Easy paleo sweet potato hash recipe with caramelized garlic and onion.

6 cups peeled and diced sweet potatoes (around 2 - 3 large depending on their size)
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon thyme
1/2 teaspoon pepper
2 teaspoons salt
1/2 teaspoon paprika
up to 1/3 cup olive oil
1 head of garlic (around 12 - 15 cloves), minced
1 medium onion, diced

Steps:

  • Preheat oven to 450 degrees
  • Add diced sweet potatoes to a glass casserole dish
  • Sprinkle sweet potatoes with garlic powder, onion powder, thyme, pepper, salt, and paprika
  • Drizzle on olive oil to coat, up to 1/3 cup
  • Toss to combine
  • Roast at 450 degrees for 55 - 65 minutes, stirring 3 - 4 times to avoid burning
  • Once sweet potatoes have about 15 minutes left to cook, add the minced garlic and diced onion to a skillet with 1 teaspoon of olive oil
  • Cook garlic and onion for 12 - 15 minutes on medium heat, stirring often, until soft and caramelized
  • Once sweet potatoes have finished cooking, remove from oven and add the garlic and onion mixture.
  • Stir to combine

1 russet potato, scrubbed
1 sweet potato, scrubbed
3 tablespoons salted butter
1 cup chopped red bell peppers
1 cup chopped yellow squash
1 cup chopped zucchini
1/2 red onion, chopped
Salt and freshly ground black pepper
4 large eggs

Steps:

  • Pierce both potatoes a few times, put in the microwave and cook on high until cooked through, 5 to 10 minutes. Carefully remove the skin from the sweet potato. Dice both potatoes and set aside.
  • In a medium skillet, melt 2 tablespoons of the butter over medium heat. Add the bell peppers, squash, zucchini and onions and cook for a few minutes. Add the diced potatoes to the veggies and cook until golden brown. Season with salt and pepper.
  • In a separate pan, melt the remaining tablespoon of butter over medium heat and crack in the eggs. Cook until the whites have set, 3 to 4 minutes.
  • Serve up the hash with a fried egg on top of each portion.

6 medium Russet potatoes, peeled and quartered
3-5 tablespoons butter
1-2 tablespoons steak seasoning blend

Steps:

  • Bring a large pot of water to a boil over high heat. Add quartered potatoes and simmer for 10-15 minutes, until potatoes are still firm, but can be pierced with a fork. Drain potatoes and cool slightly.
  • When potatoes are cool enough to handle, dice them into small cubes.
  • Melt 3 tablespoons of butter in a large skillet over medium-high heat. Add potatoes and 1 tablespoon of steak seasoning.
  • Cook, stirring often, until potatoes are golden brown and cooked through, about 15 minutes. Add more butter as needed, and more steak seasoning, to taste, if desired. Serve hot!

1 ½ Tbsp. avocado oil, coconut oil or ghee
1 large sweet potato, diced (about 2 cups)
1/2 cup onions, diced
1/2 cup red bell pepper, diced
2 garlic cloves, minced
1 cup mushrooms, diced
2 cups spinach or kale, chopped
3 strips cooked uncured bacon, diced (omit if vegetarian or vegan)
¼ tsp. salt
¼ tsp. black pepper
¼ cup cheese of choice^ (optional) ^omit for dairy-free and Whole30 friendly.

Steps:

  • Heat 1 Tbsp. cooking fat in large sauté pan on medium heat.
  • Add sweet potatoes and sauté for about 12-15 min or cooked through. Cooking time will depend on size of sweet potato cubes are.
  • Add remaining ½ Tbsp. of cooking fat, onions, red pepper, garlic and mushroom, sauté for about 3-4 minutes.
  • Add spinach or kale, bacon, salt and pepper and sauté until greens are wilted.
  • Top with optional cheese and serve.

3 tablespoons butter (or margarine )
2 medium potatoes (peeled, cooked, and diced)
1 small onion (finely chopped)
1/2 green bell pepper (finely chopped)
1 cup cooked ham (finely diced)
1/4 teaspoon salt (or to taste)
1/8 teaspoon ground black pepper
1/4 teaspoon dried crumbled thyme

Steps:

  • Gather the ingredients.
  • Melt the butter in a large skillet over medium heat.
  • When the butter has melted and has stopped foaming, add the diced potatoes, onion, bell pepper, and ham. Mix well.
  • Cook the hash until well browned, stirring and turning frequently. Season with salt and freshly ground black pepper, to taste, and add the crumbled dried thyme.

2 purple potatoes, cubed
3 red bliss potatoes, cubed
2 Yukon gold potatoes, cubed
1/3 pound apple-smoked bacon
1/2 white onion, diced
3 garlic cloves, diced
1 tablespoon chopped mixed herbs (rosemary, thyme and sage)
Salt and pepper
Sausage, accompaniment, optional
8 poached eggs, accompaniment, optional

Steps:

  • Cube all of the potatoes to the same size so that they cook evenly. Place potatoes in a pot and cover with cold water. Bring to a simmer and cook until just fork tender. Drain and set aside. Cut the bacon into 1/4-inch pieces. Add bacon pieces to a frying pan and cook until crisp. Add onion and garlic to pan with bacon and saute until onion is translucent. Add the chopped herbs and saute for 1 more minute. Add potatoes and stir to combine. Season with salt and pepper, to taste. Serve with any savory sausage (cooked in the oven at 350 degrees F until cooked through), sliced in half. Top with 2 poached eggs, if desired.

  • Heat the olive oil in your largest nonstick pan with a lid on high heat. Add the potatoes and toss to coat with the oil. Cover, cook 2 minutes, then lift the lid and stir to keep the potatoes from sticking to the pan. Repeat until the potatoes just start to soften (~10 minutes). If necessary, reduce the heat to prevent burning.
  • Add the garlic, red bell pepper, carrot, ham, and a couple good pinches salt and pepper. Repeat the cover-cook-toss every 2 minutes for 6-8 minutes until the potatoes are cooked through.
  • Remove from the heat and toss in the tomato, parsley, and green onion, reserving some onion for final garnish if desired.
  • Heat a nonstick pan spray with cooking spray over medium heat, and cook the eggs over easy. Season with salt and pepper.
