1/2 cup orange juice
1/3 cup water
1/2 teaspoon salt, divided
3/4 cup wholewheat couscous
1 cup blueberries
1 cup mango, cut into cubes
1/3 cup red onion, chopped
2 tablespoons mint, chopped
2 tablespoons lemon juice
2 tablespoons olive oil
1/8 teaspoon pepper

Steps:

  • Combine oj and water and 1/4 teaspoon salt in saucepan, bring to boil over medium heat and then stir in the couscous; cover; remove from heat and let stand 5 minutes. Transfer to bowl and dfluff witha fork; cool 10 minutes.
  • Stir in remaining 1/4 teaspoon salt and the remainder of the ingredients.
  • Toss to mix well.

1 ⅓ cups dry couscous
⅔ cup slivered almonds
½ cup packed dried apricots, chopped
⅔ cup Craisins (sweetened, dried cranberries) or raisins, microwaved in
1 cup water for 1 minute
1 teaspoon cumin
3 scallions, thinly sliced with greens
1 pinch Salt and freshly ground black pepper, to taste

Steps:

  • Prepare couscous according to package directions. Combine all ingredients; toss. Serve at room temperature or chilled.

This wheat berry couscous recipe is courtesy of chef Brad Farmerie and goes well with his Moroccan Braised Lamb Shanks.

2 cups wheat berries
1 bay leaf
Coarse salt
1/3 cup sliced almonds, toasted
1/3 cup crumbled feta cheese
1/4 cup golden raisins
4 pickled red peppers, such as peppadew or cherry, thinly sliced
Zest and juice of 1 1/2 lemons
1/4 cup extra-virgin olive oil
1/4 cup chopped fresh mint
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh, cilantro

Steps:

  • Place wheat berries in a large bowl and add enough water to cover by 2 1/2 to 3 inches. Transfer to a refrigerator and let soak overnight.
  • Drain wheat berries and transfer to a medium pot with enough water to cover by 3 inches. Add bay leaf and 2 tablespoons salt. Place over medium heat and bring to a boil; immediately reduce to a simmer. Cook until wheat berries are al dente, 45 to 60 minutes. Drain and set aside until cooled to room temperature.
  • Place wheat berries in a large bowl along with almonds, feta, raisins, peppers, lemon zest and juice, olive oil, mint, parsley, and cilantro; stir to combine. Serve immediately.

Curried Couscous Salad image

This is a unique side dish that's perfect for a warm summer evening. I created this for RSC #7. Add as much or as little curry as you please. You can use a red bell pepper instead of green, but the green makes for a more colorful salad. One reviewer also enjoyed this salad after adding a can of tuna. See the note in parentheses to make this dairy-free.

1 cup uncooked couscous
1 1/4 cups boiling water
1 medium tomatoes, chopped
1 green bell pepper, chopped
1 (15 ounce) can chickpeas, drained and rinsed
1 (8 ounce) container plain yogurt (or soy yogurt to make this dairy-free)
1 -1 1/2 teaspoon curry powder
salt and pepper

Steps:

  • Place couscous in a large bowl and pour boiling water over the top. Let it soak for 10 minutes to swell the grains, then fluff it with a fork.
  • Add the remaining ingredients to the couscous and stir well to combine.
  • Chill in the refrigerator, if desired, and enjoy!
