A trio of peppers livens up this comforting side dish. "I've had this recipe for many years," says Virginia Anthony, Jacksonville, Florida. "I lightened it up from the original by using reduced-fat sour cream and milk, plus some egg substitute. It tastes just as good...but it's much better for us!"

1 medium sweet red pepper, chopped
6 green onions, thinly sliced
1 tablespoon olive oil
1 can (4 ounces) chopped green chilies, drained
3 medium jalapeno peppers, seeded and chopped
2 packages (10 ounces each) frozen corn, thawed, divided
1 can (12 ounces) reduced-fat evaporated milk
1/3 cup reduced-fat sour cream
1/4 cup fat-free milk
3 large egg whites
2 large eggs
1/4 cup cornstarch
1 teaspoon salt
1 teaspoon ground cumin
3/4 teaspoon ground thyme

Steps:

  • In a nonstick skillet, saute the red pepper and onions in oil until tender. Remove from the heat. Stir in the chilies, jalapenos and half of the corn. Transfer to a 13x9-in. baking dish coated with cooking spray., In a blender, combine the remaining ingredients; add remaining corn. Cover and process for 3 minutes or until smooth. Pour over red pepper mixture. , Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted in the center comes out clean.

A friend gave me this recipe last Thanksgiving. Since then I have made it several times and everyone loves it! It's spicy hot flavor is a nice addition to any meal. Adjust the amount of peppers to taste.

2 (8 ounce) packages cream cheese
1 cup butter
5 (15 ounce) cans white corn, drained
1 (12 ounce) jar diced jalapeno peppers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cream cheese and butter in a microwave safe 9x13 inch baking dish. Microwave on high until butter has melted and cream cheese has softened, 2 to 3 minutes.
  • Mix white corn and diced jalapeno peppers with the butter and cream cheese.
  • Bake in the preheated oven 30 to 35 minutes.

1 (10 ounce) package frozen corn kernels

  • Melt cream cheese and butter in a saucepan. When ingredients are melted, stir in evaporated milk, corn, and green chilies. Pour mixture into an 8x8 inch pan.

2 tablespoons unsalted butter, plus more for baking dish, plus 6 tablespoons melted and cooled
1 1/2 cups chopped yellow onion (from 1 large onion)
1 cup chopped green bell pepper (from 1 large pepper)
1 tablespoon minced garlic (from 3 cloves)
1 chipotle in adobo, minced with liquid (to equal 1 tablespoon)
Coarse salt and freshly ground pepper
4 cups frozen corn kernels, preferably organic, thawed
1/4 cup fine cornmeal
2 cups shredded pepper jack cheese
1/2 cup heavy cream
6 large eggs
Salsa, cilantro sprigs and sour cream, for serving

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish and set aside.
  • In a medium skillet, melt 2 tablespoons butter over medium-high heat. Add onion and pepper and cook, stirring often, until golden brown and caramelized, about 8 minutes. Add garlic and cook until fragrant, 1 minute. Add chipotle and season with salt and pepper. Transfer to a large bowl to cool to room temperature.
  • Puree 3 cups corn in a food processor or blender until very smooth. Transfer to bowl with onion mixture. Stir in 1 1/2 teaspoons salt, cornmeal, remaining cup corn, and cheese. In a separate bowl, whisk together 6 tablespoons melted butter, cream and eggs just until combined. Fold into corn mixture. Pour batter into prepared dish and bake on a rimmed baking sheet until puffed and golden and the center jiggles slightly, 45 to 50 minutes. Let cool 15 minutes. Serve with salsa, cilantro and sour cream.

45.75 ounces canned corn kernels ((3 cans))
1 red bell pepper (seeded and diced)
1 large jalapeno (seeded and diced)
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup unsalted butter (melted)
1/4 cup parmesan cheese (shredded)

Steps:

  • Preheat oven to 350 degrees F.
  • Place a small saucepan over medium heat. Cook the half-n-half and cream cheese until the cream cheese has melted and the mixture thickens, about 5 mins. Remove from heat and set aside. (I prep the veggies while the cream cheese cooks.)
  • In a large mixing bowl, stir together corn, bell pepper, jalapeno, sugar, salt, and pepper. Add the cream cheese mixture and butter to the bowl. Stir until evenly combined.
  • Transfer corn mixture to a 2-quart baking dish. Spread into an even layer. Sprinkle the top of the casserole with parmesan cheese. Bake for 40 minutes, or until the casserole is bubbling and cheese is melted. Carefully remove from the oven. Allow to sit for 5 minutes before serving.
