2 slices wheat, rye or sourdough bread
2 tablespoons softened cream cheese
2 tablespoons butter, softened
2 slices white cheese (brick, Monterey Jack or Swiss)
2 slices yellow cheese (cheddar, pepper or taco)
1 red onion slice
1 tomato slice

Steps:

  • Spread cream cheese on one side of both slices of bread; spread butter on the other side. On cream cheese side of one slice, layer white cheese, yellow cheese, onion and tomato. Top with remaining slice of bread, cream cheese side down. , In a small skillet over medium heat, toast sandwich for 2-3 minutes on each side or until bread is lightly browned. Remove from the heat; cover until cheese melts.

2 tablespoons butter
1 cup figs
1 cup shiitake mushrooms
4 slices Dietz & Watson Havarti
4 slices Dietz & Watson Yellow Cheddar
4 slices Dietz & Watson Colby Jack
4 slices hearth bread

Steps:

  • Preheat pan to medium-high heat and spread butter evenly across.
  • Cut figs and mushrooms into smaller pieces and saute in the pan, 3 to 5 minutes.
  • Layer six slices of cheese onto one slice of hearth bread with 1/2 cup figs and 1/2 cup shiitake mushrooms. Layer remaining cheese, figs, and mushrooms onto another slice. Cover each sandwich with remaining bread and toast in the pan, allowing the cheese to melt, 2 to 3 minutes per side.
  • Cut sandwiches in half and serve.

8 teaspoons mayonnaise
4 slices sourdough sandwich bread
2 slices deli sliced American cheese (2 oz)
4 slices cooked bacon
1/2 cup shredded sharp cheddar cheese (2 oz)
1/2 cup shredded Gruyère cheese (2 oz)

Steps:

  • Spread 2 teaspoons mayonnaise on one side of each slice of bread.
  • On the uncoated side of 2 bread slices, place 1 slice American cheese and 2 slices bacon. Top each with 1/4 cup cheddar cheese, 1/4 cup Gruyère cheese and 1 slice remaining bread, mayonnaise side out.
  • Heat 12-inch nonstick skillet over medium heat. Add sandwiches; cook uncovered 3 to 4 minutes or until bottom sides are golden brown. Carefully turn; cook 2 to 4 minutes longer or until bottom sides are golden brown and cheeses are melted.

1 teaspoon mayonnaise
2 slices bread
1 slice jalapeno Jack cheese
1 roma tomato, thinly sliced
1 slice mozzarella cheese
4 leaves fresh basil, chiffonade (rolled and cut into ribbons)
1 slice Cheddar cheese

Steps:

  • Heat a cast iron or nonstick skillet over medium heat.
  • Spread 1/2 teaspoon mayonnaise on each slice of bread. Place bread slices mayo-side down in the hot skillet. Place jalapeno Jack cheese on 1 slice of bread, and top with tomato slices. Place mozzarella cheese on the other slice, top with basil, then top with Cheddar cheese. Cook until bread turns golden brown, 3 to 5 minutes. Carefully invert the piece with the tomato onto the piece with the basil.

8 slices sourdough bread
4 slices cheddar cheese (about 3 ounces)
4 slices Swiss cheese (about 3 ounces)
4 slices American cheese (about 3 ounces)

Steps:

  • Spread the butter on one side of each bread slice. Heat a large skillet over medium heat. Put 2 bread slices in the skillet, buttered-side down. Layer a slice each of cheddar, Swiss and American cheese on each piece of bread, then cover with another bread slice, buttered-side up.
  • Cook, pressing the sandwiches occasionally with a spatula, until the cheese melts and the bread is golden, 3 to 4 minutes per side. Repeat to make 2 more sandwiches. Slice each sandwich diagonally in half, then return to the hot pan, cut-side down, to create a crust on the cheese.
