1 tbsp butter
1 tbsp oil
1 large onion , finely chopped
1 bay leaf
1 garlic clove , crushed
1½ tbsp dried or fresh sage , finely chopped
180g fresh breadcrumbs
1 large egg , lightly beaten

Steps:

  • Heat the butter and oil in a frying pan. Fry the onion, bay and a pinch of salt gently for 15 mins over a low heat until the onions are softened and translucent. Add the garlic and sage and fry for 1 min. Leave to cool for 10 mins.
  • Heat the oven to 180C/160C fan/gas 4. Stir the breadcrumbs and beaten egg through the onion mixture. Season to taste. Divide into 12 balls, weighing for accuracy, if you like. Bake on a flat baking sheet lined with parchment for 25-30 mins or until golden brown. Serve as part of a roast dinner.

1 onion
2 celery stalks
1/2 cup butter ( - see note 1)
1/2 tsp salt
2 cups cold broth (- see note 2)
1 egg
1 tbsp fresh sage
1 tsp ground sage
1/2 tsp dried parsley
1/2 tsp thyme
1/4 tsp black pepper
6 cups very dry bread cubes ( - see note 3)
2 tbsp butter

Steps:

  • Preheat oven to 350ºF/170ºC.
  • Peel and chop 1 onion.
  • Finely chop 2 stalks of celery.
  • Melt 1/2 cup of butter in a large skillet over medium-low heat.
  • Add the onion, celery, and salt. Cook until the vegetables are tender but not colored (about 7-8 minutes).
  • While the veg is cooking, mix one egg with 1 cup of cold broth, 1 tablespoon of chopped fresh sage, 1 teaspoon of dried ground sage, 1/2 teaspoon of dried parsley, 1/2 teaspoon of dried thyme, and 1/4 teaspoon of black pepper.
  • Place the dry bread cubes into a large bowl and add the cooked onion mixture. Stir well to coat everything in butter.
  • Tip the mixture into a casserole or oven dish.
  • Pour the egg and broth mixture over and gently push the bread down into the mixture.
  • Use the remaining cup of broth to pour over until all the bread is soaked; you may not need it all. (see note 4)
  • Melt the remaining 2 tablespoons of butter and drizzle over the top of the stuffing.
  • Cover with foil and bake for 35 minutes.
  • Remove the foil and bake for a further 10-15 minutes until the top of golden.

1 1/2 sticks butter, softened
About 2 cups chopped celery
3 to 4 McIntosh apples, skin on, cored, quartered and chopped
1 large yellow onion, chopped or 2 medium yellow onions, chopped
Salt and black pepper
Salt and black pepper
2 tablespoons poultry seasoning
8 cups cubed stuffing mix, such as Pepperidge Farm
4 to 5 cups chicken stock, as needed
1 egg, beaten (if preparing as "Stuffin' Muffins")

Steps:

  • Preheat the oven to 400 degrees F.
  • Preheat a large skillet over medium-high heat. Melt 1 stick butter in the skillet. When the butter melts, add the celery, apples and onions. Season with salt, pepper and poultry seasoning. Cook until the vegetables and apples begin to soften, 5 to 6 minutes.
  • Add the stuffing cubes to the pan and combine. Moisten the stuffing with the chicken stock until all of the bread is soft, but not wet. Let the stuffing cool either in the pan or in a bowl.
  • For a stuffin' casserole: Brush a casserole dish with 1/4 stick butter. Add the stuffing mixture to the dish and dot the top with the remaining 1/4 stick butter. Bake until set and crisp on top, 15 to 20 minutes. Serve hot or at room temperature.
  • For individual stuffin' muffins: Brush a 12-muffin tin with the remaining 1/2 stick of butter. Add the beaten egg to the cooled stuffing mixture. Using an ice cream scoop, fill and mound up the stuffing in the muffin tin. Bake until set and crisp on top, 10 to 15 minutes. Remove the stuffin' muffins to a platter and serve hot or at room temperature.

30 slices white bread, lightly toasted
2 tablespoons butter
1 large onion, finely chopped
2 stalks celery, finely chopped
2 eggs, lightly beaten
2 cups chicken broth
2 teaspoons rubbed sage
1 teaspoon garlic powder
salt and pepper to taste

Steps:

  • Allow the toasted bread to sit approximately 24 hours, until hard.
  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
  • Crush the bread into crumbs with a rolling pin. Place the crumbs in a large bowl.
  • Melt the butter in a medium saucepan over medium heat. Stir in the onion and celery and slowly cook until soft. Remove from heat and drain.
  • Mix the eggs and chicken broth into the bread crumbs. The mixture should be moist, but not mushy. Use water, if necessary, to attain desired consistency. Mix in the onion, celery, rubbed sage, garlic powder, salt and pepper.
  • Press the mixture into the baking dish. Bake 1 hour in the preheated oven, or until the top is brown and crisp.

7 cups 1/2-inch pieces firm white sandwich bread (about 12 slices)
1 1/4 pounds leeks (about 8 small), halved lengthwise and cut crosswise into 1/2-inch-thick pieces (about 5 1/4 cups)
3 medium red onions, cut into 1-inch pieces (about 5 1/2 cups)
12 large shallots (about 1/2 pound), cut lengthwise into sixths
3 large celery ribs, chopped (about 1 1/4 cups)
3 tablespoons minced garlic (about 10 small cloves)
2 tablespoons chopped fresh thyme leaves
1 tablespoon chopped fresh sage leaves
1 cup fresh flat-leafed parsley leaves, washed well, spun dry, and chopped
3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup turkey giblet stock or chicken broth

Steps:

  • Preheat oven to 350°F.
  • In a shallow baking pan spread bread in one layer and bake in middle of oven, stirring occasionally, until golden, 10 to 15 minutes. Transfer bread to a large bowl.
  • In a bowl of water wash leeks and drain by lifting leeks from water into a colander.
  • In a large heavy skillet cook leeks, red onions, shallots, celery, garlic, and herbs with salt and pepper to taste in butter and oil over moderate heat, stirring, until onion mixture is softened, about 10 minutes. Add onion mixture to bread with salt and pepper to taste and toss to combine well. Cool stuffing and transfer to a buttered 4-quart baking dish. Stuffing may be made 1 day ahead and chilled, covered.
  • During last 1 1/2 hours of grilling turkey, drizzle stuffing with stock or broth and bake, covered, in middle of oven 1 hour. Bake stuffing, uncovered, 20 to 30 minutes more, or until golden brown.

1 large onion (diced)
3 celery stalks (chopped)
3 sprigs fresh thyme leaves (stems discarded)
1 pound bread (cubed)
2 cups chicken stock
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Cut the bread into 1-inch cubes and arrange it onto a baking sheet. Allow the bread to dry out for 3-12 hours.
  • Grease an 8x8 or 2-quart baking dish with butter. Preheat oven to 350 degrees F.
  • Melt 1/4 cup (or 1/2 stick) butter in a large heavy-bottomed skillet, over medium-low heat.
  • Add onions, celery, and fresh thyme leaves to the skillet. Season with a pinch of salt and pepper. Saute veggies until softened slightly, about 7 minutes.
  • Place the bread cubes in a large mixing bowl. Add in the sauteed veggies and another pinch of salt and pepper. Toss well.
  • Add in the chicken stock, 1 cup at a time, and toss until bread cubes are moistened completely. You want the bread to be wet and softened, but not drenched in liquid or soggy. You may not use all the liquid.
  • Pour the prepared stuffing into the prepared baking dish and cover with foil.
  • Bake at 350 degrees for 40 minutes covered. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden.

1 (2 ounce) packet onion soup mix
1 cup water
1 teaspoon poultry seasoning
1/2 cup butter
1/2 cup celery, diced
1/2 cup onion, diced (optional)
8 cups bread, cubes

Steps:

  • Saute celery and onion (if using) in butter.
  • Bring soup mix and water to a boil. Simmer 5 minutes. Stir in poultry seasoning, butter, celery and onion.
  • Add this mixture to the bread cubes; toss together.
  • Let stand in a warm place, covered.
  • Stir occasionally.
  • Stuff the bird when you are ready.
  • Stuffing can also be put in a slow cooker if you are not going to stuff the bird.Grease crockpot; add stuffing; set on low for 3-4 hours.

1 pound (450g) onions, peeled and chopped
1 1/3 cups (300ml) water
1/3 cup (75g) butter melted (plus more to butter the baking dish)
1 TBS chopped fresh sage leaves
1/2 pound/8 slices (225g) fresh soft white bread crumbs
salt and black pepper to taste
butter to dot over the top of the dish

Steps:

  • Place the chopped onion into a saucepan. Cover with the cold water. Bring to the boil, then reduce to a simmer and simmer over low heat for 15 minutes. Drain very well.
  • Return the ovens to the saucepan. Stir in the butter and the remaining ingredients, tossing to combine and seasoning to taste.
  • Allow to cool completely if you are using it to stuff a bird. If you are cooking it separately. Place into a buttered dish. Dot butter over the top.
  • Cover and bake in a 180*C/350*F/gas mark 4 oven for 25 to 30 minutes.
  • Uncover and bake for a further 10 minutes to crisp up the top if desired.
