- Spread bread crumbs on a rimmed baking sheet and place into the oven.
- Preheat the oven to 425°F, toasting bread crumbs while the oven preheats. Timing will depend on the oven, but it should take about 5 to 6 minutes.
- Remove the baking sheet when bread crumbs are lightly golden, stirring once (watch carefully so crumbs don't burn).
- Meanwhile, stir together zest, oil, basil, salt and pepper in a medium bowl.
- Stir in toasted bread crumbs and mix until evenly blended.
- Brush the baking sheet lightly with additional oil.
- Pat fillets dry with paper towels.
- Coat both sides of fillets by pressing into crumb mixture in the bowl and then place them onto the oiled baking sheet.
- Press remaining crumbs on top of fillets. Bake until fish is opaque and flakes easily, about 15 minutes.

Crispy Oven Baked Tilapia soaked in buttermilk and covered with bread crumbs, is the perfect dinner option for busy weeknights. The fish is cooked in about 15 minutes, and it has a fresh and delicious taste.

- Preheat oven to 400 degrees Fahrenheit.
- Add parchment paper to a large rimmed baking sheet. Set aside.
- Whisk together the egg and the buttermilk in a large, shallow bowl. Set aside.
- Add the panko bread crumbs to a large shallow bowl and combine with the remaining ingredients: Italian seasoning mix, dried basil, garlic powder, paprika, red pepper flakes, salt and pepper. Stir to combine.
- Pat dry the fish filets, using tongs or by hand, take a fish filet, dip it into the buttermilk mixture, toss into the breadcrumb mix. Place on the prepared baking sheet. Repeat with the others.
- Ensure the breadcrumb mixture is not soggy or wet after tossing the first filets, if needed add more panko breadcrumbs. For a thicker coating, after the first round of dipping, dip each fish filet again into the buttermilk mixture and breadcrumb mixture. In that case the panko breadcrumb quantity should be doubled.
- Bake for 12-15 minutes or until the coating is golden brown and fish is fork tender. Spray with cooking spray mid baking for the coating to have a shiny, golden brown color.
- Remove from oven, lightly squeeze some lemon juice onto the fish filets and garnish with parsley. Serve with lemon aioli and lemon wedges on the side.

BAKED PARMESAN TILAPIA
Steps:
- Preheat an oven to 425 degrees F (220 degrees C).
- Line an 11-17-inch baking sheet with aluminum foil and lightly spray with cooking spray.
- Mix milk and ranch dressing in a shallow bowl. Place flour in a separate shallow bowl; set aside.
- Whisk together bread crumbs, Parmesan cheese, seasoned salt, black pepper, celery salt, garlic powder, onion powder, paprika, parsley, and basil in a bowl.

- Cut the tilapia into "fingers" by first cutting the fillets in half. Leave the thin sides long, then cut the thicker sides in half on a diagonal so they appear longer.
- Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; the beaten eggs in the second; and the panko in the third.
- Line a baking sheet with aluminum foil. Remove any brown bits out of the pan, add more oil if necessary and continue to cook the fish in batches until done. Season the cooked tilapia fingers with more salt if desired. Serve with lemon wedges and Lemon-Garlic Mayonnaise.
