For a generous batch of gooey cinnamon buns in a hurry, Jean Edwards of Indianapolis, Indiana says that it doesn't get much easier than this sticky bun recipe. "I enjoy giving these sweet treats to friends for a 'just because' gift," she notes. "They reheat in the microwave very well."

1 cup packed brown sugar
1/2 cup corn syrup
1/2 cup butter, cubed
1 cup coarsely chopped pecans
1/2 cup sugar
2 tablespoons ground cinnamon
2 tubes (17.3 ounces each) large refrigerated biscuits

Steps:

  • In a saucepan, combine the brown sugar, corn syrup and butter; cook and stir until sugar is dissolved. Add the pecans. Spoon into a greased 13-in. x 9-in. baking pan., In a shallow bowl, combine sugar and cinnamon. Cut each biscuit in half; dip in cinnamon-sugar. Place, cut side down, over brown sugar mixture. , Bake at 375° for 25-30 minutes or until golden brown. Invert onto a serving plate; serve warm.

Number Of Ingredients 14

2 and 3/4 cups all-purpose flour
3 Tablespoons granulated sugar
1 teaspoon salt
1 package instant yeast ((1 packet = 2 and 1/4 teaspoons))
1/2 cup water
1/4 cup milk
2 Tablespoons unsalted butter
1 large egg
1/2 stick unsalted butter, softened to room temperature
2 Tablespoons ground cinnamon
1/4 cup brown sugar
1 cup powdered sugar
1 teaspoon vanilla extract
2-3 Tablespoons milk

Steps:

  • In a large bowl, mix the flour, the sugar, salt, and yeast together until evenly dispersed. Set aside. In a small microwavable bowl, heat the water, milk, and butter together in the microwave until the butter is melted (about 30-45 seconds). Stir the butter mixture into the flour mixture. Add the egg and knead with hand or with stand mixer for 3-4 minutes or until the dough is no longer sticky. Place in a lightly greased bowl and let rest for about 5 minutes.
  • Preheat the oven to 200 degrees and turn off after 10 minutes or just before placing rolls in oven.
  • After the dough has rested for 5 minutes, roll it out in a 15x9 inch rectangle. Spread the softened butter on top. Mix together the cinnamon and sugar and sprinkle it all over the dough. Roll up the dough tightly and cut into 9 (large) even piece. Place in a lightly greased 9-inch or square pan (or cut into 12 small pieces and place in a 9x13 pan) and lightly cover with aluminum foil or plastic wrap.
  • TURN OFF the oven and place the cinnamon buns in the oven to rise for 20 minutes. Keep the buns in the oven (REMOVE THE FOIL OR PLASTIC) and turn on the oven to 375F. Bake the cinnamon rolls for 15-20 minutes or until golden. Remove from oven and top with glaze.
  • Mix the powdered sugar, vanilla and 2 Tablespoons milk together until smooth and lump free. Drizzle over warm rolls.

I LOVE these rolls, unfortunately they don't have a store anywhere near my house but luckily I stumbled upon a copycat recipe. I'm not allowed to make any other cinnamon roll!

1/2 ounce active dry yeast
1/2 cup warm water, 105 to 115 degrees
1/3 cup sugar
1/2 teaspoon sugar
4 -5 cups all-purpose flour, divided
1 teaspoon salt
1 cup milk, scalded and cooled to 110 degrees
1/3 cup oil
2 eggs, room temperature
1/2 cup margarine, softened
1 cup brown sugar
1/2 cup sugar
3 tablespoons cinnamon
1 cup powdered sugar
2 -3 tablespoons milk, warmed
1 teaspoon vanilla

Steps:

  • For dough, dissolve yeast in water with 1/2 tsp sugar, let stand 5 minutes.
  • In mixing bowl combine, 3 cups flour, 1/3 cups sugar and salt.
  • At low speed gradually beat in milk, oil, eggs and yeast mixture.
  • Beat until well blended.
  • Beat in additional flour, about 1 1/2 cups until dough pulls away from sides of bowl.
  • On floured surface, knead dough until smooth and elastic 8-10 minutes.
  • Place in greased bowl, turning to grease top. Cover and let rise in a warm draft free place until doubled in bulk, about 1 hour.
  • For filling, combine all ingredients till smooth, set aside.
  • Grease 2 round cake pans.
  • Punch down dough and place on lightly floured surface. Roll dough into an 18 x 10 inch rectangle
  • Spread filling all over. Roll tightly from long side.
  • Cut into 14 slices.
  • Place 1 roll cut side up in center of each pan and arrange remaining rolls in a circle of 6 around each center roll, Cover and let rise doubled in bulk, 30-40 minutes.
  • Preheat oven to 350 degrees and bake 22-27 minutes, until golden brown.
  • Cool in pans 10 minutes and invert to wire racks, invert again to cool.
  • For icing, whisk all ingredients till smooth drizzle over cooled rolls.

1 cup warm milk
1 tablespoon instant dry yeast
2 tablespoons white granulated sugar
1 teaspoon salt
3 tablespoons salted butter (softened)
1 large egg
3 cups all-purpose flour
1/2 cup salted butter (melted)
1 cup brown sugar
2 tablespoons ground cinnamon
4 ounces cream cheese (softened)
1/4 cup salted butter (softened)
1 to 1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1 to 2 tablespoons milk

Steps:

  • In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs. Add in flour. Using a dough hook, turn the on to a low speed.
  • Once the flour starts to incorporate into the dough, increase the speed to a medium range. Add more flour as necessary so that the dough pulls away from the sides of the bowl. The dough mixture should be tacky, but not stick to your hands. It should be soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.
  • Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise until double in size, about 1 hour.
  • Lightly grease a baking sheet or 9x13 pan. Punch down the dough and roll into a 12inch by 18inch rectangle.
  • Brush the dough with 1/2 cup melted butter. In a small bowl, combine the brown sugar and cinnamon. Sprinkle on top of the melted butter. Roll up tightly lengthwise so you have one long roll. Use plain dental floss or a sharp knife to cut the dough into 12 one-inch slices.
  • Place the slices onto a lightly 9x13 pan. Cover and let rise 30 to 45 minutes.
  • Preheat oven to 325 degrees. Bake the rolls for about 14 minutes, until just kissed with brown on top.
  • While the cinnamon rolls are baking, make the cream cheese glaze by using a hand mixer to whip together cream cheese and butter in a bowl until light and fluffy. Whip in powdered sugar and vanilla extract. Add enough milk to achieve a drizzle-like consistency.
  • Frost the rolls while still warm. Serve immediately or cool and store. Stays good for 4 to 5 days.
