SWEET POTATO HASH
Easy paleo sweet potato hash recipe with caramelized garlic and onion.

Steps:
- Preheat oven to 450 degrees
- Add diced sweet potatoes to a glass casserole dish
- Sprinkle sweet potatoes with garlic powder, onion powder, thyme, pepper, salt, and paprika
- Drizzle on olive oil to coat, up to 1/3 cup
- Toss to combine
- Roast at 450 degrees for 55 - 65 minutes, stirring 3 - 4 times to avoid burning
- Once sweet potatoes have about 15 minutes left to cook, add the minced garlic and diced onion to a skillet with 1 teaspoon of olive oil
- Cook garlic and onion for 12 - 15 minutes on medium heat, stirring often, until soft and caramelized
- Once sweet potatoes have finished cooking, remove from oven and add the garlic and onion mixture.
- Stir to combine

Steps:
- Pierce both potatoes a few times, put in the microwave and cook on high until cooked through, 5 to 10 minutes. Carefully remove the skin from the sweet potato. Dice both potatoes and set aside.
- In a medium skillet, melt 2 tablespoons of the butter over medium heat. Add the bell peppers, squash, zucchini and onions and cook for a few minutes. Add the diced potatoes to the veggies and cook until golden brown. Season with salt and pepper.
- In a separate pan, melt the remaining tablespoon of butter over medium heat and crack in the eggs. Cook until the whites have set, 3 to 4 minutes.
- Serve up the hash with a fried egg on top of each portion.

- Bring a large pot of water to a boil over high heat. Add quartered potatoes and simmer for 10-15 minutes, until potatoes are still firm, but can be pierced with a fork. Drain potatoes and cool slightly.
- When potatoes are cool enough to handle, dice them into small cubes.
- Melt 3 tablespoons of butter in a large skillet over medium-high heat. Add potatoes and 1 tablespoon of steak seasoning.
- Cook, stirring often, until potatoes are golden brown and cooked through, about 15 minutes. Add more butter as needed, and more steak seasoning, to taste, if desired. Serve hot!

Steps:
- Heat 1 Tbsp. cooking fat in large sauté pan on medium heat.
- Add sweet potatoes and sauté for about 12-15 min or cooked through. Cooking time will depend on size of sweet potato cubes are.
- Add remaining ½ Tbsp. of cooking fat, onions, red pepper, garlic and mushroom, sauté for about 3-4 minutes.
- Add spinach or kale, bacon, salt and pepper and sauté until greens are wilted.
- Top with optional cheese and serve.

- Gather the ingredients.
- Melt the butter in a large skillet over medium heat.

THREE POTATO HASH
Steps:
- Cube all of the potatoes to the same size so that they cook evenly. Place potatoes in a pot and cover with cold water. Bring to a simmer and cook until just fork tender. Drain and set aside. Cut the bacon into 1/4-inch pieces. Add bacon pieces to a frying pan and cook until crisp. Add onion and garlic to pan with bacon and saute until onion is translucent. Add the chopped herbs and saute for 1 more minute. Add potatoes and stir to combine. Season with salt and pepper, to taste. Serve with any savory sausage (cooked in the oven at 350 degrees F until cooked through), sliced in half. Top with 2 poached eggs, if desired.

- Heat the olive oil in your largest nonstick pan with a lid on high heat. Add the potatoes and toss to coat with the oil. Cover, cook 2 minutes, then lift the lid and stir to keep the potatoes from sticking to the pan. Repeat until the potatoes just start to soften (~10 minutes).
