ROASTED TOASTED SALAD



Roasted Toasted Salad image

This salad is the perfect balance of roasted sweet shallots and butternut squash, on a bed of fresh green leaves, topped with the crunch of pecans, pumpkin seeds and crispy fried onions.

Yield 4 to 6 servings

Number Of Ingredients 15

1 small butternut squash (600 grams), peeled, seeded and sliced into 1/2-inch-thick pieces
12 round shallots, peeled
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Flaky sea salt and freshly ground black pepper
1/3 cup pecans, roughly chopped
2 tablespoons pumpkin seeds
5 ounces mixed salad leaves, such as rocket (arugula), watercress and baby spinach
1/2 small round radicchio, cut into wedges
2 tablespoons store-bought crispy fried onions
1/4 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 teaspoons whole-grain mustard
Juice of 1/2 lemon
Flaky sea salt

Steps:

  • For the salad: Preheat your oven to 350 degrees F (180 degrees C/Gas mark 4).
  • Arrange the butternut squash and shallots on a baking sheet, drizzle with the olive oil and balsamic vinegar and mix together. Sprinkle over a pinch of sea salt and a pinch of black pepper.
  • Bake until the squash and shallots are lightly browned and tender, about 35 minutes, checking halfway through to give them a mix around.
  • Meanwhile, in a heavy-bottomed skillet (no need to add oil), toast the pecans and pumpkin seeds over medium heat until fragrant, 1 to 2 minutes. Tip the nuts into a bowl and set aside.
  • For the dressing: Whisk the oil, vinegar, mustard, lemon juice and a pinch of sea salt in a cup or jar.
  • Lay the mixed salad leaves and radicchio wedges on a large serving board or platter. Arrange the roasted shallots and squash on top. Drizzle over the dressing. Then sprinkle over the toasted pecans and pumpkin seeds and crispy fried onions.

4 pieces pita bread
2 plum tomatoes, seeded and chopped
1 green pepper, cored, seeded and chopped
1 red pepper, cored, seeded and chopped
1 cucumber, seeded and chopped
4 green onions, finely chopped
1 garlic clove, crushed
1 tablespoon flat leaf parsley, finely chopped
1 tablespoon of fresh mint, finely chopped
1 lemon, juice of
1 tablespoon olive oil
1 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste

Steps:

  • Preheat the oven 400ºF
  • Cut the bread into small (1 inch) pieces, place on a baking tray and toast in the oven for 5-10 minutes until crisp and light brown.
  • In a large bowl, combine the chopped tomatoes, green peppers, red peppers, cucumber, spring onions, garlic, parsley and mint.
  • Toss with the lemon juice and olive oil. Salt and pepper to taste.
  • Now add the toasted bread and mix well.
  • Serve immediately.

Fattoush is a classic Lebanese dish. It is often eaten by itself as a starter or light lunch. Saumac is an essential ingredient. It is a spice that is made from the dried, powdered berries of the sumac tree. It was my first time trying Saumac and I really enjoyed it, next time I would add one more teaspoon of the Saumac. This was used as a side salad for Recipe #218539 . This recipe comes from a book called "The Lebanese Cookbook" by Hussien Dekmak

1 carrot, chopped
1/2 cos lettuce, chopped
1 cucumber, chopped
2 tomatoes, chopped
5 radishes, chopped
1 tablespoon spring onions or 1 tablespoon green onion, chopped
1 red capsicums or 1 red pepper, chopped
1 garlic clove, chopped
1 tablespoon flat leaf parsley, chopped
2 teaspoons ground sumac
1 large flat bread, toasted and broken into pieces
2 -3 tablespoons olive oil
salt, to taste

Steps:

  • Combine all the vegetables in a large bowl and mix well.
  • Add the garlic, parsley, sumac, bread, olive oil and salt to taste.
  • Toss everything together and serve immediately.

Everything in this salad is fresh, except the bread! Prepare this salad by using a loaf of artisan bread or rosemary bread that is a touch stale. If your bread is too fresh, toast it until it is about half as dried and crunchy as a crouton.

1 clove garlic
1 (1 pound) loaf Italian bread
1 cup chopped tomatoes
1 cup cucumber - peeled, seeded and chopped
1 cup chopped red onion
1 clove garlic, minced
2 cups chopped fresh basil
⅛ cup chopped fresh thyme
¼ cup olive oil
2 tablespoons balsamic vinegar

Steps:

  • Rub a peeled clove of garlic around a wooden salad bowl.
  • Pull apart or chop the bread into bite-size pieces.
  • In the prepared salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss and serve.

2 tablespoons sugar
Juice of 2 limes
3 tablespoons rice-wine vinegar
5 tablespoons safflower oil
1 pound country-style bread, crust removed and cut into 1/2-inch cubes
3 tablespoons olive oil
1 English cucumber, halved lengthwise and cut into 1-inch pieces
1 pint cherry tomatoes, halved
1 tablespoon fresh ginger, very finely chopped (optional)
1/4 cup fresh cilantro, coarsely chopped
1/4 cup fresh mint leaves, coarsely chopped
1 jalapeno, seeds removed and finely chopped
2 cups arugula
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, whisk together sugar, lime juice, vinegar, and 3 tablespoons safflower oil; set vinaigrette aside.
  • In a large bowl, toss bread cubes with olive oil until well coated. Spread bread cubes in an even layer on a baking sheet. Transfer to oven until golden and toasted, about 10 minutes.
  • Transfer toasted bread cubes to a large bowl and add cucumber, tomatoes, ginger (if using), cilantro, mint, basil, jalapeno, and arugula. Drizzle vinaigrette over top, and season with salt and pepper; toss to combine.

ITALIAN BREAD SALAD (PANZANELLA)

Like so many Mediterranean bread salads, stale bread is combined here with red onion and tomato and dressed with vinegar and olive oil. It's like a bread salad version of gazpacho.

1 pound stale country bread or baguette, cut in thick slices
1 small red onion, sliced very thin
Cold water
1 pound ripe tomatoes, chopped
2 tablespoons chopped fresh basil
2 tablespoons chopped flat-leaf parsley
2 tablespoons red wine vinegar or sherry vinegar (more to taste)
1 large garlic clove, minced or crushed in a mortar and pestle
Salt and freshly ground pepper
1/4 cup extra virgin olive oil

Steps:

  • If your bread is very hard, douse it with water first and saw it into a few pieces that will fit into a medium bowl. Cover with the onions. Pour on cold water to cover and let sit for 20 minutes. Lift the onions off the bread and rinse in a strainer. Drain the bread, squeeze out excess water and crumble the bread into a salad bowl.
  • Add the tomatoes, basil, and parsley to the bowl. Mix together the vinegar, garlic, salt, pepper, and olive oil, and toss with the bread mixture. Cover and refrigerate for 1 hour or longer before serving.
