GRILLED FISH BURGERS
Steps:
- Preheat an outdoor grill for medium-high heat and lightly oil the grate with cooking spray.
- Brush tilapia with lime juice and sprinkle with lemon-pepper.
- Cook on the preheated grill, covered, until fish flakes easily with a fork, 5 to 6 minutes.
- While fish is grilling, combine mayonnaise, Dijon mustard, and honey in a bowl. Spread over bottom half of buns and top with lettuce and tomato. When fish is finished, place on prepared buns and enjoy!

BAKED RANCH TILAPIA BURGERS
These super easy fish burgers are a great, wholesome meal. Assemble buns with whatever you please. I prefer to eat the tilapia with lettuce only but my boyfriend puts ketchup and cheese on his. We always eat this with steamed broccoli and fruit salad.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spread olive oil on a baking sheet.
- Beat egg in a bowl. Mix bread crumbs and ranch dressing mix in a second bowl. Submerge tilapia in the egg, remove, and coat with bread crumb mixture. Place breaded tilapia on the baking sheet.
- Bake in the preheated oven until fish flakes easily with a fork, about 15 minutes. Assemble fillets on hamburger buns and top with lettuce.

- Add the tilapia to a food processor along with lemon zest, salt and pepper. Pulse to chop into small pieces. Take ¾ of the chopped tilapia and transfer to a bowl. Add the Dijon mustard to the food processor and pulse to make a paste (this will be the binder to hold them together). Remove and add to the bowl with the rest of the tilapia. Add the chives and dill, mix well.
- Divide the into 4 equal parts. Take 1/4 and firmly form into a ball, then shape into a patty. Repeat with the rest of the tilapia and refrigerate for 30 minutes (this will prevent them breaking apart when cooking).
- Preheat a cast iron skillet, or non-stick sauté pan over medium high heat and add oil. When the oil starts to ripple carefully place the burgers in the pan, you can work in batches if they don’t all fit. Cook for 4-5 minutes, do not move. When they are browned and lift easily from the pan, they are ready to turn. Cook 3-4 minutes on the other side. Remove.Serve with the tartar sauce.
