4 ounces elbow macaroni
2 tablespoons light olive oil
2 tilapia fillets
1 tablespoon lemon juice
⅛ teaspoon dried oregano
1 pinch dried basil
1 pinch dried cilantro
1 pinch salt and ground black pepper
1 tablespoon light olive oil
¼ cup freshly grated Parmesan cheese
1 teaspoon lemon juice
1 pinch garlic powder
1 pinch dried basil
1 pinch dried oregano
1 pinch dried cilantro
1 pinch salt and ground black pepper

Steps:

  • Bring a saucepan of lightly salted water to a boil over medium heat, stir in the macaroni, and return to a boil. Cook the macaroni uncovered, stirring occasionally, until it is cooked through but still firm to the bite, about 8 minutes. Drain well.
  • Meanwhile, heat 2 tablespoons of olive oil in a skillet over medium heat. Sprinkle both sides of the tilapia fillets with lemon juice, oregano, basil, cilantro, salt, and pepper, and lay the fillets in the heated skillet, making sure they don't touch. Sear the fillets for 2 to 4 minutes on each side, until the fish is golden brown on the outside, and opaque and flaky inside.
  • Return the hot, cooked macaroni to the saucepan, and stir in 1 tablespoon of olive oil to coat the pasta. Sprinkle on the Parmesan cheese, stir to mix, and stir in 1 teaspoon of lemon juice, the garlic powder, basil, oregano, cilantro, salt, and pepper. Divide the pasta between two plates, and top each with a tilapia fillet.

1/2 cup reduced-fat Italian salad dressing

Steps:

  • Preheat oven to 400 degrees F.
  • Mix breadcrumbs, parmesan cheese, and garlic powder in a quart size ziploc bag.
  • Pour Italian dressing in a different quart size ziploc bag.'.
  • Place tilapia, one piece at a time, into the bag with Italian dressing and shake.
  • Then put in the bag with the breadcrumb mixture and shake.
  • Repeat with other fillets. Mound any unused breading on top of fish.
  • Bake in 400 degree oven for 20 minutes, until fish is done and topping is browned.

1 cup all-purpose flour
2 large eggs
1 cup Italian-seasoned dry bread crumbs
3 tablespoons grated Parmesan cheese
4 each tilapia fillets

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place butter and garlic into an 8x8-inch microwave-safe baking pan and microwave until butter is melted, about 30 seconds.
  • Place flour in a bowl. Beat eggs together in another bowl. Mix bread crumbs and Parmesan cheese together in a third bowl.
  • Dip fillets in flour until lightly coated, then into beaten eggs, then into bread crumb mixture. Lay in the baking dish with the garlic-butter mixture.

1 cup all-purpose flour
Kosher salt and freshly ground pepper
3 large eggs
6 slices white sandwich bread, torn into pieces
1/3 cup fresh parsley leaves
Finely grated zest of 1/2 lemon, plus lemon wedges for serving
5 to 6 tablespoons extra-virgin olive oil
4 tablespoons unsalted butter
6 cups baby arugula

Steps:

  • Preheat the oven to 425 degrees F. Soak the fish in a bowl with the milk and 2 cups ice, 15 minutes. Meanwhile, mix the flour with 1/2 teaspoon each salt and pepper in a shallow dish. Lightly beat the eggs in another dish. Pulse the bread, parsley, lemon zest and 1/2 teaspoon salt in a food processor until crumbs form, then transfer to a third dish. One at a time, remove the fillets from the milk and dredge in the flour, shaking off the excess. Dip in the eggs, then coat with the breadcrumbs, gently pressing to coat both sides. Transfer to a large plate. Line a baking sheet with foil. Heat 2 tablespoons each olive oil and butter in a large skillet over medium-high heat.
