TOASTED BUTTER PECAN CAKE
A delicious butter pecan cake made from scratch. This is a cake that can be served anytime.

Steps:
- Grease and flour the bottoms of three 9 inch layer pans. Preheat oven to 350 degrees F (175 degrees C).
- Melt 1/4 cup butter or margarine in a heavy skillet over medium heat. Add pecans, and brown for 10 to 15 minutes, stirring frequently.
- Cream 1 cup butter or margarine in large mixing bowl. Gradually add 2 cups white sugar, and cream until light and fluffy with mixer on high speed. Blend in eggs one at a time, beating well on medium speed after each addition. Sift together flour, baking powder, and 1/2 teaspoon salt. At low speed add sifted ingredients alternately with milk and vanilla extract, beginning and ending with dry ingredients. Blend well after each addition. Stir in 1 1/3 cups of the toasted pecans. Pour batter into pans.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, until cake is golden brown and springs back when lightly touched in center.
- To Make Frosting: Cream 1/4 cup butter in mixing bowl. Add 1 teaspoon vanilla extract, 1/4 teaspoon salt, confectioners' sugar and cream. Beat until smooth and of spreading consistency. If necessary, thin with additional cream. Blend remaining 2/3 cup pecans into frosting. Fill and frost the cake.

This cake is absolutely delicious. I made this cake once right after I received the Feb/March 2008 Taste of Home Best Ever Desserts Book. Everyone just loved it. I don't make it often, it is too tempting....lol! A very moist cake you have to try.

- 1. In a small heavy skillet, melt 2 tablespoons butter. Add pecans; cook over medium heat until toasted, about 4 minutes. Set aside to cool.
- 2. In a large bowl, cream sugar and remaining butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Beat just until combined. Fold in 2 cups reserved pecans.

- Cupcakes: Preheat oven to 350 degrees. Line muffin tins and set aside. In a large skillet, melt ¼ cup of the butter. Add the chopped pecans and toss to coat. Cook over medium heat, stirring frequently, until nuts are toasted and fragrant, about 10-15 minutes. Do not overcook the pecans. Remove from heat and allow to cool. In a medium bowl, sift together flour, baking powder, and salt. Set aside. In a large mixing bowl, cream sugar and remaining cup of butter until light and fluffy. Add the eggs one at a time and mix thoroughly after each addition. Beat in vanilla. Add the dry mixture in thirds, alternating with the milk. Mix well after each addition. That is if you don't count the extra ¼ cup of butter used to toast the nuts. I wasn't completely impressed with it, but I didn't think it was bad (a tad dry). I will say though, if you have a favorite white or yellow cake recipe, you should use that instead and then follow the same step for making the toasted butter pecans, add them in, and absolutely use this frosting recipe. If you want to use your own TWO layer recipe instead of a three, then you'll need to use less pecans, maybe just 1¼ cups would be perfect.

- Preheat oven to 350 F/180C. To make toasted pecans, pour melted butter in a baking sheet. Stir in pecans. Toast for 10 minutes. Stir the nuts once half way. Set aside to cool.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add 1/4 cup silken tofu and beat well. Then add the yogurt and vanilla extract and beat well.
- In a medium-sized bowl, combine flour, baking powder, and salt.
- Add the dry mix and milk to the creamed butter/sugar mixture alternately. Basically first some portion of the flour, mix well and then add milk and beat well and do the same for rest of the flour and milk.
- Stir in 1 cup toasted pecans.
- Pour batter into two 8-in.round baking pans lined with parchment paper. First I scooped out 1 cup of batter and put in each of the pans and divided the rest of the batter equally using measuring cups.
- Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Mine was done in 33 minutes. You can see that the cake gets golden brown around the edges and it starts pulling away from the pan.
- Place the pans on a wire rack for at least 10 minutes before removing the cakes from the pan. After that cool the cakes completely before frosting.
- In a large bowl cream butter and 3 cups of sugar. Add milk in small increments and vanilla, beating until light and fluffy. Add some more sugar and/or milk depending on the taste and consistency. Stir in remaining toasted pecans. Spread between the layers and over the top and sides of the cake.

- For the pecans: Heat oven to 350 degrees. Combine all pecan ingredients and toss well to coat. Bake in a 9-by-13-inch baking dish for 12 minutes, stirring several times to prevent burning. - In a large mixing bowl, cream together butter, granulated sugar and brown sugar until light and fluffy.
- Add eggs, vanilla extract and mix until smooth.
- Add flour, cinnamon powder, cornstarch, baking soda, baking powder and mix until just combined.
- Mix in pecans and toffee bits until evenly distributed.
- Chill dough for 30-45 minutes to make it easier to handle.
- Scoop out small portions of the dough and roll into balls. The chilled dough will seem a bit crumbly but the warmth of your hands will help bring the dough together into small balls.
- Optional: Roll each cookie dough ball in a bowl of granulated sugar, if you like. I don't usually do it but my Mom does it.
- Place them on a cookie tray, lined with parchment paper.
- Bake at 350 degrees F for about 11-14 minutes or until cookies are golden brown and firm along the edges. They will be "poofy" in the center and deflate as they cool. If they don't deflate fully to your liking, you can press down gently with the back of a spoon. Enjoy!

- Prepare the pecans: Preheat the oven to 350°.
- Put the 1/4 cup (1/2 stick) of butter in a shallow baking pan with the chopped pecans and put the pan in the oven for 15- 20 minutes, stirring the pecans and melted butter every few minutes, until the fragrance is wonderfully toasty.
- Watch carefully near the end to avoid burning.
- Remove from pan and set aside.
- Grease and flour three 8 or 9-inch round layer cake pans.
- Prepare the cake: In the large bowl of an electric mixer, cream the 3/4 cup (1 1/2) sticks of butter.
- Beat in the 2 cups of sugar, creaming well.
- Beat in the eggs one at a time, beating well after each addition.
- Sift together the flour, baking powder and salt.
- Add the 2 teaspoons of vanilla to the milk.
- Beat the flour mixture into the batter in thirds, alternating with the milk mixture.

- Stir in the milk just a little at a time, stirring constantly and incorporating all the milk each time before adding more, working to incorporate all the flour and avoid lumps.

- Transfer to the small bowl of an electric mixer, and beat to remove any lumps you missed.

- When the flour mixture is cool, beat in the teaspoon of vanilla, then the softened butter.
- Add the 1 cup of sugar, and beat 2 minutes at medium speed, until the mixture is fluffy and no graininess from sugar remains.
- Fold in the fat-free Cool Whip and the remaining 2/3 cup of butter-toasted pecans.
- Fill and frost the top of the cake.
