1 cup water
1/4 cup honey
1/4 cup butter or 1/4 cup margarine
3/4 cup whole wheat flour
1/2 cup oats, uncooked
2 (1/4 ounce) packages dry yeast
1 teaspoon salt
1 egg
2 1/4-2 1/2 cups all-purpose flour

Steps:

  • Combine water, honey, and butter in a small saucepan; heat until butter melts.
  • Cool to 120°F (really warm but not too hot).
  • Combine wheat flour, oats, yeast, and salt in a large mixing bowl; stir well.
  • Gradually add hot liquid mixture, beating at low speed of an electric mixer 1 minute.
  • Add egg,and beat an additional 2 minutes at medium speed.
  • Gradually add flour to make a soft dough.
  • Turn dough out onto a heavily floured surface, and knead until smooth and elastic (about 8 minutes).
  • Shape dough into 24 balls; place in a lightly greased 13x9x2-inch pan.
  • Cover and let rise in a warm place (85°F), free from drafts, 1 hour or until doubled in bulk.
  • Bake at 375°F for 20 minutes or until lightly browned.

I make these buns on a regular basis they have remained a family-favorite over the years --- if you choose not to brush the tops with any butter another idea is after the second rise before baking mix 1 egg white with 1 tsp cold water and carefully brush the buns with egg wash mixture then sprinkle with sesame seeds :)

Number Of Ingredients 10

1 tablespoon dry yeast
1 teaspoon yeast
1/2 cup warm water
1 teaspoon sugar
1 large egg (covered in warm water for about 15-20 minutes to bring down to room temperature)
1 cup milk
1/4 cup butter, cut into pieces (no subs please!)
1 1/2-2 teaspoons salt
3 tablespoons white sugar (if you prefer a sweeter roll then increase the sugar)
4 cups white flour (more as needed, U.S. residents use bread flour, Canadian residents can use all-purpose flour)

Steps:

  • Generously grease a 13 x 9-inch baking pan (preferably metal) with melted butter; set aside.
  • In a heavy-duty stand mixer fitted with a dough hook, add in 4 cups flour; set aside.
  • In a small saucepan heat the 1 cup full-fat milk with 1/4 cup butter, salt and 3 tablespoons sugar until the butter starts to melt, stirring with a spoon (butter does not have to completely melt) set aside until warm and not hot, to speed things up place in the fridge for about 20 minutes this will cool it down faster, the mixture should be warm but not hot.
  • When the milk mixture is warm, proof 1 tablespoon and 1 teaspoon yeast in 1/2 cup warm water with 1 teaspoon sugar; let sit for 10 minutes or until foamy.
  • Add the yeast and the warm milk/butter mixture and the egg to the bowl with the flour in it.
  • Start mixing, adding more flour only if needed to create a soft semi sticky dough that holds around the kneader blade (it might take up to 5 cups of flour).
  • Keep adding more flour 1 tablespoon at a time as needed and knead the dough for 8-10 minutes until the dough is smooth.
  • Remove the dough from the mixing bowl, and let sit covered with a clean tea towel on the counter for 10 minutes.
  • After 10 minutes, knead the dough gently for about 15 seconds into a ball (the dough will come together nicely).
  • Place in an oiled bowl.
  • Cover and let rise about 1 hour or until doubled in size.
  • Punch down dough.
  • Divide dough into 12 pieces, and shape into round balls.
  • Place the dough balls into the prepared baking dish (fitting 12 balls evenly in the dish with 3 balls across and 4 rows down, if you have extra dough balls place into the freezer to bake another time).
  • If desired, brush the dough balls with melted butter, this is only optioanl.
  • Cover with a clean tea towel, and let rise for about 30-40 minutes, or until ALMOST double in size).
  • Set oven to 375 degrees.
  • Bake for 22-25 minutes, or until dark golden brown on top.

2 (1/4 ounce) packages active dry yeast
1 teaspoon sugar, divided
2/3 cup sugar, divided
1 cup warm water (110 - `115 degrees)
1/2 cup butter, softened
1/2 cup shortening
1 teaspoon salt
1 cup boiling water
2 eggs
7 1/2 cups all-purpose flour

Steps:

  • in a bowl, dissolve yeast and 1 tsp sugar in warm water; let stand for 5 minutes. In a mixing bowl, cream butter, shortening, salt and remaining sugar. Add boiling water; cool to 110 degrees, Add yeast mixture and eggs;mix well, Stir in enough flour to form a soft dough, turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Please in a greased bowl, turning once to grease top. Cover and let rise in a warm place, until doubled, about 1 hour.
  • Punch dough down, Turn onto a lightly floured surface; divide into thirds. Divide each portion into nine pieces; shape into balls. Place in three greased 9 inch round baking pans. Cover and let rise until doubled, about 30 minutes. Bake at 350 for 20-25 minutes or until golden brown. Cool in pans on wire racks.

Delicious Dinner Rolls using your bread machine to mix and knead the dough then bake in your oven. These rolls are awesome and healthy too! I created this recipe to make the plain pan rolls I have made for many years healthier. They are wonderful! I use Bob's Red Mill 10- grain cereal to give these rolls a nice soft texture. I also recommend using SAF Instant yeast if it is available in your area.

1 1/4 cups warm water (110 degrees, F/45 degrees C )
3 tablespoons powdered milk
4 tablespoons grain cereal
2 tablespoons vegetable oil
2 tablespoons honey
1 teaspoon salt
3 cups bread flour
2 1/2 teaspoons instant yeast
vegetable oil cooking spray
1/2 cup melted butter, divided

Steps:

  • Place ingredients in order listed (except for cooking spray and melted butter) into bread machine pan. Select dough setting.
  • Check dough within the first five minutes of mixing time. If dough is too sticky or too dry add water or flour 1 tablespoon at a time until dough has formed into a soft ball. " The dough should not stick to sides of pan, but should still be a little sticky to the touch".
  • Spray two 13x9x2-inch baking pans with vegetable oil cooking spray.
  • When dough cycle is complete; Remove dough from bread machine pan on to a lightly floured surface. Divide dough into two pieces. Divide each piece into 12 pieces and roll into round balls.
  • Place 12 dough balls into each oiled pan. Cover and let rise for 45 minute to 1 hour or until doubled.
  • Preheat oven to 350 degrees. Place bread pans on middle rack of oven. Bake for 15 minutes. Brush melted butter over tops of rolls. Continue to bake for an additional 15 minutes or until done and nicely browned.
  • Remove rolls from oven and put on cooling rack to cool for a few minutes.
  • Serve and Enjoy!

1 cup milk, scalded
1/2 cup butter, cut into pieces
2 packages active dry yeast
1/2 cup sugar
1/2 cup warm water (105 - 115)
3 eggs, lightly beaten
1 1/2 teaspoons salt
6 -6 1/2 cups all-purpose flour
1/4 cup butter, melted

Steps:

  • In a large bowl, pour milk over ½ cup butter. Stir occasionally until butter is melted.
  • Meanwhile, sprinkle yeast and ¼ t. sugar over water. Let stand 5 minutes or until foamy. Stir remaining sugar, eggs, salt and yeast mixture into milk mixture. Stir in 4 cups of the flour and beat until smooth. Gradually stir in remaining flour to make soft dough. Cover, let rest for 10 minutes.
  • On a lightly floured surface, knead for 8-10 minutes or until no longer sticky, adding as little extra flour as possible. Divide dough in half. Place half of dough into a greased bowl. Turn to coat surface. Cover and refrigerate. Shape remaining dough into 12 2-inch balls. Place on a greased 9 x 1 ½ inch round pan. Cover and let rise in a warm place, free from drafts, until almost doubled- about 55 minutes.
  • Bake in pre-heated 375° oven for 25-30 minutes or until browned. Brush with butter. Cool on a wire rack.
  • To bake refrigerated dough: follow shaping, rising and baking instructions, allowing about 1 hour and 45 minutes for rising.

Pretty straight forward recipe for wheat dinner rolls, but my family prefers pan rolls. That way the sides of the rolls touch in the oven and they end being really soft and easy to tear in half.

2 (1/4 ounce) packages active dry yeast
2 1/4 cups warm water (110 to 115 degrees)
1/2 cup water
1 tablespoon sugar (added to 1/2 c water above)
1/4 cup shortening
2 eggs
3 cups whole wheat flour
3 1/2 cups all-purpose flour (may need 4 cups)
1/4 cup butter (melted)

Steps:

  • In a large mixing bowl, dissolve yeast in warm water. Add sugar/water mixture, shortening, salt, eggs and whole wheat flour. Beat until smooth. Stir in enough all-purpose flour to form a soft dough.
  • Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled (about 1 hour).
  • Punch dough down. Turn onto a lightly floured surface; divide into four pieces. Shape into 2-inch balls. Dip balls into melted butter and place in 8" x 8" baking pan allowing balls to just touch. Cover and let rise until doubled (about 25 minutes).
  • Bake at 375 degrees for 11-15 minutes or until browned. Remove from pans to wire racks. Serve warm.
