Number Of Ingredients 6

3 ripe plantains
1/2 teaspoon baking powder
1 tablespoon salt
1/2 teaspoon crushed garlic
1/2 teaspoon black pepper, optional
1/4 cup vegetable oil

Steps:

  • Wash plantains and cut into thirds; leaving the skin on. Place the pieces in a medium pan with water; cover, and bring to a boil. Cook until the flesh is soft, about 15 minutes
  • Drain and peel the plantains and transfer to a large bowl. Mash to a smooth consistency and add the baking powder, salt, garlic, and pepper. Mix well. Using your hands, form small, thin cakes about 2 1/2 inches in diameter. Heat oil in large skillet until very hot. Fry the cakes until golden brown, about 2 to 3 minutes per side. Transfer to a paper towel-lined plate. Serve with the Chicken Rundown.

2 ripe plantains, peeled and sliced (with black spots or can be totally black)
1 teaspoon ginger powder
1/2 teaspoon onion powder
1/2 teaspoon sugar
Salt
1 teaspoon chili powder
Vegetable oil for frying

Steps:

  • Put sliced plantains in a container
  • Add ginger, onion powder, chili pepper and sugar to container
  • Mix to ensure that plantains are evenly coated.
  • Add salt as needed
  • Let sit for 5 mins
  • Heat oil in fry pan
  • Fry till golden brown

1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
2 eggs
1/4 teaspoon crushed red pepper flakes
1 tablespoon unsalted butter, melted
1/2 cup milk
2 cups plantains, cut into small pieces

Steps:

  • In a bowl, slightly mash the plantains, then set aside.
  • In a mixing bowl, whisk together the flour, baking powder & salt.
  • In a small bowl, beat in the eggs until fluffy.
  • To the flour mixture add the beaten eggs, crushed red pepper & butter & then the milk, beating with a fork until the mixture is smooth.
  • Stir in the mashed plantains, & add more milk if necessary ~ Batter should be of a dropping consistency.
  • Drop by spoonfuls into preheated deep fat at 375 degrees F & fry 4-5 minutes, or until evenly browned. Serve hot.

3 -4 plantains (over-ripe, peeled)
1 small red onion (chopped)
fresh ginger (1-inch piece, peeled & mashed-finely minced)
1/2 scotch bonnet pepper (minced)
1/2 cup flour
salt
1/2 cup oil

Steps:

  • Blend onions, ginger and scotch bonnet chilies into a paste, peel plantains and blend together with spicy paste.
  • Add salt and flour and mix well, If mixture is too soft, add a tablespoon or two of flour; the mixture must fall off a wooden spoon slowly.
  • Heat oil in a frying pan.
  • Using a large wooden spoon, put mixture in the oil, one spoonful at a time. Don't overfill the frying pan as the mixture rises and spreads. Leave a space between each spoonful.
  • Fry for 5 minutes on each side or until golden.
  • Drain on kitchen towel and serve warm.
  • Serve with peanuts as a snack or as a side to African Stew.

1 Very ripe plantain
½ Cup Plain flour
½ tsp Salt
1 ½ tbsp Sugar
½ tsp Vanilla extract
¼ tsp Nutmeg
¼ Cup Cooking oil

Steps:

  • Peel the plantain, cut it up into small slices in a bowl and crush it using a fork. The riper the plantain the easier it is to crush and the sweeter it will be and the easier it is to crush.
  • After crushing the plantain, add the other ingredients except for the cooking oil. Mix until you get a soft paste.
  • Add cooking oil to the frying pan at medium heat. The oil should not cover the fritters in the frying pan. When the oil is a bit hot, scoop portions of the batter mix with a tablespoon and add it to the oil.
  • Flatten the paste mix with the spoon, once the fritters start to brown reduction the heat so it won't burn.
  • Fry until golden brown on both sides and cooked on the inside.
