On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share

Steps:
- Melt butter in a heavy skillet.
- Saute onion and green peppers until tender.
- Add pork, pepper, salt, soy sauce, almonds and rice.
- Simmer until pork is done and flavors are blended.
- Add pimentos just before serving.

Steps:
- In a medium saucepan, melt butter over medium heat. Cook onion, stirring occasionally, until golden brown, about 8 minutes.
- Add coriander, season with coarse salt and ground pepper. Add rice; cook, stirring until edges are transparent, about 2 minutes.
- Stir in chicken broth. Bring to a boil. Cover; simmer over low heat until liquid absorbed, about 15 minutes. Remove from heat; let stand, covered, 10 minutes. (Longer cooking time may be required for some rice grain types).
- Stir parsley into rice. Sprinkle with almonds and serve.

- In a large saucepan, bring the water, rice and butter to a boil. Remove from the heat. Cover and let stand for 5 minutes or until water is absorbed. Stir in the almonds, salt and pepper. Sprinkle with parsley.

- Toast the almonds over medium heat in a dry wok or large non-stick skillet stirring constantly until lightly browned, 1 to 2 minutes. Transfer to a plate and set aside.
- Heat the wok up over medium-high and add 2 TBSP of the oil, tilt the pan around to coat the bottom and sides of the pan with oil. When the oil is hot add the eggs and scramble for about 15 seconds, transfer the scrambled eggs to a plate and set aside.
- Add the remaining 2 TBSP of oil to the pan, tilt the pan around to coat the bottom and sides of the pan again with oil. When the oil is hot add the ginger and scallions and cook while stirring for about 30 seconds. Add the rice, eggs, and almonds to the pan. Cook and stir while breaking up the eggs, about 2 more minutes. Take off the heat and season with salt & pepper to taste..
