1 loaf unsliced Italian bread
1/4 cup butter, softened
1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded cheddar cheese
1 tablespoon grated parmesan cheese
1/4 teaspoon garlic powder
1/8 teaspoon Worcestershire sauce
1 dash paprika and pepper

Steps:

  • Cut bread in half widthwise; cut one portion in half lengthwise. Save remaining bread for another use. In a small bowl, combine the remaining ingredients. Spread evenly over cut sides of bread.
  • Place on a baking sheet. Bake at 400° for 10-12 minutes or until cheese is melted. Slice and serve warm.

On the other hand if your a true garlic lover this one is for you. It makes a wicked grilled ham and cheese sandwich! The 10 min is just for the measuring and getting it into the machine, after that it's up to you and your bread maker and how you want to finish it. A beautiful braided loaf will take longer to make than letting it bake in the machine of instance.

1 1/4 cups warm water
2 tablespoons olive oil (use the regular kind, save the extra virgin for your salads and dips)
1 tablespoon finely minced garlic
1 1/2 cups white bread flour
1 1/2 cups whole wheat flour
2 tablespoons Splenda sugar substitute (or sugar if you prefer)
1 1/2 teaspoons sea salt
3 tablespoons grated parmesan cheese
3/4 teaspoon sweet basil
3/4 teaspoon garlic powder
1/4 teaspoon dried thyme leaves
2 tablespoons dried chives (or chopped fresh)
3/4 teaspoon fresh coarse ground black pepper
2 1/2 teaspoons fast rise yeast

Steps:

  • Add ingredients according to the manufacturer's instructions.
  • Set your machine for the Rapid, Delay, White or dough cycle and start.
  • Add the herbs at the addition beep if you want them to remain reasonably whole.
  • For the best flavor, serve this bread warm.
  • If you choose the dough cycle you may shape it anyway you like, bale it on a standard 9x5 bread pan or shape the dough into buns for oven baking.

1 cup white bread flour
1/4 cup gluten flour (or add 1/4 cup all purpose flour)
3/4 cup asiago cheese, grated (or 3/4 cup Parmesan cheese)
2 tablespoons dry milk
3 garlic cloves, crushed
1 tablespoon fresh basil, minces (or 1 teaspoon dried basil)
2 teaspoons fresh oregano, minced (or 3/4 teaspoon dried oregano)
2 teaspoons fresh rosemary, minces (or 1/2 teaspoon dried rosemary)
1 1/2 teaspoons sea salt (or coase salt)
1 1/4 cups water
2 tablespoons olive oil
1 teaspoon honey
4 teaspoons active dry yeast

Steps:

  • Place ingredients in bread pan of your bread machine in the order given or according to manufacturer's directions.
  • Set the machine for the whole wheat cycle.
  • Cool before slicing.

⅓ cup parmesan cheese
⅓ cup shredded monterey jack cheese

1 baguette, 8 inch (20 cm)

Steps:

  • Preheat oven to 400°F (200°C).
  • In a bowl, combine all of the ingredients except the baguette, and mix until smooth.
  • Slice the baguette in half lengthwise, then spread the butter mixture evenly on both sides of the baguette.
  • Place on a tray lined with parchment paper and bake for about 15 minutes, until cheese is bubbly and starting to brown on the edges.

The rich flavor of Gruyere cheese blends nicely with the garlic forming a full bodied loaf. Gruyère is generally known as one of the finest cheeses for baking, having a distinctive but not overpowering taste. If you can't find Gruyere, traditional Swiss cheese can be substituted. I have adapted this recipe to be made in an automatic bread maker on dough cycle, then formed into a loaf. The cheese needs to be shredded coarsley or chopped into 1/8-1/4" pieces.

2 1/4 cups bread flour
1/2 cup whole wheat flour
1 teaspoon salt
3 garlic cloves (minced)
3 tablespoons instant potato flakes
2 1/2 teaspoons yeast
1 egg (beaten)
1 cup milk
2 tablespoons butter
3/4 cup gruyere cheese (shredded coarsley)
1 egg yolk (beaten and 1 T. water added to glaze loaf with)
cornmeal

Steps:

  • Heat milk and butter in microwave for 60 seconds.
  • In a bread machine pan, place warm milk/butter mixture, well beaten egg, minced garlic, shredded gruyere cheese, then; flours, potato flakes and salt, in the center of dry ingredients; add yeast.
  • Process on dough cycle as your bread machine directs.
  • When dough is done, punch down, form in a elongated loaf on cornmeal covered baking sheet.
  • Cover with a light towel, let rise until double about 30-45 minutes, cut 3 slits acoss, brush loaf with egg yolk and water mixture, bake at 375 for about 30 minutes or until golden brown.
  • Cool on a wire rack, makes one loaf.
