Steps:
- Heat oil in deep-fryer or heavy deep skillet to 375 degrees F (190 degrees C).
- In a medium bowl, whisk together the evaporated milk, sugar, salt, water and egg. Gradually mix in the flour.
- Dip a rosette iron into the batter, then into the hot oil. Fry until golden, and drain on paper towels. Dust with confectioners' sugar before completely cool.

- Heat the oven to 180C. Heat oil in a large pan, add the onion and leek and cook gently for 8 mins, stirring until softened. Add the garlic and cook for a couple of mins. Cool, then tip into a large bowl.
- Add the breadcrumbs, pine nuts, lemon zest and juice,sage and thyme and season with salt and ground black pepper. Add egg yolk and mix together.
- Place eight 5cm rings on a parchment lined tray and spoon in the pine-nut mixture. Top each timbale with a sage leaf and cook for 15-20 minutes, until golden.

PASTA TIMBALE

- In a small saucepan melt butter over medium heat. Add flour and cook, stirring, about 2 minutes until it starts bubbling but does not colour.
- Gradually whisk in the hot milk. Continue whisking for about 4 minutes until it thickens.
- Season with salt and pepper.
- Pour the sauce into a bowl. Cover the bowl with plastic wrap. Make sure to place wrap directly on the surface of the sauce so a skin does not form. Set aside.
- Heat olive oil in a saucepan over medium heat. Add onion and garlic and cook for about 4 minutes until soft.
- Add the tomatoes. Partially cover and simmer for about 45 minutes or until sauce is very thick.
- Stir in the basil. Season with salt and pepper and set side.
- Put 1¼ cups of the flour into a large bowl. Make a well in the centre of the flour and crack the eggs into the well.
- With your hands, gradually mix the flour into the eggs until dough forms.
- Turn out onto a lightly floured surface. Knead the dough a few times until you have incorporated as much of the remaining 1/4 cup of flour as possible. The dough will appear lumpy and dry.
- Cut the dough in half and put one ball under a slightly damp towel.
- Flatten the other piece with your hand.
- Set a pasta roller at thickest setting and feed dough through rollers.
- Fold dough into an envelope shape and feed through machine again. Repeat 3 or 4 more times or until your dough looks smooth.
- Reduce the pasta setting by one mark and pass through again. Reduce setting by one mark for each pass through until dough has passed through all settings.
- Cut the sheet of dough in half and put the 2 sheets under a sheet of plastic wrap.
- Repeat the entire process with the second dough ball. You now have 4 sheets of pasta under plastic.
- Bring a pot of salted water to a boil. Cook the pasta sheets in the boiling water for about 1 minute each or until al dente.
- Lay them on a well-oiled baking sheet. Do not over-lap the sheets. Spread some more olive oil on top of each pasta sheet.
- Preheat the oven to 350 degrees F.
- Put one pasta sheet in the centre of a 5 inch deep, 8 inch circular baking dish. Drape the edges of the pasta over the sides. Press pasta sheet into the edges of the baking dish. Repeat with the remaining pasta sheets. The entire bottom and sides of the baking dish should be covered with pasta and the sides of the pasta sheets should be hanging over the sides of the baking dish.
- Cut eggplant into 1/4 inch thick diagonal slices. Brush with oil and grill. Season the eggplant with salt and pepper.
- In a large bowl toss the cooked rigatoni with the tomato basil sauce and parmigiano regiano cheese.
- Spread half the rigatoni on top of the fresh pasta sheets in the baking dish.
- Overlap half of the eggplant slices over the rigatoni.
- Spread half the béchamel on the eggplant slices.
- Top the béchamel with the rest of the rigatoni.
- Place the mozzarella slices on top of the rigatoni.
- Sprinkle with chopped basil.
- Layer with remaining eggplant slices.
- Pour over remaining béchamel sauce.
- Fold the overhanging pasta sheet ends over on top of the dish to seal.
- Brush the top with more olive oil.
- Bake for about 25 minutes until golden. Remove from oven and let the timbale rest for 15 minutes.
- Flip timbale onto a platter and unmould. Cut the timbale into wedges to serve.
RISOTTO TIMBALE
You will need a medium-size 1 1/2 to 2-quart-capacity baking mold or oven-safe bowl to prepare this Neopolitan classic - Sartu. Traditionally the labor is intensive, including rolling and frying mini meatballs to fill this rice dome. Here, an easy rich meat sauce is prepared and layered then topped with peas and mozzarella. It's impressive to be sure and can be prepared a few days ahead and baked off the night you wish to serve. Serve with something as simple as a salad of romaine, radicchio and endive, tossed with balsamic vinegar and olive oil.

- For the risotto: Heat the stock with 1 1/2 cups water and the saffron and keep warm. Heat 2 turns of the pan EVOO in a pot and cook the pancetta to render, 3 minutes. Stir in the garlic and onions and cook until softened, 3 to 4 minutes, and then add the rice and toast 1 minute. Pour in the wine and cook until evaporated, then begin adding the warm saffron liquid a few ladlefuls at a time, stirring frequently to develop the starches. The risotto will take exactly 18 minutes time from first addition of liquids. Stir in the cheese and butter and remove from the heat. For the meat and mushroom filling: Heat the stock in a small pot along with the mushrooms, and chop once reconstituted (keep the liquid). Melt 2 tablespoons of the butter in a large skillet and cook the onions to a light caramel color, then transfer to a plate. Melt the remaining 1 tablespoon butter, raise the heat slightly and stir in the chicken livers. Sprinkle with the thyme, some salt and pepper and cook 3 to 4 minutes. Pour in the sherry and transfer the livers to a plate. Pour the EVOO into the center of the skillet. Once the oil is hot, brown the beef and sausage, breaking up the meat as it cooks. Stir in the garlic and cook 1 to 2 minutes. Return the onions and livers to the skillet along with the tomato paste, mushrooms and mushroom soaking liquid. Simmer over low heat to thicken and combine the flavors, about 3 minutes. To assemble: Preheat the oven to 400 degrees F. Mix together the mozzarella, peas, basil and tomatoes in a small bowl. Grease a baking mold or ovenproof bowl with butter and dust with breadcrumbs. Fill the mold evenly with half of the risotto and top with the meat sauce. Create a small well in the center, and fill with the mozzarella, peas and tomatoes. Layer the rest of the risotto on top and smooth the surface. Dot the top with butter and remaining breadcrumbs. Bake 45 minutes. Let cool on a rack while in the mold 15 minutes before loosening the edges with an offset knife. Place a plate on top of the mold, invert, and serve.
EGGPLANT TIMBALE

- Place a grill pan over medium-high heat or pre-heat a gas or charcoal grill. Using a pastry brush, lightly brush the eggplant slices with 1/3 cup olive oil and sprinkle with salt and pepper. Grill the eggplant until tender and colored with grill marks, about 4 minutes per side. Set aside.
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.
- Meanwhile, warm the 2 tablespoons of olive oil in a large skillet. Add the onion and saute until tender, about 3 minutes. Add the beef and pork, and brown the meat, breaking it into bite-sized pieces with a wooden spoon, about 5 minutes. Add the Marsala and cook until the liquid has evaporated, about 3 minutes. Turn off the heat. Add the peas and marinara sauce and stir to combine. Add the cheeses, basil, and cooked pasta. Set aside.
- Preheat the oven to 350 degrees F. Line the springform pan with the grilled eggplant. Be sure that the slices overlap and hang over the edge of the pan. Fill the pan with the pasta mixture, pressing down to make sure the pan is filling up evenly. Fold the eggplant slices up over the top of the pasta and add a few more slices on top to completely enclose the timbale. Bake the timbale until warmed through and the cheese has melted, about 30 minutes. Let rest on the counter for 10 minutes to set. To serve, invert the timbale onto a serving plate and remove the springform pan. Sprinkle the remaining 1/4 cup grated Pecorino Romano cheese over the top. Slice and serve.
PASTINA TIMBALE

- Bring a large pot of salted water to a boil over high heat. Brush 8 (12-ounce) ramekins or 1 large oven-safe bowl with butter and set aside.
- Heat 1 tablespoon of olive oil in a saucepan and saute sausage until browned.
- Meanwhile, combine 2 tablespoons of the oil and the minced garlic in a medium skillet over medium heat. Cook until the garlic is light brown, about 2 minutes, stirring occasionally.
- Add the bread crumbs to the skillet and stir them every minute for 3 to 5 minutes until the crumbs are lightly toasted. Season with salt and pepper. Add 1/4 cup of the parsley and 1/4 cup of the Parmesan. Cook for 30 seconds.
- Pour the bread crumb mixture into the prepared ramekins or bowl and press around the sides to line with the bread crumb mixture, using your fingers to evenly distribute it along the bottom and up the sides.
- While the Pastina Timbale Sauce is simmering, cook the pastina in the boiling salted water until just shy of al dente, about 9 minutes. Drain the pastina in a colander.
- Reheat the sauce, if needed, and add the drained pastina and then the browned sausage. Add the remaining 1/4 cup of parsley, and remaining 3/4 cup Parmesan. Season with salt and pepper, to taste. Stir to combine. Transfer the pastina mixture to the lined ramekins (1 1/4 cups per ramekin) or large bowl. Allow to cool for 10 minutes.
- Invert the molded pastina timbale onto warmed individual serving plates, and serve.
- Preheat oven to 400 degrees F.
- In a bowl, toss tomatoes and whole jalapeno chiles with 1 tablespoon of the olive oil; season with salt and pepper, to taste. Place tomato mixture on a cookie sheet and roast in oven for 15 or 20 minutes or until slightly browned. Remove from heat and finely chop the tomatoes. Transfer tomato pulp and any juices from the cutting board to a bowl. Chop the chiles and taste to determine their heat.
- Heat the remaining 2 tablespoons olive oil in a large saute pan over medium heat until hot. Add the onion, season with salt, and saute until softened, about 2 minutes. Add the garlic and oregano and stir. Add the chiles and simmer for another minute, only adding as much jalapeno as you want for spice. Add the tomatoes and their juice and bring to a boil over high heat. Lower the heat to medium and simmer until thickened, about 10 minutes. Add the vinegar and stir in the Gorgonzola. Stir in the roasted peppers and the parsley. Season, to taste, with salt and pepper. Keep warm until ready to serve.
VEGETABLE TIMBALES
Steps:
- Preheat the oven to 375 degrees F. Prepare 1 batch of corn custard and set aside. Dry roast all the vegetable rounds until wrinkly, but not too brown. Let cool. Meanwhile, spray 8 souffle dishes with pan coating. Line the edges of the dishes with the leeks horizontally. Arrange 3 to 4 carrot rounds on the bottom of each dish making a "flower." Follow layers in this order: zucchini, tomatoes, eggplant, yellow squash, and red peppers. Place the rounds in concentric circles fully covering the previous layer.
- Ladle the corn custard over the entire timbale. Once the custard is up to the lip, cover with spinach leaves. Press the leaves lightly into the custard to coat.
- Cover with foil and bake until the custards reach a temperature of 150 degrees F.
- Put corn in a bowl. In a separate bowl, beat the eggs with the cream, just enough to blend and add to the corn. Add the remaining ingredients and blend. Pour over timbales and bake.
AUBERGINE TIMBALES WITH GOAT'S CHEESE

- Put oil in a large frying pan to cover the base, and heat. Fry the aubergine until softened, 2-3 mins . Season, then drain on paper towel. You may have to do this in batches.
- For the filling, add 2-3 tbsp oil to the pan and fry the pepper, courgette, shallots and garlic over a high heat until they have a good colour, 3-5 mins. Stir in the balsamic vinegar and cook until evaporated. Add the tomatoes and season, then cook for 3 more mins stirring occasionally until the mixture is softened, but not too saucy. Remove from the heat, then mix in the olives, capers, half the shredded basil and the grated parmesan. Set aside to cool.
- Grease the moulds and line the bases with aubergine slices to fit. Top with veg mixture, more aubergine slices (cut to fit if needed) and a slices of cheese. Repeat the layers, finishing with aubergine. Press lightly to firm. Can be covered with cling film and chilled for up to 1 day.
- To cook and serve: heat oven to 200C/fan 180C/gas 6. Chilled cups will need to come to room temperature first. Place the cups on a tray, uncovered, and bake for 12-15 mins until bubbling. Allow to stand for 10 mins while you toss the spinach and remaining basil with vinaigrette and seasoning and divide between six dinner plates. Scatter over the nuts.
- Loosen the tops of the timbales with a table knife and up-end into the centre of the salad on the plates, shaking the cups to help demould. Top with the parmesan shavings and serve.

- cook spinach according to package directions, drain.
- in a small mixer bowl beat eggs at medium speed until foamy (1 to 2 minutes).
- by hand stir in cooked spinach and remaining ingredients.
- divide mixture between 5 greased 6-oz custard cups. place custard cups on a rack in a 10inch skillet.
- add hot (not boiling) water to just below rack.
- cover, cook over medium heat for 18 to 22 minutes, or until knife inserted in center comes out clean. if water begins to boil, reduce heat to low.
- meanwhile in a 1-qt saucepan melt 2 tablespoons butter.
- add flour, mustard, salt and pepper.
- cook over medium heat until smooth and bubbly (30sec).
- stir in milk, continue cooking, stirring occasionally until sauce comes to a full boil.
- stir in cheese until melted.
- loosen edges of timbales with knife, unmold, serve cheese sauce over timbales.

SPINACH TIMBALE

- Pre heat oven to 180 C (350 F).
- Melt the butter in a pan, saute the onion and cook until soft but not brown.
- Add the spinach and cook for a further 5 minutes until soft, stirring once or twice.
- Add the milk and cream and heat gently without boiling.
- Beat the eggs in a bowl, take the spinach mixture off the heat and add the eggs, cheese, breadcrumbs, nutmeg, salt and pepper.
- Transfer the mixture to a greased 1.1 litre (2 pint) ring mould (Bundt tin) and cover the mould with foil.
- Place the ring mould in a roasting dish that is half filled with hot water.
- Bake at 180 C (350 F) for 1 1/4 hours until it is firm to the touch and a knife inserted in the middle comes out clean.
- Turn the Timbale out onto a flat serving dish and garnish with slices of tomato.

This is a great side for that Mexican or Tex-Mex meal. I don't remember where I got it so I'm saving it here for posterity. I would hate to lose it!

- Preheat the oven to 350°F.
- Lightly grease 4 timbale molds or 4-oz. custard cups.
- In a medium-size heavy saucepan, combine the water, cornmeal, cumin, chili powder and salt.
- Bring to a boil, stirring occasionally over moderate heat.
- Lower the heat, cover and cook, stirring occasionally for 8-10 minutes or until very thick.
- Remove from heat.
- In a medium-size bowl, beat the egg whites until foamy.
- Whisk about a quarter of the hot cornmeal into the beaten whites then slowly pour the whites into the remaining cornmeal mixture, stirring constantly about 1 minute or more, just until thickened.
- divide the mixture among the prepared molds, pressing the surfaces with the back of a spoon.
- Cover loosely with aluminum foil.
- Place the molds in an 8x8x2-inch baking dish filled halfway with hot water.
- Bake for 20-25 minutes or until heated through.
- Let stand for a few minutes to set then run a small spatula or knife around the sides of each mold and invert carefully onto serving plates.
