SEEDED FLATBREADS

Moroccan-style breads with nigella and sesame seeds, great for wrapping and dipping

Provided by Cassie Best

Categories     Dinner, Side dish

Time 1h15m

Yield Makes 12

Number Of Ingredients 7

7g sachet dried yeast
1 tsp caster sugar
400g strong white bread flour
200g wholemeal bread flour
oil , for greasing
1 tbsp kalonji seeds (also called black onion seeds or nigella seeds)
2 tbsp sesame seed

Steps:

  • Mix the yeast with 2 tbsp warm water and sugar, and leave for a few mins. Tip the flours into a large bowl with 1 tsp salt and make a well in the centre. Pour in the yeast mixture and 500ml warm water. Mix with a wooden spoon until it comes together as a dough, then tip onto a work surface and knead for 5-10 mins until smooth and elastic - add a little extra flour if the dough is too sticky. Put the dough in an oiled bowl, cover with a tea towel and leave in a warm place to rise for 1 hr until doubled in size.
  • Tip the dough onto your work surface and knock out all the air. Knead the seeds into the dough until well distributed. Divide the dough into 12 pieces, then roll out each as thinly as you can. Heat a large frying pan, cook the flatbreads for 2 mins or until bubbles appear on the surface, then flip over and cook for 2 mins more. Once all are cooked, wrap in foil and keep for up to a day. Pop in a warm oven to reheat.

SEEDED FLATBREAD

We love the wonderful nutty flavor of this bread and wanted to replace the sandwich rounds I was still buying. When sliced, they're the perfect size for a tuna sandwich or for toasting with butter and jam. Store in a plastic bag.

FLAXSEED BREAD

Flaxseed Bread image

Provided by PetraScott

Number Of Ingredients 6

2 1/3 cups + 1 Tbsp. golden flaxseed meal*
1 cup warm or hot water
1 Tbsp. baking powder
1 tsp. baking soda**
1 tsp. apple cider vinegar**
1/2 tsp. salt

Steps:

  • Preheat the oven to 360°F/180°C.
  • Grind the flaxseeds into very fine flour. Ideally, sift the flaxseed flour to make sure there are no actual "seeds".
  • In a large mixing bowl, mix together the flaxseed meal, baking powder, baking soda, and salt. Add the apple cider vinegar and water, and stir until the flaxseed meal becomes sticky and holds together in a lump, for about 30 seconds. Then use your hands to roughly form the dough into a loaf shape. (Don't over-knead the dough. Handle it as little as possible). The loaf should have a nice smooth surface.
  • Place the loaf into a greased (or parchment paper-lined) loaf pan. The bread fits perfectly into a 1-pound loaf pan (8.5" x 4.5"). However, if you only have 1.5-pound loaf pan (10" x 5") - like I do - it will work just fine. (If you're working with the larger size loaf pan, form the loaf, place it into the loaf pan, but don't press it into the corners). You can also use a baking sheet lined with a piece of parchment paper. The bread holds its shape during baking really well, so the loaf pan is not necessary.
  • Mist with water and sprinkle some seeds on top (I use a mix of flaxseeds, sesame seeds, and sunflower seeds). Gently press down on the seeds with your palm to make them stick better.
  • Note: if you watched the video that goes with this recipe, I said that I let the bread rest, covered, for a few minutes. Well, if you're using the baking soda, you want to do the opposite. When you mix baking soda (base) with apple cider vinegar (acid), you get a chemical reaction. A product of this reaction is carbon dioxide, producing a lift in your baked goods. The reaction starts as soon as the base and the acid are mixed. So, get the bread in the oven immediately after you mix the two, before the reaction tapers off.
  • Bake the bread for 60 minutes. The crust should be golden brown (if using golden flaxseeds).
  • Remove the bread from the oven and let it cool inside the loaf pan for 10 minutes. Transfer the bread on a cooling rack, and let it cool completely before slicing.
  • Store the flaxseed bread in an airtight container in the refrigerator for 7 days. For longer term storage, freeze in an airtight container for up to 3 months. I like to slice the bread prior to freezing, but you can freeze the whole loaf as well.

SIMPLE SESAME FLATBREADS

Simple sesame flatbreads image

These simple flatbreads are an impressive addition to any sharing platter. They're surprisingly easy to cook and need just a handful of ingredients

Provided by Cassie Best

Time 1h10m

Yield makes 6

Number Of Ingredients 4

300g self-raising flour , plus extra for dusting
250g natural yogurt (buy a 500g pot and save the rest for lamb meatballs, see goes well with)
4 tbsp sesame seeds
1-2 tbsp vegetable oil

Steps:

  • Tip the flour into a large bowl and add 1 tsp salt. Add the yogurt, 2 tbsp water and the sesame seeds, then mix to make a dough (it'll be quite wet). Flour the work surface and tip out the dough. Divide into six pieces. Working with one ball at a time, and keeping the others covered with a tea towel, roll into flatbreads about 0.5cm thick.
  • Heat a large griddle or frying pan until really hot. Brush one flatbread with oil, then put in the pan, oil-side down. Cook for 2-3 mins each side until bubbles appear on the surface and the underneath is brown. Turn over and cook for another 2 mins, then transfer to a plate. Continue cooking the remaining flatbreads. Wrap them in foil and keep warm in a low oven until ready to serve, or serve at room temperature.

3-ingredient, grain-free and vegan vegetable flatbreads, made with chickpea flour!

Provided by Camilla

Categories     Bread

Time 40m

Number Of Ingredients 5

12 ounces broccoli (see notes for variations)
1 cup chickpea flour
1-1/2 tablespoons olive oil
3/4 cup water
3/4 teaspoon fine sea salt

Steps:

  • Preheat oven to 400F. Line a large (18x13) baking sheet with parchment paper or a silpat. Lightly spray with nonstick cooking spray.
  • Cut the broccoli into pieces. Place the broccoli pieces (crowns and stems) in a large food processor and process until very fine (about the consistency of couscous; 12 oz will yield 3 cups finely chopped). Scrape mixture into a large bowl.
  • Add the chickpea flour, water, olive oil and salt to bowl with broccoli, stirring until completely combined.
  • Spread batter into an even rectangle on the prepared baking sheet, smoothing the top. The batter should be 1/4-inch thick (the batter will not go all the way to the edges of the pan).
  • Bake in the preheated oven for 24 to 28 minutes until light golden brown at the edges and the center is set. Transfer sheet pan to a cooling rack and cool completely.
  • Invert flatbread onto a cutting board and carefully peel off paper/silpat. Cut into 12 pieces and turn pieces right side up..

  • Rinse and drain the quinoa in a fine mesh sieve and transfer to a medium pot. Add 2 cups of water, stir, and bring it to a low boil. Reduce heat to medium, cover with a tight-fitting lid, and cook for 13 to 16 minutes until the water is absorbed and the quinoa is fluffy. After cooking, remove the lid to let the steam escape and remove the pot from the element.
  • While the quinoa is cooking, preheat the oven to 350°F (180°C) and line a very large baking sheet (or 2 medium baking sheets) with parchment paper. If using 2 baking sheets, position 2 oven racks near the centre of the oven.
  • Stir the chia seeds, coconut oil (or olive oil, if using), and salt into the cooked quinoa until combined. Now add the remaining 3/4 cup water and stir again. It should look like a “soupy” quinoa mixture. Cool for 2 to 3 minutes.
  • Spoon this mixture into a large food processor and process for about 30 seconds (allowing steam to escape) until the quinoa is 50% broken down. There should still be some texture to the dough, and it’ll look like a thick, sticky paste with bits of quinoa throughout.

For a shortcut version, skip the cookie cutters, brush the entire flatbread with olive oil, sprinkle on the garlic, salt, and seeds, and cut into 12 to 15 squares.
  • Remove from the oven and let cool before serving. The crackers will continue to crisp as they cool.

  • In a small bowl, stir the sesame seeds, poppy seeds, and fennel or caraway seeds. Crack the egg into another bowl, lightly beat and set aside, along with a pastry brush and the kosher salt.
  • In a large bowl, whisk the all-purpose flour, whole-wheat flour and table salt. Add the olive oil and ½ c water to the flour; stir with a rubber spatula until it collects into a soft, crumbly ball of dough. Use the spatula or your hands to press the dough against the sides of the bowl to gather all the stray flour.
  • Set the dough on a lightly floured work surface and portion it into thirds. Pat each portion into a square. Set two squares aside. Roll out the remaining dough into a rectangle about 1/16 “ thick and 7-8 inches wide by 14-15 “ long. Whenever you feel resistance, lift up one edge of the dough and sprinkle more flour underneath before you continue rolling. Another option is to use your pasta rolling machine; quicker and less effort.
