This recipe for Roasted Green Beans with Almonds is a simple and classic way to prepare green beans for a side dish.

1 1/2 pounds green beans, trimmed
1 clove garlic, minced
¼ cup sliced almonds
1 1/2 tablespoons olive oil
1 teaspoon chopped fresh thyme
½ teaspoon salt, or to taste

Steps:

  • Preheat oven to 425 degrees.
  • Toss beans, garlic, almonds, oil, thyme and salt in a large bowl. Spread out on a large rimmed baking sheet and roast, stirring the beans once or twice until the beans are softened and blistered in spots and the almonds are browning, 15 to 17 minutes.

2 pounds fresh green beans, trimmed
2 tablespoons butter
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup slivered almonds, toasted

Steps:

  • Place beans in a steamer basket. Place in a large saucepan over 1 in. water; bring to a boil. Cover and steam for 10-12 minutes or until crisp-tender. , In a large skillet, melt butter; add the beans, thyme, salt and pepper. Cook and stir for 5 minutes or until heated through. Sprinkle with almonds.

2 pounds (fresh or frozen) green beans, trimmed
1/4 cup (1/2 stick) butter
1 tablespoon Dijon mustard
1 teaspoon garlic salt
2 tablespoons fresh thyme, chopped
1/3 cup slivered almonds, lightly toasted

Steps:

  • Boil the green beans: Cook the green beans in a large pot of boiling salted water (1 1/2 teaspoons of salt for every quart of water) until just crisp-tender, about 5 minutes.
  • Shock the green beans in ice water: Drain the beans and transfer them to a large bowl of ice water, cooling them completely. (The ice water will shock the beans into a vibrant green color.) Drain the beans well. At this point you can make the beans a day ahead and store in refrigerator. Alternatively you can steam the beans for 5 minutes and proceed directly to the skillet.
  • Sauté beans with butter and thyme: Melt the butter in a large, heavy skillet over medium high heat. Whisk in half of the fresh thyme (1 Tbsp), the Dijon mustard and garlic salt into the butter. Add the beans to the skillet and toss until heated through, about 4 minutes. Transfer to a serving bowl.
  • Sprinkle with toasted almonds: and the remaining 1 Tbsp of thyme.

1 pound fresh green beans, cut into 2-inch pieces
1/2 cup water
1/2 teaspoon salt
1/4 cup finely chopped onion
2 tablespoons butter
1 tablespoon minced fresh parsley
1 tablespoon lemon juice
3/4 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/8 teaspoon paprika

Steps:

  • In a 3-qt. saucepan, combine beans, water and salt; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until tender., Meanwhile, in a small saucepan, saute the onion in butter until tender. Add parsley, lemon juice, thyme and paprika. Drain beans; add butter mixture and toss to coat.

Drain well. (At this point you can make the beans a day ahead, store in refrigerator.) Alternatively you can steam the beans for 5 minutes and proceed directly to the skillet.
  • Melt 1/4 cup of butter in a heavy large skillet over medium hight heat. Whisk in 1 Tbsp of fresh thyme, 1 Tbsp of mustard and 1 teaspoon of garlic salt into butter. Add beans to skillet and toss until heated through, about 4 minutes. Transfer to serving bowl. Sprinkle with toasted almonds and remaining 1 Tbsp of thyme.
