TINA'S FAMOUS FAMILY REUNION POTATO SALAD
The whole Cole Family loves it and I can not make enough of it.

Steps:
- In extra large bowl mix together mayo, pickle juice, salt, pepper, and onion powder. Add potatoes, eggs, and pickles. Mix well. Refrigerate for 4 hours or longer. Mix and Enjoy.
AUNT TC'S POTATO SALAD

- Fill a large stockpot with heavily salted water and the potatoes and bring to a boil. Cook until tender, 20 to 25 minutes. Drain the potatoes and quarter when cool enough to handle.
- Mix together the relish, mustard, garlic powder, onion powder, smoked paprika, eggs, onion, bell pepper, 3 cups mayo and a pinch of salt and pepper in a large bowl. Add the potatoes and toss until combined. Add additional mayo if the salad looks dry. Sprinkle with smoked paprika. Serve immediately or cover and refrigerate until ready to eat.
POTATO SALAD REUNION
From A Little Taste of Texas cookbook. This is my favorite potato salad and since I don't like hard-boiled eggs, I leave those out of the recipe when I make this particular dish. This is a very creamy potato salad.

Steps:
- Boil potatoes until tender.
- While still warm, dice potatoes.
- Pour Italian dressing over potatoes.
- Chill several hours.
- Add onions, eggs, celery, pimento and pickle relish and toss.
- Then add mayonnaise, sour cream, mustard and all other seasonings, except Paprika, and fold into potato mixture.
- Refrigerate.
- Garnish with Paprika.

- Cook potato: Bring a large pot of water to the boil and add salt. Add potato. Bring it back up to the boil, then cook for 5 minutes or until just soft. Keep an eye on them – sliced potatoes cook quickly, and if they overcook they will break when tossing.
- Drain and marinate: Drain potatoes, then transfer them to a bowl. Handle gently – the shape of these potatoes make them prone to breaking while hot (they're firmer when cool). Pour over 3/4 of the dressing, add eschalots and toss very gently. Set aside to marinate for 30 minutes.
- Cook bacon: Place bacon in a cold non-stick pan then turn the stove to medium high. As the pan heats, the bacon fat will melt so there's no need for oil! Cook bacon, stirring constantly (to avoid spitting!), until golden or to your taste. Drain on paper towels.
