In addition to being an incredible-tasting dessert, tiramisu also offers the perfect segue when you're trying to steer the Valentine's dinner conversation towards spicier subjects. This heady, mood-elevating concoction is rich and deeply satisfying, yet remarkably light in texture. Yes, you can use regular cream cheese, but mascarpone is far superior.

½ cup brewed espresso
3 tablespoons Marsala wine, divided
2 eggs, separated
2 tablespoons white sugar
1 teaspoon white sugar
¾ cup mascarpone cheese
½ teaspoon vanilla extract
1 pinch salt
10 ladyfinger cookies, broken in half, or more as needed
1 tablespoon cocoa powder
½ ounce dark chocolate, grated

Steps:

  • Stir espresso and 2 tablespoons Marsala wine together in a shallow bowl.
  • Whisk egg yolks, 2 tablespoons plus 1 teaspoon sugar, and 1 tablespoon Marsala wine together in the top of a double boiler over simmering water, until thick, pale yellow, and creamy, 5 to 6 minutes.
  • Whisk egg yolk mixture, mascarpone cheese, vanilla extract, and salt together in a bowl until completely smooth.
  • Beat egg whites in a glass or metal bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Gently stir and fold 1/2 the egg whites into egg yolk mixture; fold in remaining 1/2 egg whites.
  • Place 1 heaping spoonful mascarpone mixture into a single-serving cup or glass. Dip 2 ladyfinger cookie halves briefly in espresso mixture and turn 3 to 4 times to coat. Place cookie halves in the bottom of the glass on top of mascarpone.
  • Fill the glass halfway with mascarpone mixture. Dip 5 ladyfinger halves in the espresso mixture and place vertically along the inside of the glass, dipping and placing more ladyfinger halves as necessary to fit the glass. Place 2 dipped ladyfinger halves horizontally on top of the mascarpone mixture. Fill glass to the top with mascarpone mixture. Repeat for the second serving glass.
  • Wrap both glasses in plastic wrap and refrigerate for at least 8 hours or overnight. Remove plastic wrap and dust tops with cocoa powder and grated chocolate.

1 package Betty Crocker™ pound cake mix
3/4 cup water or milk
2 eggs
1 1/2 cups strong coffee
2 cups sugar
1 cup chocolate-flavor syrup
2 packages (8 oz each) cream cheese, softened
4 cups whipping (heavy) cream
4 bars (1.4 ounces) chocolate-covered toffee candy, chopped

Steps:

  • Bake cake mix as directed on package, using water and eggs, in 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches. Cool 10 minutes. Remove from pans. Cool completely on wire rack, about 1 hour.
  • Cut each pound cake into 9 slices. Arrange slices in 2 rectangular baking dishes, 11x7x1 1/2 inches, cutting slices if necessary to cover bottom of dishes. Drizzle coffee over cake.
  • Beat sugar, chocolate syrup and cream cheese in large bowl with electric mixer on medium speed until smooth. Add whipping cream. Beat on medium speed until light and fluffy. Spread over cake. Sprinkle with candy.
  • Cover and refrigerate at least 1 hour but no longer than 24 hours.

An easy Tiramisu recipe. This dessert had its heyday on American menus about 15 years ago. The popularity of tiramisu never wavered in Rome, however, where it continues to be served at dinner parties and restaurants.

3 large eggs, separated
3/4 cup sugar
1 (8-oz) container mascarpone cheese (1 scant cup)
1/2 cup chilled heavy cream
2 cups very strong brewed coffee or brewed espresso, cooled to room temperature
2 tablespoons sweet Marsala wine
18 savoiardi (crisp Italian ladyfingers, 6 oz)
1/4 cup fine-quality bittersweet chocolate shavings (not unsweetened; made with a vegetable peeler) or 2 tablespoons unsweetened cocoa powder

Steps:

  • Beat together yolks and 1/2 cup sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. Beat in mascarpone until just combined.
  • Beat whites with a pinch of salt in another bowl with cleaned beaters until they just hold soft peaks. Add remaining 1/4 cup sugar a little at a time, beating, then continue to beat whites until they just hold stiff peaks. Beat cream in another bowl with cleaned beaters until it just holds soft peaks. Fold cream into mascarpone mixture gently but thoroughly, then fold in whites.
  • Stir together coffee and Marsala in a shallow bowl. Dip 1 ladyfinger in coffee mixture, soaking it about 4 seconds on each side, and transfer to an 8-inch glass baking dish (2-quart capacity). Repeat with 8 more ladyfingers and arrange in bottom of dish, trimming as needed to fit snugly. Spread half of mascarpone mixture evenly over ladyfingers. Make another layer in same manner with remaining ladyfingers and mascarpone mixture. Chill tiramisu, covered, at least 6 hours.
  • Just before serving, sprinkle with chocolate.

1/3 cup sugar, divided
1-1/2 tsp. vanilla, divided
1/4 cup warm milk
2-1/2 pkg. (3 oz. each) soft ladyfingers, split, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3-1/4 cups plus 2 Tbsp. cold milk, divided
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
2 pkg. (3.4 oz. each) JELL-O Butterscotch Flavor Instant Pudding
3 Tbsp. caramel ice cream topping

Steps:

  • Combine coffee granules, 2 Tbsp. sugar and 1/2 tsp. vanilla in small bowl. Add warm milk; stir until coffee is completely dissolved and mixture is well blended. Arrange half the ladyfingers, cut sides up, on bottom of 13x9-inch dish, cutting if necessary to fit; brush with half the coffee mixture.
  • Mix cream cheese, 2 Tbsp. cold milk, remaining sugar and remaining vanilla in medium bowl until blended. Stir in 1-1/4 cups COOL WHIP; spread over ladyfingers in dish.
  • Beat pudding mixes and remaining cold milk with whisk 2 min.; pour over cream cheese layer. Arrange remaining ladyfingers, cut sides up, on top of pudding; brush with remaining coffee mixture. Cover with remaining COOL WHIP.
  • Refrigerate 4 hours. Drizzle with caramel topping just before serving.

This recipe makes a huge batch of tiramisu great for a potluck or picnic. They will think you slaved in the kitchen over this one. For the cake layer, you can use angel food cake, lady fingers or slice up shortcake cups.

3 (5 ounce) packages instant vanilla pudding
3 (8 ounce) packages low-fat cream cheese
1 (8 ounce) container extra thick Cool Whip topping
7 -8 cups milk
1 angel food cake
2 cups coffee
3 tablespoons sugar (approximately)
cocoa powder (to garnish)

Steps:

  • You first want to make the coffee mixture.
  • This can be achieved by brewing about 3-4 tbsp of coffee with about 4 cups of water.
  • Add sugar to the brewed coffee, mix well and chill.
  • Slice up the angel food cake and set aside.
  • Soften the cream cheese in the microwave for approximately 1 minute.
  • Then prepare the pudding as directed(7-8 cups of milk as listed above).
  • You will need an extra large bowl or mix it in a stainless steel pot.
  • Once the pudding is prepared, add the cream cheese and mix well.
  • Fold in cool whip.
  • Pour coffee in a large bowl.
  • Dip each sliced piece of cake in coffee as you make 1 layer in dish.
  • Spoon creamy mixture over top of cake.
  • Then repeat steps to make another layer.
  • Sprinkle with cocoa powder and let chill for at least 4 hours.
  • You can also garnish top with chocolate shavings.
  • Enjoy.

  • Soak the ladyfingers: In a shallow plate combine the coffee and rum together. Dip the ladyfingers in the coffee mixture one at a time and arrange 24 of them in the bottom of an 9×13 inch baking dish. You don’t have to soak them in the coffee for a long time, just briefly dip them on both sides, no more than a second. If you dip them too long, they will disintegrate.
  • Assemble the cake: Spread half of the cheese mixture over the first layer of ladyfingers and repeat with the remaining ladyfingers (dipped in coffee mixture), then cheese mixture.
  • Chill before serving: Cover this and refrigerate it for at least 3 hours to overnight. Dust with cocoa powder just before serving. You can also top with white chocolate shavings.

  • Place a large heatproof bowl over a pot of simmering water, making sure the bowl fits snugly on top of the pan and that the bottom of the bowl isn't touching the simmering water.   • Remove from heat and stir in the mascarpone, a little bit at a time, until the mixture is smooth and the cheese is completely combined. Set aside.
  • In a chilled bowl, whip the heavy cream and confections’s sugar with a handheld electric mixer on medium-speed. Whip until medium-soft peaks form. Then fold the whipped cream into the mascarpone mixture, and stir well to combine.
  • In a small saucepan, combine the hot coffee, chocolate, and cocoa powder. Whisk well to melt the chocolate and evenly combine the ingredients. Then stir in the Kahlua and vanilla. Allow mixture to cool for about 5 minutes.
