Number Of Ingredients 12

1 can (16 ounces) refried beans
1-1/2 cups reduced-fat sour cream
1 cup salsa
4 green onions, chopped
1 can (4 ounces) chopped green chiles
3 ounces reduced-fat cream cheese
1 jalapeno pepper, seeded and chopped
2 tablespoons chopped chipotle peppers in adobo sauce
1-1/2 teaspoons ground cumin
1/2 teaspoon chili powder
1 cup shredded Colby-Monterey Jack cheese
Tortilla chips or assorted fresh vegetables

Steps:

  • In a large bowl, combine the first 10 ingredients. Transfer to a greased 1-1/2-qt. baking dish. Cover and bake at 325° for 25 minutes., Sprinkle with cheese. Bake, uncovered, until bubbly, 5-10 minutes longer. Serve warm with chips.

1 (15 ounce) can refried beans
1 (1 ounce) packet taco seasoning mix
1 (8 ounce) package cream cheese, softened
2 small tomatoes, chopped
3 bunches green onions, chopped
1 cubanella pepper, seeded and chopped
1 (15 ounce) can black beans, rinsed and drained
1 (15.5 ounce) can navy beans, rinsed and drained

Steps:

  • Spread the refried beans in a layer in the bottom of a 9 inch square baking dish. In a small bowl, stir together the taco seasoning mix and cream cheese. Spread the mixture over the refried beans. In a separate bowl, toss together the tomatoes, green onions, cubanella pepper, black beans and navy beans. Spread over the layer of cream cheese. Cover and refrigerate for at least 4 hours before serving to blend the flavors.

ROASTED RED PEPPER AND GARLIC BEAN DIP

1 head garlic
1 tablespoon olive oil
Kosher salt and freshly ground pepper
One 16-ounce can cannellini beans, rinsed and drained
One 16-ounce can garbanzo beans (chickpeas), rinsed and drained
2 roasted red bell peppers from a jar or grilled, peeled and seeded
2 tablespoons ground cumin
1 tablespoons tahini
Juice of 1/2 lemon
2 teaspoons granulated garlic
2 teaspoons granulated onion
Pinch cayenne pepper (or more as desired)
1/4 cup chicken or vegetable stock
Fresh tortilla chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Slice off the top 1/3 of the garlic head with a serrated knife, exposing the cloves. Drizzle the oil over the cloves and with some salt. Tightly wrap the head in aluminum foil and transfer it to the oven. Roast until the garlic is very soft and deep golden brown, about 45 minutes. When cool enough to handle, remove 4 cloves for the dip and reserve the rest for another use.
  • Put the cannellini beans, garbanzo beans, roasted peppers, cumin, tahini, lemon juice, granulated garlic, granulated onion, cayenne and the 4 roasted garlic cloves in a food processor and pulse until chunky. While pulsing, slowly add the chicken stock and mix until smooth,
  • Transfer the mixture into a large nonstick skillet over medium-high heat. Cook, stirring, until the mixture begins to bubble, about 5 minutes. Season with salt and pepper. Serve warm or at room temperature with tortilla chips for dipping.

CREAMY WHITE BEAN DIP WITH CHARRED PEPPERS



Creamy White Bean Dip with Charred Peppers image

Number Of Ingredients 12

1 cup (190 grams) dried white beans, preferably navy beans, picked through for any stony bits
4 to 5 strips of lemon rind plus 1/4 cup (60 grams) lemon juice (from 1 lemon)
1 head garlic, cloves peeled and kept whole (yielding about 1/2 cup/70 grams cloves)
1 to 2 dried red chiles, such as chile d'arbol
Kosher salt
Freshly ground black pepper
1/4 cup (56 grams) extra-virgin olive oil, plus more for serving
Charred Baby Bell Peppers, recipe follows, for serving
Flakey salt, for serving
3 tablespoons (42 grams) extra-virgin olive oil
8 ounces baby bell peppers, halved lengthwise
1 lemon, halved

Steps:

  • To make the bean dip: Combine the beans, lemon rind, garlic cloves, chiles and 1 teaspoon kosher salt in a 3- to 4-quart pot and add enough water to cover the beans by about 2 inches. Bring to a boil, lower to a simmer, cover and simmer for 1 1/2 to 2 hours, or until the beans are very tender. Discard the lemon rind and chile pepper and drain.
  • Combine the beans, garlic and lemon juice in a food processor. Season with a couple pinches of kosher salt and black pepper. Puree until smooth, 2 to 3 minutes. While the motor is running, drizzle in the olive oil. Adjust the seasoning with kosher salt and black pepper, as needed. Reserve in the refrigerator.
  • To serve, schmear some white bean dip on a plate. Pile on the Charred Baby Bell Peppers, squeeze on some of the charred lemon and drizzle with extra-virgin olive oil. Season with black pepper and garnish with a sprinkle of flakey salt.
  • Heat a 12-inch cast-iron skillet over high heat until smoking. Add the olive oil and swirl it around to coat. When the oil is hot and shimmery, add the peppers and cook, tossing occasionally, for 3 to 4 minutes. Place the lemon cut-side down in the skillet and char simultaneously until deeply browned.

BLACK BEAN, GREEN PEPPER, AND RED ONION DIP

1 1/2 cups dried black beans, picked over and rinsed
2 quarts plus 1/4 cup water
1 large green bell pepper, chopped fine, reserving about 1 teaspoon for garnish
1 small red onion, chopped fine, reserving about 1 teaspoon for garnish
3 tablespoons vegetable oil
1 1/2 teaspoons ground cumin, or to taste
2 tablespoons cider vinegar, or to taste
tortilla chips as an accompaniment
cherry peppers for garnish if desired

Steps:

  • In a large saucepan let the beans soak in cold water to cover for 1 hour, drain them, and in the pan combine them with 2 quarts of the water. Bring the water to a boil and cook the beans at a slow boil for 1 hour, or until they are tender.
  • While the beans are cooking, in a large heavy skillet cook the bell pepper and the onion in the oil over moderate heat, stirring, until the vegetables are softened. Drain the beans, reserving 1/2 cup of them, add the remaining beans to the bell pepper mixture with the remaining 1/4 cup water, and simmer the mixture, covered tightly, for 15 minutes, or until the beans are very tender. In a food processor blend the mixture with the vinegar and salt to taste, pulsing the motor until the mixture is combined well but not puréed smooth. Transfer the dip to a bowl and stir in the reserved 1/2 cup beans. The dip may be made 2 days in advance and kept covered and chilled. Garnish the dip with the reserved bell pepper and onion and serve it with the tortilla chips.
