Enjoy these delicious truffles coated with chocolate made using Betty Crocker™ Super Moist™ cake mix - perfect dessert for any occasion.

1 box Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box
2 tablespoons instant espresso coffee powder or granules
1 container (8 oz) mascarpone cheese, softened
2 tablespoons coffee-flavored liqueur
1 package (24 oz) chocolate-flavored candy coating, chopped
1 1/2 cups bittersweet chocolate chips
1 tablespoon unsweetened baking cocoa

Steps:

  • Heat oven to 350°F. Make cake mix as directed on box, using water, oil and egg whites and adding coffee powder. Bake and cool as directed for 13x9-inch pan.
  • Line cookie sheet with waxed paper. Crumble cake into large bowl. Add mascarpone cheese and liqueur; mix well. Shape into 1-inch balls; place on cookie sheet. Freeze until firm; keep refrigerated.
  • In microwavable bowl, microwave candy coating and chocolate chips uncovered on Medium (50%) 2 minutes, then in 15-second intervals, until melted; stir until smooth.
  • Remove cake balls from refrigerator a few at a time. Using fork, dip each cake ball into melted chocolate to cover; tap off excess. Return to cookie sheet. Let stand until set. Sprinkle with cocoa. Store covered in refrigerator.

The most exquisite truffle I've ever made. I've just discovered a new liqueur called Tiramisu and it enhances so many of my desserts. This recipe is very easy, and the outcome is a crowd pleaser.

3 1/2 ounces good bittersweet chocolate
3 1/2 ounces good semisweet chocolate
1/2 cup heavy cream
2 tablespoons tiramisu liqueur (from liquor store)
1 tablespoon brewed coffee
1/2 teaspoon good vanilla extract
ghiradelli ground chocolate, and
cocoa (for rolling)

Steps:

  • Chop the chocolates and place in a bowl.
  • Heat the cream in a small saucepan until it boils. Immediately pour the hot cream through a fine-meshed sieve into the bowl with the chocolates. With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. (If the chocolate doesn't melt completely, place the bowl over a pan of simmering water and stir for a few minutes just until it melts.) Whisk in the Tiramisu liqueur, coffee and vanilla. Cover and chill for 45 minutes to 1 hour until pliable but firm enough to scoop.
  • With 2 teaspoons or a 1 1/4 inch ice cream scoop, make the dollops of the chocolate mixture and place on a baking sheet lined with parchment paper. Refrigerate for about 15 minutes, until firm enough to roll into rough spheres. Roll the chocolate in the Ground Chocolate/Cocoa and chill again. Refrigerate overnight for best result.

Give these truffles for a Christmas or birthday present. With white and dark chocolate plus a marsala and espresso centre, they taste just like a slice of tiramisu

140ml double cream
25g unsalted butter
150g dark chocolate , chopped
60ml marsala
1 heaped tbsp strong espresso powder , plus extra for dusting
250g white chocolate

Steps:

  • Gently heat the double cream and butter until just steaming. Put the dark chocolate in a heatproof bowl, pour over the warm cream and stir to melt. Stir in the marsala, then mix the espresso powder with 1 tbsp boiling water and add this as well. Chill for 1-2 hrs, or until firm enough to scoop. Use a teaspoon to scoop the mixture and gently roll into balls using your hands (you may want to use gloves). Put on a lined baking tray and freeze for 30 mins.
  • Heat the white chocolate in the microwave for 1-2 mins, or until melted, then dip each ball in the white chocolate and return to the tray using a fork. Dust with a little espresso powder while the chocolate is still soft. Return to the freezer for 10-15 mins to set. Will keep in the fridge for three days.

  • Using a food processor, pulse the lady fingers until they become a fine crumb (consistency should be similar to bread crumbs). You may have to do this in 2 batches depending on the size of your food processor. Once finished, remove the lady finger crumb from the food processor and set aside.
  • Using a stand or hand mixer with a wire whip attachment, whip the mascarpone cheese on medium-high for 2-3 minutes. Turn off the mixer. Using a spatula, fold in 1.5 cups of lady finger crumb, coffee, and sugar until well combined. When you touch the mixture, it should not stick to your fingers. If the mixture is too wet, add a bit more lady finger crumbs and mix again.
  • Roll the mixture into 1 inch balls and set on top of a parchment paper lined baking sheet or plate. You should have roughly 16 balls. Stick 1 toothpick in the top of each ball and the refrigerate for a minimum of 30 minutes.
  • Before removing the balls from the refrigerator, prepare your double-boiler to melt the chocolate. If you don't have a double-boiler (me either), find a small-medium sized pot and a glass or steel bowl that will sit on top of the pot. The bottom of the bowl should not reach the bottom of the pot. Fill the pot with just enough water so it does not hit the bottom of the bowl. Warm the double-boiler over medium-low heat. Add the chocolate to the bowl and slowly warm until the chocolate is just melted, stirring constantly.

  • In a food processor, blend lady fingers until you have fine crumbs. Set aside 2 tablespoons to sprinkle on the truffles later. Transfer the remaining crumbs to a bowl. Add the sugar and whisk until combined.
  • Using a hand mixer (or stand mixer) add the mascarpone cheese to the bowl and mix until fully incorporated. Add the espresso one tablespoon at a time. You do not want a goopy consistency. It should be similar to a soft cookie dough. Transfer the mixture to a tupperware container and place in the fridge for 45 minutes to an hour.
  • Line a baking sheet with wax paper or parchment paper. Remove the mixture from the fridge (it should be firmer now). Start to shape the mixture into 36 (1-inch) balls and place them on the prepared baking sheet. Freeze for 10 minutes.
  • Melt the chocolate (see tips here) and stir in the espresso powder. Dip a cold tiramisu truffle into the melted chocolate and transfer it back to the baking sheet. (I use these dipping tools) Sprinkle the truffle with the crushed lady fingers you set aside earlier. Repeat for the remaining truffles.
