A simple pan sauce can transform an everyday boneless, skinless chicken breast into a quick and delicious meal. For a finishing touch, garnish with a sprig of thyme.

- Season both sides of chicken with salt, pepper, and dried thyme. Place flour in a shallow dish and dredge both sides of chicken pieces in flour.
- Heat oil in pan over medium-high heat. When oil starts to shimmer, add the chicken. (If the chicken browns too quickly, reduce heat.) Cook, turning as needed, until chicken is browned on both sides, is no longer pink in the center, and the juices run clear, 4 or 5 minutes total on each side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and tent with foil.
- In the same pan, reduce heat to low and add thyme sprigs and cook until aromatic, 1 or 2 minutes. Increase heat to high; pour in Swanson® Chicken Stock and wine. Stir up browned bits to deglaze the pan. Add the chicken bouillon granules and mix well. Reduce heat to medium and cook until sauce reduces and is slightly thickened, about 5 minutes. Remove pan from heat.
- Remove and discard the thyme sprigs. Add to the pan any accumulated juices from the tented chicken plate. Finish the sauce by whisking in the cold butter. Season with salt and pepper to taste.
- Spoon sauce over chicken before serving.

- Preheat oven to 425 degrees, with rack in top third. Line a rimmed baking sheet with aluminum foil; set aside.
- Make glaze: In a large skillet, combine juices, rosemary, garlic, and a pinch each of salt and pepper. Boil over high heat until reduced to 1/2 cup, about 15 minutes, stirring and scraping down sides of skillet with a wooden spoon or heatproof spatula. Strain through a fine-mesh sieve into a liquid-measuring cup; stir in vinegar. Reserve cup glaze for serving.
- Meanwhile, season chicken with salt and pepper. Place, skin side up, on prepared baking sheet; bake 15 minutes, then brush chicken with glaze. Continue baking, brushing with glaze every 5 minutes, until chicken is cooked through, 15 to 20 minutes (an instant-read thermometer inserted in the thickest part, avoiding bone, should register 165 degrees). Let rest 5 minutes; drizzle with reserved glaze. Serve.

- In a medium saucepan, simmer the rice in 2 1/4 cups water, covered, until tender, about 20 minutes.

- Heat the oil in a large frying pan, and cook the fillets for 5 minutes on each side or until they are golden brown.

- In large bowl, mix cold water, salt, peppercorns, smashed garlic and 3 thyme sprigs until salt is dissolved. Add chicken and stir well. Cover with plastic wrap and refrigerate at least 30 minutes but no more than 3 hours.
- Remove chicken from brine and pat dry with paper towels.
- In 10-inch skillet, heat oil over medium-high heat until shimmering and hot. Add chicken, skin sides down, and cook 5 minutes or until golden brown. Use long-handled tongs to turn chicken and cook 5 minutes longer or until golden. Reduce heat to low.
- Simmer uncovered about 20 minutes, without turning, until juice of chicken is no longer pink when thickest part is cut to bone (170°F). Remove chicken from skillet and place on plate, reserving drippings in skillet. Cover tightly with foil; set aside.
- Meanwhile, in small bowl, mix butter and flour with your fingers or a spoon. Knead mixture until it is a smooth paste; set aside.
- Pour out all but 1 tablespoon drippings from skillet. Place skillet over medium heat and stir in onion. Cook 3 minutes, stirring occasionally, or until soft. Add finely chopped garlic and cook 30 seconds, stirring constantly, until fragrant. Stir in tomato paste and cook 1 minute longer.
- Add wine and increase heat to high. Heat to boiling, scraping any browned bits off bottom of skillet. Boil wine 5 minutes or until reduced to about 2 tablespoons.
- Add broth and 1 thyme sprig to skillet. Boil 5 minutes, stirring occasionally, or until reduced by half. Add pomegranate juice and brown sugar. Heat to boiling, stirring pomegranate mixture with wire whisk.
- Pinch off about half of the butter-flour paste. Drop this into boiling sauce and quickly beat in with wire whisk. Repeat with remaining paste, stirring constantly. Heat sauce to boiling and boil 2 minutes, stirring constantly. Serve sauce with chicken.

- 1. If possible, flavor the chicken a day ahead. Mince together in a food processor the thyme, garlic, and onion with the 1T of oil. Rub seasoning over chicken, dusting lightly with salt and pepper. Stack pieces one atop the other, cover, and refrigerate until 30 minutes before cooking. Or just toss the chicken with the seasoning and set aside while you prep the rest of the ingredients. 2. About 20 minutes before serving, line up all the other ingredients. Heat 3 T oil in a 12-inch straight-sided sauté pan over medium high. Spread the chicken pieces out in the pan with all their seasonings and the bay leaves. Keep them from touching. Brown on both sides, 3 to 4 minutes per side. 3. Turn heat to medium low, sprinkle the meat with the bacon, and cook 10 minutes, turning once or twice, or until pieces are just firm when pressed. Add 1 cup of the pomegranate juice and the sugar. Reduce by two-thirds, stirring often. Lower heat to medium- low, return the chicken to the pan, coating pieces with the sauce, and sprinkling with the last ¼ cup of pomegranate juice. 5. Cover and heat through for just 2 minutes. Serve immediately, arranged on a hot platter, napped with the sauce, and sprinkled with the nuts and parsley. THOUGHTS FROM LYNNE Don't add the wine and the pomegranate juice to the pan at once, get it hot and then use that as the sauce. Why not? Because by boiling down the wine, you get rid of most of its alcohol while building deep flavor layers. The same thing happens with boiling down the pomegranate juice... or vinegars, broth, fruit juices, etc. Boil down to almost nothing--you can always dilute if need be
