Served over zoodles, these meatballs are savory and deliciously non-dairy. They pair perfectly with Tia's Roasted Marinara Sauce.

2 tablespoons extra-virgin olive oil, or more as needed
½ cup soy milk
½ cup old-fashioned oats
1 pound ground turkey
1 large egg, lightly beaten
¼ cup non-dairy Parmesan cheese substitute
1 tablespoon parsley flakes
¾ teaspoon sea salt
½ teaspoon garlic powder
¼ teaspoon ground nutmeg
coarsely ground black pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Drizzle olive oil over a rimmed baking sheet.
  • Combine milk and oats in a small saucepan over medium heat. Cook until milk is very hot, but not boiling. Reduce heat and simmer until mixture is the consistency of oatmeal, 3 to 5 minutes. Remove from heat and let cool for 5 minutes.
  • Combine turkey, egg, Parmesan cheese substitute, parsley, garlic powder, nutmeg, and pepper in a large bowl. Add cooled oatmeal mixture. Stir with a sturdy spoon or spatula until well combined. Form into 28 meatballs and arrange on the prepared baking sheet.
  • Bake in the preheated oven, turning halfway, until cooked through and evenly browned, 25 to 30 minutes.

1/2 cup old-fashioned oats
1/4 cup milk
1/2 yellow onion, finely chopped
1/2 cup fresh baby spinach leaves, chopped
1/4 cup grated Parmesan
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, grated
1 large egg
1 pound ground turkey
4 to 8 tablespoons grapeseed oil
One 28-ounce can crushed tomatoes
2 tablespoons tomato paste
1 tablespoon fresh oregano, chopped
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, chopped
3 tablespoons red wine, optional (for the spicy version)
1 teaspoon red chili flakes, optional (for the spicy version)
Pinch kosher salt
1 pound spaghetti
Chopped fresh parsley, for garnish
Chopped fresh basil, for garnish
Grated Parmesan, for garnish

Steps:

  • For the turkey meatballs: Add the oats to a food processor and pulse a few times. The consistency should resemble breadcrumbs. Add the oats and milk to a small bowl and set aside for 5 minutes.
  • Add the onions, spinach, Parmesan, salt, pepper, garlic and egg to a large bowl and mix well. Add the oat mixture and combine. Lastly, add the turkey and gently fold into the wet mixture. Keep the mixture light by not over-mixing. Form into bite-size balls using a small cookie scoop for uniform meatballs.
  • Heat 4 tablespoons of the oil in a large Dutch oven over medium heat. Add half of the meatballs and brown on all sides, 5 to 7 minutes. Remove and repeat with the second batch, adding more oil if needed. Set the meatballs aside but reserve the Dutch oven for the sauce.
  • For the quick marinara sauce: Add the tomatoes, tomato paste, oregano, salt, pepper and garlic to the Dutch oven and stir. Bring to a boil. Reduce the heat, cover and let simmer for about 10 minutes. Gently add the browned meatballs to the sauce. Do not overcrowd. Simmer until the meatballs are cooked thoroughly, another 10 to 15 minutes. If making the optional spicy version, add the red wine and chile flakes in the last 2 minutes of cooking.
  • Bring a large pot of water to a boil. Season with a generous pinch of salt. Add the spaghetti and cook until al dente, about 8 minutes.
  • Combine some of the sauce with the cooked spaghetti. Plate the spaghetti and meatballs and add the remaining sauce over everything. Garnish with parsley, basil and grated Parmesan. Serve hot.

1 pound peeled and deveined shrimp, ground or chopped finely
2 tablespoons minced lemongrass
2 tablespoons sesame seeds
1 lime, juiced
2 Thai chiles, minced
2 tablespoons minced ginger
2 cloves garlic, minced
3/4 cup fresh Thai basil leaves, chopped
3/4 cup fresh cilantro leaves, chopped
1/2 cup fresh mint leaves, chopped
2 tablespoons soy sauce
1/4 cup fish sauce
1/2 cup breadcrumbs
2 eggs
Olive oil
Carrot shavings, for garnish
Chopped roasted peanuts, for garnish
Peanut Dipping Sauce, recipe follows
1 cup chunky peanut butter
1/2 teaspoon grated ginger
2 teaspoons sesame oil
2 teaspoons soy sauce
1/4 cup hot water
2 tablespoons rice wine vinegar
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the pork, shrimp, lemongrass, sesame seeds, lime juice, chiles, ginger, garlic, basil, cilantro, mint, soy sauce, fish sauce, breadcrumbs and eggs in a large mixing bowl and mix by hand until thoroughly incorporated. Drizzle the olive oil into a 9 by 12-inch baking dish, making sure to evenly coat the entire surface.
  • Roll the mixture into round, golf ball size meatballs, making sure to pack the meat firmly.
  • Place the balls into the oiled baking dish such that all the meatballs are lined up evenly in rows and are touching each of their 4 neighbors in a grid.
  • Roast until firm and cooked through, about 20 minutes. Allow the meatballs to cool about 5 minutes before removing from the baking dish.
  • Garnish with shaved carrots and chopped roasted peanuts. Serve with Peanut Dipping Sauce.

1 green onion, thinly sliced
1 minced clove of garlic
1 egg, lightly beaten
1-ounce fresh bread crumbs
2 tablespoons grated Parmesan cheese, plus extra to serve on the side for grating
1 pound ground turkey or chicken
5 tablespoons olive oil
2 cups tomato sauce (recipe above)
1 pound perciatelli pasta
Salt and pepper to taste
Parmesan cheese-to serve on the side for grating

Steps:

  • Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.

1 medium yellow onion, diced
2 cloves garlic, minced
1 lb ground turkey
1 large egg, beaten
½ cup panko breadcrumbs
½ cup grated parmesan cheese
½ cup fresh parsley, finely chopped
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
pasta, for serving
Sauce, for serving

Steps:

  • Preheat the oven to 400˚F (200°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes.
  • Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, combine the ground turkey, egg, panko, Parmesan, parsley, salt, pepper, and onion mixture. Use your hands to mix until just combined.
  • Shape the turkey mixture into 1½-inch balls (you should have about 14). Place on the prepared baking sheet, spacing 2 inches apart.
  • Bake the meatballs until browned and cooked through, 20-25 minutes.
  • Serve with pasta and sauce of your choice.

Steps:

  • Preheat oven to 350 F.
  • Line 2 baking sheets with foil then lightly spray with oil.
  • Whisk egg, garlic, onions, zest and sauces in big bowl.
  • Add meat, sprinkle with cornstarch and add coriander.
  • Mix with hands, mixture will be wet.
  • Shape into 1 inch balls.
  • Place on prepared sheets.
  • Bake 20 minutes till firm to the touch.
