Multigrain Bread Recipe is an easy, healthy yeast bread recipe that's full of good-for-you ingredients like chia seeds and whole wheat flour!

1 ¼ cups eight-grain hot cereal mix1
2 ½ cups boiling water
2 ½ cups all-purpose flour
1 ½ cups whole wheat flour
1/2 tablespoon salt
1/3 cup honey
1/4 cup butter (melted)
2 ½ teaspoons active dry yeast
1/2 cup unsalted sunflower seeds
1 tablespoon chia seeds (optional)
1/2 cup old-fashioned rolled oats or quick oats

Steps:

  • Place cereal mix in bowl of stand mixer fitted with dough hook, and pour boiling water over it; let stand, stirring occasionally, until mixture cools to 100-105 degrees (F), about 1 hour.
  • Meanwhile, whisk flours and salt together in separate bowl; set aside.
  • Once grain mixture has reached 100-105 F, add honey, butter, and yeast and stir until combined.
  • Let mixture sit for 5-10 minutes.
  • Add flour mixture, 1/2 cup at a time, and knead until dough starts to come together.
  • Cover bowl tightly with plastic wrap, and let dough rest for 20 minutes.
  • Knead on medium-low speed until dough clears sides of bowl, 3-4 minutes. If it does not clear sides, keep adding 2 tablespoons additional all-purpose flour and knead until it does.
  • Once it comes together, continue to knead dough for 5 additional minutes.
  • Add seeds, and knead until seeds are evenly dispersed throughout the dough and dough forms smooth, round ball.
  • Place dough in large, lightly greased bowl; cover tightly with plastic, and let rise at room temperature until nearly doubled in size, 45-60 minutes.
  • Grease two 9×5 inch loaf pans.
  • Transfer dough to lightly floured counter and divide in half.
  • Stretch first piece of dough into 9×6 inch rectangle.
  • Roll dough into a cylinder, and place dough seam-side down in prepared loaf pan.
  • Repeat with second piece of dough.
  • Spray loaves lightly with water or vegetable oil spray.
  • Sprinkle both loaves in oats.
  • Cover loaves loosely with greased plastic, and let rise at room temperature until nearly doubled in size 30-40 minutes.
  • Preheat oven to 375 F.
  • Bake until loaves register 200 degrees, 30-40 minutes.
  • Transfer pans to wire rack, and let loaves cool in pan for 5 minutes.
  • Remove loaves from pans, and let them cool to room temperature on wire cooling rack.

1-1/2 cups water (70° to 80°)
1/2 cup honey
1-1/2 teaspoons salt
2 cups bread flour
1 cup whole wheat flour
3/4 cup rye flour
3/4 cup cornmeal
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

1 package (1/4 ounce) active dry yeast
1/3 cup warm water (110° to 115°)
2 cups warm 2% milk (110° to 115°)
2 cups whole wheat flour
1/2 cup rye flour
1/2 cup quick-cooking oats
1/2 cup honey
2 tablespoons butter, melted
2 teaspoons salt
4 to 4-1/2 cups bread or all-purpose flour
1 cup cooked wild rice, cooled to room temperature
1 egg
1 tablespoon cold water

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, whole wheat flour, rye flour, oats, honey, butter, salt and 2 cups bread flour. Beat until smooth. Stir in wild rice and enough remaining bread flour to form a stiff dough. , Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Transfer to two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes. , Beat egg and cold water; brush over loaves. Bake at 375° for 35-40 minutes or until golden brown. Remove from pans to wire racks to cool.

Number Of Ingredients 11

1 cup whole-wheat flour, preferably stone-ground
2 tablespoons wheat bran
3/4 cup warm whole milk (about 110 degrees)
1/4 cup packed dark-brown sugar
2 envelopes active dry yeast (1 tablespoon plus 1 1/4 teaspoons)
3 tablespoons coarse whole-grain cornmeal
3 tablespoons plus 2 teaspoons old-fashioned oats
3 tablespoons ground flaxseed, plus 1 teaspoon whole for sprinkling
2 teaspoons salt
2 1/2 to 3 cups bread flour
Olive oil, cooking spray

Steps:

  • Stir whole-wheat flour, bran, and 1 cup water in a bowl. Let stand 30 minutes.
  • Stir milk and 1 tablespoon sugar in a bowl until sugar dissolves. Stir in yeast. Let stand until foamy, about 5 minutes.
  • Put whole-wheat flour mixture, milk mixture, remaining 3 tablespoons sugar, the cornmeal, 3 tablespoons oats, the ground flaxseed, and salt into the bowl of an electric mixer fitted with the dough hook; mix on medium-low speed until combined. Add 2 1/2 cups bread flour; mix until dough is tacky, but not sticky, about 2 minutes (if dough is too sticky, add more flour, 1 teaspoon at a time). Continue kneading until dough is soft and elastic, about 5 minutes more.
  • Coat a large bowl with cooking spray. Add dough to bowl; turn to coat. Cover loosely with plastic wrap. Let dough rise in a warm, draft-free place until doubled in bulk, about 1 hour (or refrigerate overnight; bring to room temperature).
  • Turn out dough onto a work surface; shape into a loaf about 9 inches long. Using a spray bottle, mist with water; sprinkle top with remaining 2 teaspoons oats and the whole flaxseed. Coat a 9-by-5-inch loaf pan and a piece of plastic wrap with cooking spray. Transfer loaf to the pan, and cover lightly with the plastic wrap. Let stand until doubled in bulk, about 45 minutes.
  • Preheat oven to 400 degrees. Mist oven with water; place loaf in oven. Bake 5 minutes; mist oven again. Continue to bake, rotating pan once, until well browned, 25 to 30 minutes. Unmold bread onto a wire rack; return to oven, and bake directly on oven rack 5 minutes more. Remove from oven; let cool completely on rack.

3/4 cup warm water
1/3 cup honey
1/4 cup vegetable oil
1 cup whole wheat flour
3 cups bread flour
1 1/4 teaspoons salt
1 1/2 teaspoons gluten (optional)
2 1/4 teaspoons bread machine yeast
1/4 cup oatmeal (not instant)
1/4 cup water
1/4 cup milk
1 cup quinoa, uncooked
2 cups water
1/4 cup flax seed
1 egg, seperated
1 teaspoon sesame seeds

Steps:

  • Preheat your oven to 400 degrees.
  • Cook the oatmeal in the 1/4 cup water and milk. Let cool.
  • Cook the quinoa in the 2 cups water until all the water is absorbed. Let cool.
  • Place everything except the egg and sesame seeds in your bread machine in the order as suggested by the manufacturer.
  • Knead on the "dough" cycle.
  • You may have to add a little more flour, if too sticky.
  • Turn onto floured board and punch down and let rest for 10 minutes.
  • Shape into a large circle and place on greased cookie sheet.
  • Cover with plastic wrap sprayed with Pam and let rise for approximately 40 minutes or until doubled.
  • Remove plastic wrap and brush top with egg white and sprinkle the sesame seeds on top.
  • Bake at 400 degrees for 35 minutes.

I was inspired by Donna M's #32194, which I love dearly to create a bread with additional grains which would please my DH & DS, who love multi grain bread. So using her recipe as a guide this is the bread I created today. It turned out a beautiful loaf and was enjoyed by my men. I have to admit for someone who usually isn't fond of multi grain bread I found it pretty tasty too. I used flax seed meal as one of my grains because I heard from a doctor that flax seed is one of the most healthy grains we should be using. It takes so little to have big health advantages as well.

1 1/3 cups proofed sourdough starter
1 cup evaporated milk
4 tablespoons butter or 4 tablespoons margarine
1/4 cup sugar
1 1/2 teaspoons salt
3 -3 1/2 cups white bread flour
2 tablespoons white bread flour
1/4 cup rolled wheat flakes
2 tablespoons whole ground flax seed meal
1/3 cup rolled oatmeal
1/4 cup potato flakes

Steps:

  • Place ingredients in your bread machine in the order recommended by the instructions of your machine.
  • Select the dough cycle and start.
  • Listen for the end of the first kneading.
  • Do not let it raise in the machine since most sourdough breads especially those using wild yeast since they raise best if only raised once.
  • As you take out the dough spray it lightly with a spray oil product to assist in the handling since the dough will be soft.
  • Shape into desired shape.
  • Let raise until double in size.
  • (Sourdough breads usually take 3 to 4 hours to rise if they don't have added yeast.).
  • If using a metal loaf pan grease well.
  • If using a stoneware loaf pan lightly spray with spray oil then sprinkle sides and bottom with cornmeal.
  • If using a round stone simply sprinkle with cornmeal.
  • Bake 350 degrees for about 30 minutes.
  • Remove immediately from pan, lightly baste top of bread with butter or margarine and cool on a rack before slicing or slice with an electric knife which works well on hot bread.
