TOAD IN THE HOLE WITH BACON
A great Irish classic. Great for dinner and the kid's love it. A bit involved but it's worth it. This version is similar to pigs in a blanket. Posted for Zaar World Tour 05.

- Preheat oven to 375ºF/190ºC.
- The Toad:.
- Wrap the sausages in the bacon and place in a large roasting tin.
- Scatter the onion over it.
- Drizzle the oil over it and bake for 20 minutes.
- The Hole:.
- Sieve the flour and the salt into a bowl. Make a well in the center add the egg and gradually beat in half of the milk for two minutes.
- Stir in the rest of the milk and mustard.
- Remove the roasting tin from the oven when the sausages are just turning brown and pour the batter over them.
- Cook for a further 40 minutes or until done. The batter should have risen and it will be a lovely golden brown.
- Note: This can burn easily so keep an eye on it. :D You.
- The Gravy:.
- Heat the oil in a saucepan and sauté the onion for five minutes.
- Stir in the flour and cook for a minute then add the mustard, Worcestershire sauce and chicken stock.
- Bring to the boil, stirring all the time.
- Simmer for 15 minutes, checking the seasoning.
- Serve the Toad in the Hole with the gravy poured over it with mashed potatoes and veggies on the side.

- Using a biscuit cutter or round cookie cutter, cut out center of 1 slice of bread (discard center or save for another use). Spread mayonnaise on 1 side of bread slices. In a large skillet coated with cooking spray, lightly toast cutout slice, mayonnaise side down, over medium-low heat. Flip slice; crack an egg into center. Add remaining bread slice mayonnaise side down, to skillet; layer with cheese and bacon. , Cook, covered, until egg white is set, yolk is soft-set and cheese begins to melt. If needed, flip slice with egg to finish cooking. To assemble sandwich, use solid slice as bottom and cutout slice as top.

- Preheat the oven to gas 6, 220°C, fan 200°C. To make the batter, put the eggs, flour, milk and salt into a food processor and blitz until smooth. Set aside.
- Heat 1 tsp of oil in a large pan and cook the sausages for 5 minutes over a medium-high heat until browned all over, but not cooked through. Transfer to a plate and let cool.
- On a board, use the back of a knife to stretch out the bacon rashers and then wrap one around each sausage. Put the sausages into an ovenproof dish, drizzle over 2 tsp of oil and bake for 5 minutes.
- Meanwhile, heat the remaining 1 tbsp of oil in the pan and cook the tomatoes until soft. Place in a jug and blitz using a stick blender. Gently fry the onion and garlic until softened and lightly browned.
- Ten minutes before the end of the toad-in-the-hole cooking time, bring a pan of water to the boil, add the beans and cook for 3-4 minutes or until tender.

- In a medium bowl, whisk together the flour, eggs, milk, mustard and fresh herbs. Cover and let stand 1 hour.
- Preheat oven to 425 F. Place oil in oven-proof skillet or baking dish (enough for a thin layer over the entire bottom) and place in the preheated oven while you prepare the sausages.
- Wrap each of the sausages with a strip of bacon. Remove hot skillet with oil from the oven. Place the sausages in the middle and scatter the red onion slices around the outside. Place in the oven for 15 minutes, then remove, flip sausages and stir onions. Return to oven for a further 15 minutes. Have a baking sheet handy and re-whisk the batter near the end of this cooking time.
- Remove from oven. Place skillet on the baking sheet and quickly pour the batter over-top. Return to oven and allow to cook, without opening the oven door, for 25-30 minutes, or until puffed and golden.
