CLASSIC SHEPHERD'S PIE (COTTAGE PIE)



Classic Shepherd's Pie (Cottage Pie) image

Shepherd's Pie is warm, hearty, and oh so delicious! This is a recipe the entire family will beg for time and time again!

Number Of Ingredients 15

4 large Russet potatoes (peeled and cubed)
1/4 cup butter
1/4 cup cream cheese
1/4 teaspoon salt
1 to 1 1/2 pounds ground lamb or ground beef
2 tablespoons butter
1 medium white onion (diced)
1/4 cup all-purpose flour
2 cups beef broth
1/4 cup Worcestershire sauce
Salt and Pepper to taste
1 cup frozen peas and carrots
1/2 cup frozen corn kernels
1/4 teaspoon thyme
2 cups cheddar cheese (to top)

Steps:

  • Add potatoes to a large pot of boiling water. Boil the potatoes until soft, 15-20 minutes.
  • Meanwhile, cook ground lamb (or ground beef) in a large saucepan over medium-high heat until browned, about 5 minutes. Add in onion and saute until onion is soft and translucent, about 5 to 7 minutes.
  • Add in 2 tablespoons butter and let fully melt before adding in the flour, stir until well mixed and let cook for 1-2 minutes. Pour in the beef broth and Worcestershire sauce and bring to a simmer. Add in frozen peas, carrots, corn, and thyme. Stir occasionally until the sauce thickens.
  • At this point the potatoes should be done. Drain and mash using either a potato masher or hand mixer. Mix in the butter, cream cheese, and salt until everything is melted.
  • Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9x13 pan. Spread meat and vegetable mixture into the bottom of the pan. Top with a layer of mashed potatoes. Sprinkle cheddar cheese on top.
  • Bake in a 350 degree oven, uncovered, for about 15-20 minutes., until cheese is warm and bubbly.

The Best Classic Shepherd's Pie - AKA Shepards Pie or Cottage Pie. Ground Beef (or lamb) with vegetables in a rich gravy, topped with cheesy mashed potatoes and baked.

2 tablespoons olive oil
1 cup chopped yellow onion
1 lb. 90% lean ground beef (-or ground lamb)
2 teaspoons dried parsley leaves
1 teaspoon dried rosemary leaves
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
2 garlic cloves (-minced)
2 tablespoons all purpose flour
2 tablespoons tomato paste
1 cup beef broth
1 cup frozen mixed peas & carrots*
1/2 cup frozen corn kernels
1 1/2 - 2 lb. russet potatoes (-about 2 large potatoes peeled and cut into 1 inch cubes)
8 tablespoons unsalted butter (-1 stick)
1/3 cup half & half
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup parmesan cheese

Steps:

  • Add the oil to a large skillet and place it over medium-high heat for 2 minutes. Add the onions. Cook 5 minutes, stirring occasionally.
  • Add the ground beef (or ground lamb) to the skillet and break it apart with a wooden spoon. Add the parsley, rosemary, thyme, salt, and and pepper. Stir well. Cook for 6-8 minutes, until the meat is browned, stirring occasionally.
  • Add the Worcestershire sauce and garlic. Stir to combine. Cook for 1 minute.
  • Add the flour and tomato paste. Stir until well incorporated and no clumps of tomato paste remain.
  • Add the broth, frozen peas and carrots, and frozen corn. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.
  • Set the meat mixture aside. Preheat oven to 400 degrees F.
  • Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil. Reduce to a simmer. Cook until potatoes are fork tender, 10-15 minutes.
  • Drain the potatoes in a colander. Return the potatoes to the hot pot. Let the potatoes rest in the hot pot for 1 minute to evaporate any remaining liquid.
  • Add butter, half & half, garlic powder, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.
  • Add the parmesan cheese to the potatoes. Stir until well combined.
  • Pour the meat mixture into a 9x9 (or 7x11) inch baking dish. Spread it out into an even layer. Spoon the mashed potatoes on top of the meat. Carefully spread into an even layer.
  • If the baking dish looks very full, place it on a rimmed baking sheet so that the filling doesn't bubble over into your oven. Bake uncovered for 25-30 minutes.** Cool for 15 minutes before serving.

2 ½ pounds russet potatoes (or Yukon gold potatoes)
3 tablespoons unsalted butter
½ cup whole milk
¼ cup sour cream
¾ teaspoon salt
¼ teaspoon black pepper
1 pound ground beef (or ground lamb)
1 small yellow onion (finely chopped)
3 cloves garlic (minced)
16 ounces frozen mixed vegetables (such as carrots, corn and peas; about 3 cups)
2 tablespoons all-purpose flour
2 tablespoons tomato paste
1 cup low sodium beef broth (plus more as needed)
1 tablespoon Worcestershire sauce
½ teaspoon paprika
½ teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
½ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Scrub the potatoes under cool water; peel (you do not need to peel if using Yukon golds). Chop into 1-inch pieces and place in a pot of cold water.
  • Place the pot on the stove and bring to a boil over high heat. Boil potatoes for 12-15 minutes, until very tender when pierced with a fork, but not falling apart. (While the potatoes cook, you can prepare the meat filling.) Transfer potatoes to a colander and drain well.
  • Return potatoes to the empty pot or place them in a large bowl. Add the butter pieces to the potatoes in the pot. Use a potato masher or hand mixer to mash the potatoes.
  • Add the milk, sour cream, salt and pepper. Stir or mix with a hand mixer. Taste and adjust seasonings as needed. Set aside.
  • Preheat oven to 400° F.
  • Heat a large skillet over medium-high heat. Add the ground beef and chopped onion to the pan and cook, breaking up the meat, until the beef is browned. Drain off excess grease.
  • Reduce the heat to medium. Add the garlic, frozen vegetables, flour and tomato paste. Cook stirring, for 1-2 minutes.
  • Add the beef broth, Worcestershire sauce, paprika, thyme, salt and pepper. Stir. Bring to a low simmer and cook for 10 minutes (reduce the heat as needed to keep it at a low simmer), until most of the liquid is gone. If the meat looks dry, you can add a little more broth. You want it to have some moisture, but do not want it soupy. Then remove pan from the heat.
  • Transfer the meat mixture to a 9x13-inch baking dish. Spoon the mashed potatoes over the top and then spread into an even layer. Use a fork to make some textured ridges on the mashed potatoes; these will crisp and brown in the oven.
  • Bake uncovered for 25-30 minutes until potatoes are golden brown on the edges. (Place a rimmed baking sheet on the rack below to catch any drips.) If desired, broil for 1-3 minutes to brown the potatoes in spots. Let stand for 5 minutes and then serve.

No-fuss shepherd's pie image

We've got some lovely twists on shepherd's pie on the site, but we were missing a definitive version of this classic family recipe - here it is!

1 tbsp sunflower oil
1 large onion, chopped
2-3 medium carrots, chopped
500g pack lamb mince
2 tbsp tomato purée
large splash Worcestershire sauce
500ml beef stock
900g potatoes, cut into chunks
85g butter
3 tbsp milk

Steps:

  • Heat 1 tbsp sunflower oil in a medium saucepan, then soften 1 chopped onion and 2-3 chopped carrots for a few mins.
  • When soft, turn up the heat, crumble in 500g lamb mince and brown, tipping off any excess fat.
  • Add 2 tbsp tomato purée and a large splash of Worcestershire sauce, then fry for a few mins.
  • Pour over 500ml beef stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.
  • Meanwhile, heat the oven to 180C/fan 160C/gas 4, then make the mash. Boil the 900g potato, cut into chunks, in salted water for 10-15 mins until tender. Drain, then mash with 85g butter and 3 tbsp milk.
  • Put the mince into an ovenproof dish, top with the mash and ruffle with a fork. The pie can now be chilled and frozen for up to a month.
  • Bake for 20-25 mins until the top is starting to colour and the mince is bubbling through at the edges. (To bake from frozen, cook at 160C/fan 140C/gas 3 for 1 hr-1 hr 20 mins until piping hot in the centre. Flash under the grill to brown, if you like.)
  • Leave to stand for 5 mins before serving.

  • brown ground beef adding salt, pepper, and cumin to taste, add minced onion and garlic. drain off fat. when beef has browned and onion,mushrooms, and garlic have softened remove from heat. prepare instant potatoes. layer the bottom of a casserole dish with ground beef mixture. top ground beef with corn,green beans, and peas. top the whole shebang with the mashed potatoes.sprinkle potatoes with paprika. top potatoes with the shredded cheddar. bake at 350 degrees for 40 minutes. broil for 2 minutes to brown. crack your beer and enjoy this tasty old school dish!
