THREE SISTERS CASSEROLE

Three Sisters Casserole image

"Three Sisters" refers to the Native American practice of growing beans, corn, and squash together. This casserole can also be made ahead and frozen, if desired. I've not yet tried this recipe, so as soon as I do I'll be back to modify the directions for a quicker cooking polenta.

Categories     One Dish Meal

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 14

1 1/2 cups yellow cornmeal
1 tablespoon chili powder
1/2 teaspoon salt
2 tablespoons olive oil, divided
1 small onion, chopped
1 large red bell pepper, chopped
1 lb kabocha squash, peeled and cut into 1-inch dice
1 (15 ounce) can diced tomatoes with green chilies
1 (15 ounce) can pinto beans, rinsed and drained
1 cup frozen corn kernels, defrosted
2 garlic cloves, minced
1 teaspoon ground coriander
1 teaspoon ground cumin
salt

Steps:

  • Polenta Topping:.
  • Whisk together cornmeal, chili powder, and salt with 4.5 cups water in a large double boiler. Cook 40 minutes, or until polenta is thick and stiff, stirring 3 or 4 times. Remove from heat.
  • Filling:.
  • Preheat oven to 375°F Heat 1 tbs oil in large saucepan over medium heat. Add onions and cook until softened. Add bell pepper and cook 5 minutes more, stirring often.
  • Stir in squash, tomatoes, garlic, coriander, and cumin. Cook 5 minutes stirring occasionally. Add 1/2 cup water and some salt, bring mixture to a boil. Reduce heat and simmer, partially covered, for 10 to 15 minutes or until squash is tender. Stir in beans and corn and cook 2-3 minutes more, until slightly thickened.
  • Coat a 9x11 baking dish with cooking spray. Spread 2 cups of the polenta over the bottom of the dish. Spoon filling over the polenta. Smooth remaining polenta over the top.
  • Score the top of the casserole into 6 squares and brush the top with the remaining tablespoon of olive oil.
  • Bake 30 minutes, or until heated through and the top is lightly browned.

THREE SISTERS CASSEROLE

Three Sisters Casserole image

A hearty and nutritious vegetarian casserole that feeds a crowd. I've also made it non-vegetarian by adding a pound of ground beef with the onions and garlic. I plan on trying it with chicken breast as well. Adapted from Cook it Light Pasta, Rice, and Beans by Jeanne Jones (1994).

Provided by Chef Sandra J.

Categories     One Dish Meal

Time 55m

Yield 12 serving(s)

Number Of Ingredients 12

1 1/2 teaspoons cumin seeds
2 tablespoons olive oil
2 large onions, finely chopped
2 garlic cloves, minced
2 carrots, scraped and chopped
1 jalapeno pepper, seeded and finely chopped
1 (28 ounce) can tomatoes, undrained
1 1/2 cups frozen corn
3 medium zucchini, diced
8 ounces penne, cooked al dente
1 (16 ounce) can red kidney beans, rinsed and drained
4 ounces sharp cheddar cheese, shredded

Steps:

  • In a large non-stick skillet heat cumin seeds over low heat until aromatic.
  • Add olive oil, onion, and garlic and saute until the onion is soft and translucent.
  • Add the carrots, jalapeno, and tomatoes with juice and heat to boiling.
  • Reduce heat and simmer uncovered for 15 minutes.
  • Add the corn and zucchini and simmer 5 more minutes.
  • Add the cooked pasta and the beans and mix well.
  • At this point you can put the mixture into a 4 quart casserole, add cheese on top, and put in a 350 degree oven for about 5 minutes until the cheese melts. We usually just sprinkle cheese on top while it's still in the skillet. No sense in dirtying another dish :).

  • Preheat oven to 375 degrees F. Put a kettle of water on to heat for the water bath. Coat an 8-inch-square baking dish with cooking spray.
  • Whisk masa, oregano, baking powder, thyme, salt and pepper in a large bowl. Add 2 cups water and beat with an electric mixer until combined. With the mixer on low speed, add more water, 1 tablespoon at a time, until the mixture is the consistency of thick pancake batter. Add oil and butter. Increase mixer speed to medium-high and continue beating, scraping down the sides, for 4 minutes more.
  • Spread half the batter in the prepared baking dish. Evenly scatter shrimp on top, then cover with the remaining batter, smoothing it evenly to the sides. Place the baking dish in a larger pan, transfer to the oven and pour boiling water into the larger pan to about halfway up the sides of the baking dish. Cover both pans with a piece of foil. Bake until set, 45 minutes to 1 hour. Let stand, covered, for 10 minutes. Serve each portion with 2 tablespoons Three Sisters Black Mole, or to taste.

  • Simmer the filling: Cover the pot and reduce heat to low. Simmer for 15 to 18 minutes, or until squash is tender.
  • Make the cornbread topping while the filling simmers: In a medium mixing bowl, whisk together cornmeal, flour, baking powder, and salt. Using a wooden spoon, slowly stir in the butter, milk, and water; mix only until just combined. Set aside and let it sit for ten minutes or so, while the filling simmers.
