These little rye bread squares are easy to make and filled with the rich flavor of Parmesan cheese. They're perfect for parties or an afternoon snack.

⅓ cup grated Parmesan cheese
⅓ cup mayonnaise
⅓ onion, grated, juice reserved
1 (1 pound) loaf cocktail rye bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the Parmesan cheese, mayonnaise, onion and reserved onion juice in a blender or food processor. Blend thoroughly. Spread the mixture evenly on slices of cocktail rye bread.
  • Place cocktail rye bread slices on a large baking sheet. Bake in the preheated oven 10 minutes, or until lightly toasted.

These appetizers are so good! The best part is you can make them ahead and freeze them and bake them frozen!

1 cup butter or 1 cup margarine, softened
2 (5 ounce) jars Kraft Old English cheese spread, softened
1 egg
1 (4 ounce) can chopped green chilies
1/4 cup salsa
2 cups shredded cheddar cheese
2 (1 1/2 lb) thinly sliced loaves white bread

Steps:

  • In mixing bowl, cream butter, cheese spread and egg until smooth.
  • Stir in chilies, salsa and cheddar cheese.
  • Spread about 1 tbsp of cheese mixture on each slice of 1 loaf of bread.
  • Top with remaining bread, spread with more cheese mixture.
  • Cut each sandwich into 4 squares, place on a greased baking sheet.
  • At this point, you can either bake them fresh or freeze and bake later.
  • Bake at 350°F for 10-15 minutes.
  • To freeze, place in a single layer on a baking sheet.
  • Freeze for 1 hour.
  • Remove from the baking sheet and store in an airtight container in freezer.
  • To bake frozen, place squares on a greased baking sheet.
  • Bake at 350°F for 15-20 minutes or until browned and bubbly.

SUNNY'S QUICK CHEESE PUFF SQUARES



Sunny's Quick Cheese Puff Squares image

1 sheet frozen puff pastry, thawed
All-purpose flour, for rolling
1/4 cup Dijon mustard
1 cup grated Parmigiano-Reggiano
10 to 14 sprigs fresh thyme, leaves finely chopped
Freshly cracked coarse black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Roll the pastry out flat on a lightly floured surface with a floured rolling pin. Brush off any excess flour. In a small bowl, combine the mustard with a splash of water to loosen. Brush the mustard over the entire top of the pastry.
  • In a small bowl, stir together the cheese, thyme and a few grinds of black pepper. Sprinkle the entire sheet of pastry with the cheese mixture. Gently roll the top of the pastry again to lightly embed the topping into the pastry. Cut into 2-inch squares and pinch one set of opposite corners together on each square or leave flat. Place on the prepared baking sheet.
  • Bake until the squares are puffed and golden brown, 10 to 14 minutes. Serve warm or at room temperature.

This is a wonderful baked appetizer blending the tastes of Cheddar cheese and jalapeno peppers. The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

4 eggs
1 pound shredded Cheddar cheese
1 teaspoon minced onion
2 jalapeno peppers, seeded and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the eggs into a food processor, and process until light and frothy. Add Cheddar cheese, onion, and jalapeno peppers, and process until smooth. Pour into an ungreased 8x8 inch baking pan.
  • Bake in the preheated oven until set, 25 to 30 minutes. Cool for 5 minutes; cut into squares to serve.

3 tablespoons butter or 3 tablespoons margarine
20 ounces frozen chopped broccoli
3 large eggs
1 cup milk
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
4 cups shredded cheddar cheese
2 tablespoons finely chopped onions
seasoning salt

Steps:

  • Grease a 9x13 baking pan with the butter.
  • Steam broccoli until partially cooked, about three minutes.
  • Cool and press dry.
  • Beat eggs and milk until frothy.
  • Thoroughly mix dry ingredients.
  • Stir into egg mixture.
  • Fold in broccoli, cheese and onion.
  • Spoon into baking dish, spreading evenly.
  • Sprinkle with seasoned salt.
  • Bake at 350 for 35 minutes.
  • Cool 5 minutes and cut into squares.

2 (5 ounce) jars Kraft Old English cheese spread (Kraft)
1/2 cup margarine
1/2 teaspoon Tabasco sauce
1/2 teaspoon onion powder
1/2 teaspoon beau monde spice
3/4 teaspoon dill weed
3/4 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1 loaf very thin sliced white bread (just thin-sliced sandwich bread will work)

Steps:

  • Cream together all ingredients except bread.
  • Cut crusts from 27 slices of bread.
  • Spread three slices with the cheese mixture.
  • Placing on large cookie sheet or jelly roll pan, stack the three slices; then spread tops and sides of stack with more cheese.
  • (Spread the sides kind of thin).
  • Repeat with remaining bread.
  • Place tray in freezer for 10-15 minutes.
  • Remove, and carefully cut each stack into 9 squares.
  • You can then freeze by placing squares in a large ziploc freezer bag, or, Bake at 350 for 20 minutes until golden brown.

One of the easiest, most enjoyed party recipe I've ever made. There are NEVER any left, even if I double or triple the recipe. "Oh, the power of cheese!" These can be made ahead and freeze well.

1 (4 ounce) can chopped green chilies, well-drained
1/2 teaspoon cayenne pepper or 1/2 teaspoon red pepper
1 lb sharp cheddar cheese, grated or shredded (4 cups)
6 eggs, slightly beaten or 1 1/2 cups egg substitute
2 tablespoons diced pickled jalapenos (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Spread green chilis (and jalapenos, if using) in bottom of pan.
  • Sprinkle with cayenne pepper.
  • Sprinkle cheese over green chili peppers.
  • Pour beaten eggs over all.
  • Bake for 30-40 minutes or until firm in the center.
  • Cool.
  • Cut into 1-inch squares and serve hot or at room temperature.
  • ***These freeze beautifully.
  • To serve, thaw, microwave on defrost until warm.
  • Cool.
  • Cut into squares and serve.

DELICIOUS CHEESE TOAST SQUARES

My mom used to make these, along with an 'olive puff', when I was little. I swear I can eat 10 of them. They are SO good! NOTE: If you've never seen Kraft Old English cheese, it's not in the refrigerated section. It's a jar of cheese and might be near the Velveeta type items.

1 loaf pepperidge farm very thin sandwich bread
2 stick unsalted butter, softened
2 tsp onion powder
2 tsp dill weed
2 tsp hot sauce (i prefer louisiana or crystal)
4 jar(s) kraft old english sharp cheese

Steps:

  • 1. Freeze bread for about half an hour, then remove (Freezing helps prevent tearing while spreading). Preheat oven to 350. Cut crusts off bread. Blend butter, onion powder, dill weed, hot sauce, and cheese together until well blended, lighty and almost fluffy. If you find the bread uncooperative, put it back in the freezer for a couple of moments (or you could just keep it in the freezer as you make the individually)
  • 2. Spread cheese on one slice of bread, top with another slice of bread, spread cheese on that slice and top with another slice of bread. Cut into quarters. Spread cheese all around the sides and top (not on the bottom), and place on baking sheet (spray with Pam first). Bake 15-20 minutes. NOTE: It has been suggested that freezing them after they've been "iced" is a good idea - it's not on my recipe card, but it may have just been inadvertantly left off. If you find that your cheese is 'runnier' and looks like it may just melt off rather than into the bread, then throw them in the freezer for an hour or two prior to cooking.
