. Add the vanilla extract.
  • In a separate bowl, combine the flour, baking powder, baking soda and salt. Add one-quarter of the dry ingredients to the sugar-butter mixture followed by one-quarter of the yogurt, beating well after each addition. Then add half of the remaining dry ingredients followed by the remaining yogurt, beating well after each addition. Beat in the remaining dry ingredients and stir in the coconut.
  • In a separate bowl with an electric mixer and the whisk attachment, beat the egg whites until stiff peaks form. Fold half of the egg whites into the batter, then fold in the remaining whites.
  • Grease and flour three 9-inch round cake pans. Divide the batter among the pans. Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Let cool for 10 minutes in the pans, then remove from the pans onto a rack to cool completely.
  • For the cream cheese frosting: In a bowl with an electric mixer, beat the cream cheese and butter until well incorporated. Add the extract and mix until incorporated. Add the powdered sugar 1 cup at a time and beat until smooth.
  • Place one of the cake layers on a serving plate. Spread about a third of the frosting onto the cake layer and generously sprinkle some toasted coconut on top. Repeat with the second layer. Top with the final layer and spread the remaining frosting over the top and sides of the cake. Sprinkle with remaining toasted coconut. Keep refrigerated until serving.

HOW TO TOAST COCONUT

How to Toast Coconut image

I am a huge coconut fan and I love it right out of the bag, but toasted coconut is my absolute favorite.

Categories     main dish

Time 12m

Yield 4 servings

Number Of Ingredients 1

1 c. Shredded Or Flaked Coconut

Steps:

  • Preheat oven to 325ºF. Place shredded or flaked coconut evenly on a large baking sheet that has been lined with a Silpat baking mat or parchment paper. Put the baking sheet on the middle rack and bake for 3 minutes. After 3 minutes, open the oven and gently stir the coconut with a spatula. Once it starts to toast, it toasts quickly!

TOASTED COCONUT CLUSTERS

Toasted Coconut Clusters image

These toasted coconut clusters are a copycat from a Costco favorite. Perfect for snacking. Great on top of yogurt and ice cream.

Provided by Holly

Categories     Snack

Time 15m

Number Of Ingredients 6

16 oz coconut chips
3/4 cup pumpkin seeds
1/2 cup sunflower seeds
1/3 cup chia seeds
1/4 cup coconut sugar
1/2 cup brown rice syrup (warm)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, pour in coconut chips, pumpkin seeds, sunflower seeds, chia seeds, and coconut sugar. Combine completely.
  • Add in warmed brown rice syrup and toss to coat all ingredients.
  • Pour fully combined mixture on a parchment-lined baking sheet. Press down in a layer about 1/2" thick. You may find that 2 smaller baking sheets is better than trying to get it all to fit on one sheet.
  • Once mixture is pressed down firmly, bake in preheated oven for 10-12 minutes until coconut is browned and toasty. Watch carefully, as the coconut does have a tendency to cool quickly and burn while you aren't watching. Pull out of the oven and let cool completely before breaking pieces apart. Store in air-tight container for 1-2 weeks.
