STUFFED BANANA PEPPERS RECIPE
A delicious stuffed banana peppers recipe filled with chopped beef, melty cheese and lots of seasonings. Great for an easy dinner, side dish, or party platter.

Steps:
- Heat an oven to 400 degrees.
- Slice the banana peppers in half lengthwise and core them out. Set them onto a large baking sheet.
- Heat the oil in a medium pan and add the chopped steak. Season with garlic, paprika, salt and pepper. Cook about 5 minutes, or until the beef/steak is cooked to your liking.
- Spoon the seasoned beef mixture into the peppers, then top each with shredded cheese.
- Bake for 15 minutes. Alternatively, you can grill the stuffed banana peppers for 15 minutes, or broil them for 6-7 minutes, until the cheeses are nice and melty.
- Remove from heat and set onto serving plates.
- Top with chopped green onion, spicy chili flakes and hot sauce, if desired.

THREE CHEESE STUFFED BANANA PEPPERS
This is a meat-free stuffed pepper recipe that is great with spaghetti or any other pasta. I use hot banana peppers because they add great flavor and fire to the sauce, but I'm sure mild banana peppers could be substituted for the faint-of-heart!

Steps:
- Preheat oven to 375 degrees.
- Mix the three cheeses in a medium-sized bowl.
- Prepare the peppers by cutting off tops and carefully scraping out the seeds with a knife (try not to poke holes in the peppers).
- Stuff each pepper with the cheese mixture, using the end of a spoon or your finger to pack the cheeses tightly.
- After all the peppers are stuffed, pour a small amount of the sauce into a baking dish (I use a 9"x9" dish), coating the bottom.
- Arrange the stuffed peppers into a single layer in the bottom of the dish (it's OK to lay a few on top if you run out of room in the dish).
- If you had any remaining cheese mixture left, you may sprinkle it on top of the peppers now or simply freeze it for next time.
- Pour the remaining spaghetti sauce on top of the peppers, covering them completely.
- Bake, covered, for 30-40 minutes, or until peppers are soft and sauce is nice and bubbly (it may take longer if the peppers have thick flesh).
- Serve with spaghetti or other pasta.
- NOTE: Measurements for the cheeses are approximate; you may adjust the amounts and types of cheeses to your own taste.
CHEESY STUFFED BANANA PEPPERS (GLUTEN FREE)

- Preheat the oven to 400ºF and line a baking sheet with parchment paper.
- Put on some gloves (and wear a mask if you have bad coughing fits like me). Rinse the banana peppers to remove dirt, and cut off the stems. Open up the banana pepper length wise by cutting down through the center of the pepper (only on one side - do not cut it in half!). Remove the seeds as best as you can (or else they'll be SUPER hot). Place on a paper towel to dry slightly while you mix the stuffing.
- In a medium bowl, stir the cream cheese and yogurt together until smooth. Add the minced garlic, basil, oregano, salt, and pepper, stirring until well combined. Add the mozzarella and parmesan, stirring until evenly mixed.
- Scoop the cheese mixture generously into each of the peppers, stuffing it down into the tip of the pepper, all the way to the top. Place each pepper, open side up, on the prepared baking sheet. Sprinkle the opening with parmesan cheese.
- Bake at 400ºF for 25-30 minutes, until the peppers are soft, and the cheese is browned. Allow to cool slightly before serving.

- Preheat oven to 375 degrees.
- Take 6-8 large banana peppers, slice down the middle and remove cap and seeds. Place peppers in 13x9x2 pan.
- Stuff pepper halves with refried beans.
- Cut block of cheese into thick slices and insert one slice into each pepper in middle of the beans.
- Pour one 16 oz. jar of salsa over everything.
- Cook for approximately 30-45 minutes or until cheese is melted.

- Grease two 13-in. x 9-in. baking dishes. Spread 1/2 cup tomato sauce in each dish; set aside., Cut tops off peppers and remove seeds. - Cut tops off banana peppers. Slit peppers in half lengthwise being careful not to slit through both sides. Remove seeds.
- Combine cheddar cheese, cream cheese, tomato, onion, bell pepper, jalapeno, salt and pepper. Mix well.

- Soak the toothpicks in water for 15 minutes.
- Combine the cream cheese, sun-dried tomatoes, garlic, and cilantro in a large bowl. Mix well.
- Preheat an outdoor grill for medium heat, then lightly oil the grate.
- Cut a slit lengthwise through each pepper without slicing it in half.
- Cut another slit about ¼ inch from the stem across the previous slit, forming a 'T'.
- Remove seeds, as desired, using a paring knife.

STUFFED BANANA PEPPERS

- Mix sausage, cheese, bread crumbs, salt and pepper, and egg together in mixing bowl. Season to taste. Adjust mixture with additional cheese and bread crumbs if too dry or moist - medium moisture for stuffing desired. Make a radial slice around the top of the banana pepper leaving the top intact. Pull back top and remove seeds if so desired. Gently stuff mixture into peppers. Place olive oil in hot saute pan. Gently place peppers in the pan and fry each side until browned. - Mash filling ingredients by hand in a bowl or mix in a blender or food processor. The consistency should be very thick. Add small amounts of olive oil gradually if necessary.
- Cut off the tops of the peppers and remove the seeds. Spoon filling into the peppers or pipe into peppers using a pastry bag. Replace the tops of the peppers once filled.
- Mix all topping ingredients excluding the fresh cilantro. Place filled peppers in oven-safe container and top with cherry tomato mixture. Bake in the oven at 350 degrees for 20 minutes.
- To brown, broil for 1-2 minutes in the oven. Remove from oven and top with fresh cilantro.
