TIRAMISU (WEIGHT WATCHERS)
No it isn't the real thing but it is a wonderful low calorie version. This is one of my "go to" recipes for entertaining.

Steps:
- Using a serrated knife, cut angel food cake into 12 equal slices; set aside.
- In a mixing bowl or food processor, combine both cream cheeses, sugar and vanilla. Mix until blended and smooth. Combine cocoa and grated chocolate in a separate bowl; set aside. Pour espresso into a shallow dish.
- Dip 4 cake slices into espresso mixture and turn to coat. Place slices crosswise in bottom of an 8-inch loaf pan and press cake down to coat bottom (break up cake if necessary to coat surface).
- Gently spread 1/3 cream cheese mixture over cake layer. Sprinkle with 1/3 cocoa mixture. Repeat procedure with remaining cake slices, cream cheese mixture and cocoa mixture to make 3 layers.
- Refrigerate 2 hours. Cut into 8 pieces and serve.

LOW FAT TIRAMISU
This dessert is so good and so high in calories. Being on Weight Watchers, this dessert was always off limits. I ran across this dessert in the Tribune a while back and it claims it is Low Fat. Whether it is or not, this is one dessert I would love to have on my Weight Watcher's diet. If anyone can cut this down (calorie wise), or if you have a recipe for Low Fat Tiramisu,please let me know.

Steps:
- Stir the custard powder in a small pan with about 2 Tbls. of skim milk until dissolved.
- Add remaining skim milk with sugar and vanilla and stir over medium heat until mixture boils and thickens.
- Remove from heat, this will be a thick custard.
- Transfer to a bowl, cover with plastic wrap and cool at room temperature.
- In a small bowl, whip egg whites until soft peaks form, then fold into the cooled custard.
- Beat together the custard and cream cheese for 2 minutes.
- Pour the coffee into a dish and add the Kahlua coffee liqueur.
- Using half the biscuits, quickly dip each biscuit in the coffee mixture.
- Just enough to cover(don't leave them in the liquid or they will get soggy) and arrange in a single layer over the base of a serving dish.
- Use a 9" x 13" x 2" baking dish.
- Using half of the custard mixture, smooth it evenly over the biscuits.
- Dust half the dark cocoa over the cream and then repeat the layers with the remaining biscuits and custard mixture.
- Cover the Tiramisu with plastic wrap and refrigerate overnight, or for at least 6 hours.
- Lightly dust with dark cocoa powder to serve.

- 2. In a mixing bowl or food processor, combine both cheeses, whipped topping, sugar and vanilla. Microwave for 30 seconds. Mix until blended and smooth. Combine cocoa and grated chocolate in a separate bowl; set aside. Pour coffee and brandy flavoring into a shallow dish.
- 3. Dip 4 cake slices into coffee mixture and turn to coat. Place slices crosswise in bottom of an 8-inch loaf pan and press cake down to coat bottom (break up cake if necessary to coat surface).
- 4. Gently spread 1/3 cheese mixture over cake layer. Sprinkle with 1/3 cocoa mixture. Repeat procedure with remaining cake slices, cream cheese mixture and cocoa mixture to make 3 layers.
- 5. Refrigerate 2 hours.

TIRAMISU 5 WW POINTS
5 WW points for THE WHOLE THING! Tiramisu is my favorite thing on earth, so I am excited to try this. I do intend to spike mine with 1oz of Kahlua or rum or Amaretto or even Grand Marnier. I'm also considering using Quark instead of the ricotta. Be sure to sweeten the espresso with a little splenda.

- Begin by lining up half of the ladyfingers next to each other on a serving dish. Drizzle cooled coffee over ladyfingers until desired saturation is reached.
- In a bowl, combine cheese, Splenda, Cool Whip and vanilla, and mix well. Spread half of this mixture on top of ladyfingers and top with half of the cocoa. Next, layer remaining ladyfingers on top of dish. Again, cover with coffee. Spread remaining cheese mixture on top. Lastly, sprinkle cocoa over dish.
- Best when eaten immediately. Serves one or two, depending on how hungry you are.

- Beat together the cheeses, sugar and vanilla extract until smooth. In a small bowl mix together the cocoa and chocolate and reserve 1 tbsp of the mixture for decoration.
- Add the coffee to the 200ml of boiling water in a shallow bowl. Line a 900g (2lb) loaf tin with clingfilm so that it hangs over the edges.
- Dip 4 pieces of sponge into the coffee and lay along the bottom of the tin. Spread a third of the cheese mixture over the top and sprinkle a third of the chocolate mixture over the cheese. Repeat with remaining sponge, cheese and chocolate ending with a layer of sponge. Fold over the clingfilm and chill for at least 2 hours or overnight.
- To serve, tip out the tiramisu, carefully remove the clingfilm and sprinkle with reserved chocolate mixture.

- In a food processor, purée ricotta, cream cheese, confectioners sugar and orange zest. Transfer to a medium bowl and fold in whipped topping.
- In same food processor (no need to clean), purée 1 cup of sliced strawberries, the granulated sugar, liqueur and orange juice.
