TOAD IN A HOLE
These were made for me when I was a youngster, I'm now 55 years young. My Grand and Great Grand children love these. Enjoy!

Steps:
- Preheat a large skillet to a high heat.
- With a small biscuit cutter remove centers from bread. Butter slices on one side only. Grill bread until lightly toasted. Crack an egg into each bread hole (be careful not to break the yolk). Season with salt and pepper to taste. Lay 1 slice of cheese on each egg and then the bread rounds. Cook until eggs are cooked to your desired consistency.

TWICE BAKED POTATOES
For a special dinner side, load these Twice-Baked Potatoes from Food Network Kitchen with butter, sour cream and cheese.

Steps:
- Preheat the oven to 400 degrees F.
- Place the potatoes directly on the rack in the center of the oven and bake for 30 minutes. Pierce each potato in a couple spots with a fork and continue to bake until tender, about 30 minutes more. Remove potatoes from the oven, and turn the heat down to 375 degrees F.
- Hold the potato with an oven-mit or towel, trim off the top of the potatoes to make a canoe-like shape. Reserve the tops. Carefully scoop out most of the potato into a bowl. Take care to leave enough potato in the skin so the shells stay together. Mash the potato lightly with fork along with 2 to 3 tablespoons of the butter and sour cream. Stir in the scallion, nutmeg, and season with salt and pepper, to taste. Season the skins with salt and pepper. Refill the shells with the potato mixture mounding it slightly. Sprinkle the cheese on top of the potato filling. Brush the reserved top with the remaining butter and season with salt and pepper.
- Set the potatoes and lids on a baking sheet, and bake until heated through, about 20 minutes. Serve immediately.

TOAD IN HOLE TWICE BAKED POTATOES
These are unique and good. Most of the egg yolk is soft and oozes down into the cheesy potatoes. A different side dish the family will love.

Steps:
- prick potatoes and microwave for about 15 minutes. Let cool a bit.
- Cook bacon and remove to paper towel and reserve the bacon grease.
- Cut tops off potatoes and scoop out center leaving a 1/4 inch thick shell. Discard the tops.
- Place the scooped out potatoes in a bowl and add remaining ingredients except green parts of scallions and eggs.
- Divide evenly among the potato shells. Push back of spoon down in center to make a large well.
- Crack an egg into each well. Some of the whites will ooze out but that is ok.
- Bake at preheated 375 degree oven for 25 minutes or until whites are set. Sprinkle with green parts of scallions to serve.
TOAD IN THE HOLE

My Grandma made these for us for what she called tea, but we called supper. How high the crust gets depends on how much you beat the eggs. Serve with salad and crusty bread, if desired.

- Brown sausage in a large skillet; drain and place sausage in a 9x13 inch baking dish.

- Preheat oven to 400°. In a small bowl, whisk eggs, milk and salt. Whisk flour into egg mixture until blended. Let stand 30 minutes. Meanwhile, cook sausage according to package directions; cut each sausage into 3 pieces., Place oil in a 12-in. nonstick ovenproof skillet. Place in oven until hot, 3-4 minutes. TOAD IN THE HOLE RECIPE
Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Pour the vegetable oil into the bottom of an 8x12 or 9x9 baking dish. You can use a metal or ceramic casserole dish. Place the sausages in the dish in a single layer and bake for 10 minutes in the preheated oven.
- While waiting, whisk flour, eggs, and 1/2 cup of milk in a medium bowl. Gradually mix in the rest of the milk until the mixture forms a smooth batter. Season with salt and pepper.
- Take the sausages out of the oven and pour the batter over them, covering them 3/4 of the way. Place the dish back into the oven and bake for another 35 minutes or until the center has risen and turned golden brown. If the underside seems a little soft - that's okay, that's how it's supposed to be.
