Breakfast Sandwich Cookies image

Provided by Valerie Bertinelli

Time 50m

Yield 18 cookies

Number Of Ingredients 13

1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for serving
4 ounces cream cheese, at room temperature
1 large egg
2 cups all-purpose flour
1 tablespoon dried chives
1 1/2 teaspoons baking powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper, plus more for garnishing
1 cup grated white Cheddar
1/2 cup chopped cooked bacon
Your favorite jam for serving, optional

Steps:

  • Preheat the oven to 375 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Add the butter and cream cheese to a large bowl, using a hand mixer, beat on medium-high speed until light and fluffy, about 30 seconds. Scrape down the bowl and add the egg and beat again until combined.
  • In a separate medium bowl, add the flour, chives, baking powder, garlic powder, onion powder, salt and pepper. Add the flour mixture to the butter mixture and beat to combine. Fold the cheese and bacon in by hand.
  • Spoon a 2 tablespoon sized ball onto the prepared baking sheet and gently press to slightly flatten. Sprinkle on a pinch of pepper. Repeat with the remaining dough.
  • Bake until lightly golden, about 25 minutes. Serve with room temperature butter and jam if desired.

COCONUT-CHOCOLATE CHIP COOKIES

Coconut-Chocolate Chip Cookies image

Categories     dessert

Time 2h

Yield about 3 1/2 dozen cookies

Number Of Ingredients 10

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups coconut sugar (see Cook's Note)
1 stick (8 tablespoons) unsalted butter, at room temperature
2 large eggs, at room temperature
1 tablespoon vanilla extract
1 1/2 cups bittersweet chocolate chips
1 cup finely shredded, unsweetened coconut

Steps:

  • Add the flour, baking powder, baking soda and salt to a large bowl and whisk to combine. Set aside.
  • Add the coconut sugar and butter to the bowl of a stand mixer fitted with the paddle attachment. Beat together until light and fluffy, scraping down the sides of the bowl as necessary, about 2 minutes. Add the eggs, one at a time, being sure to fully incorporate before another addition. Once incorporated, add the vanilla and beat to combine. Add in the flour mixture and beat until no more flour spots are visible. Fold in the chocolate chips and coconut by hand. Cover the bowl and refrigerate for at least 2 hours or up to overnight.
  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Scoop out a 2-tablespoon size portion of dough and roll it into a ball. Place the dough ball on the prepared baking sheet. Continue scooping and rolling until you have about 10 to 12 cookies per sheet, leaving 2-inches between them. Bake until the edges have set, but the center is still soft, about 14 minutes.
  • Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. Let the baking sheets cool completely and bake the remaining dough. (Alternatively, the remaining cookie dough can be wrapped and frozen for up to 1 month.)

  • In the bowl of a stand mixer fitted with the paddle attachment, or using a handheld electric mixer, beat the butter on high until light and fluffy, about 2 minutes. Add the granulated sugar, orange zest, fresh thyme, salt and pepper and mix again for another minute. Scrape down the sides of the bowl with a rubber spatula, as needed.
  • With the mixer running on low, slowly add in the flour, followed by the fresh orange juice. Pack the dough tightly into a ball, separate it into 2 pieces and wrap each piece tightly in plastic wrap, placing them in the fridge to chill for at least 1 hour, but preferably 3-4 hours.*
  • Preheat the oven to 350 F and line a baking sheet with parchment paper. Lightly flour a surface and roll out one of the discs of dough to about a 1/4″ thickness. Use mini cookie cutters to cut out the shapes of dough, then place the cookies on the prepared baking sheet, about 1 inch apart. Repeat with remaining dough and second disc of dough.
  • Bake the cookies for 9-10 minutes, or until the cookies are very lightly browned on the edges. Allow the cookies to cool for 5 minutes on the pan before removing to a wire rack to cool completely. Serve immediately!
